That's a lovely story. What a special Mum. Im new too n waiting for my TMX also. Used some cash from my40th birthday to make the purchase. I'm literally counting each day till it comes. Its worse than having an overdue baby (i was 13 days overdue LOL) Hope the next 2 weeks don't drag for u!! Also hope you get on well with the healthy eating for your overall health.

Live alone and busy. That's exactly why u need it. Similar argument for elderly widowed ladies living alone. Easy to make wholesome meals for 1. I know several close to me who luv whipping up a jar of homemade lemon curd. They wouldn't make it otherwise. Good question. Yes it's a big outlay initially

I will def share the spinach curry - one of my dear friends who is a vegan, coeliac, and allergic to all additives/preservatives absolutely loves it and calls it "nectar". But you don't have to be a greenie to appreciate it - my authentic red blooded indian meat loving husband equally loves it  - so as soon as I convert it to a TM recipe I'll share it - it shall be my first project.
