These are currently my son's favourite biscuits, and are fortunately so quick and easy to make
Ingredients:
25g almonds
40g white chocolate
150g unsalted butter
150g Plain flour
1/2 tsp bicarb soda
1/2 tsp salt
150g light soft brown sugar
50g rolled oats
50g dried cranberries
1 large egg yolk, or 2 small yolks (Note: yolks only)
Method:
Preheat oven 190o / 375oF
1. Add almonds to TM bowl 10 Secs / Speed 7. Set aside.
2. Roughly handchop chocolate. (You could do in TM, but I find handchopping gives more consistent chunks). Set aside with almonds.
3. Add butter to TM bowl 1 - 2 mins / 60o / Speed 3 until butter has just melted.
4. Add all ingredients to the TM including almond meal and chocolate, and Knead / 10 Secs until just combined.
5. Using your hands, form into walnut sized balls and arrange on two large nonstick baking sheets. Gently press down with a fork, leaving space between them for the biscuits to spread.
6. Bake in the oven 10-12 minutes, then remove and leave to cool on a wire rack.

CP you certainly know the way to my mob's heart. The biscuit barrel is full but I will put this recipe into Snap Recipes and they will be next.

Made these yesterday and whilst I was out walking the dogs the Cookie Monster came...and emptied the tin!

These are gorgeous CP! Went down well with my coffee this morning. I only ever allow myself 1 biscuit, but I did have a second of these. ;D
I used white choc bits so didn't need to chop the choc and would use them again. So quick and easy, a great conversion, thanks CP :D
I will have to try one again tomorrow, just to see how the sweetness is and whether I could afford to reduce the sugar a little next time. It's a hard task but someone has to do it. ;D

These are wonderful biscuits! I made some of these a while back, and accidentally used goji berries instead of cranberries, and they were really nice too.

I made these today. CP said to use an egg yolk and as I decided I had so e tiny eggs I would use the whole egg. The mixture was too soft and when they cooked they spread and joined up all over the tray. They look ugly but everyone has given them the thumbs up for flavour. I will do exactly as the recipe says next time. :-\

Cookie you could also use 2 x small yolks. I have amended the recipe. Keep bakin' dem biccies :D

Thanks CP. I ended up with one very large cookie all over the tray, I just broke them into pieces. They are still loved as both DH and DD commented on the flavour. DH has taken some to car club. He said he will call them ugly cookies.

Made these on the weekend and they were delicious; I used a tiny bit more chocolate and also used the whole egg and they turned out really great. I do admit to throwing a little bit more flower in when I looked at the final mixture; not much though. Will be making these again and again.

These were so easy to make thanks cp. I did the same as troupe and added a small egg and a bit more flour. Lucky I checked them as I had the timer on for 20 min, instead of 12. 😊

Oopsi Jen, I've edited to say you can have 2 small egg yolks if you don't have 1 large. I'm going to put a hint in so you don't drop the whole egg in -best results not achieved otherwise
