What's for Dinner Tonight?

Hi,
just thought I'd start a new thread to see if it's helpful. For those of us not usually organised enough to do a meal plan, but thinking one day ahead / on the day
I'm planning to do a stir fry turkey dish tonight (coconut, ginger and lemongrass sauce) in the TMX tonight, with steamed jasmine rice. I only hope that fussy DD1 likes it!

Love it Caroline.....we have this thread on the "taste" forum, and it's very inspirational
Tonight I made open beef enchilada's (using Julie O's beef enchilada recipe)......Love the sauce!

I haven't had lunch yet, and that's exactly what I feel like!!
I have no idea what I'm cooking for tea tonight. DS 2 will be home and loves his food. I'm checking out cookdinner.com right now and I think this looks nice:

i am in need of some motivation, feeling
very
slack atm!!!
i need to make cyndis gluten free bread and have a big bag full of pears to make sum pear jam (dh has been nagging me to make this for him for ages) but i just dont feel like cooking atm, it must be this beautiful sunny weather we are having all i want to do is go outside and enjoy it!!

Hubby is picking up a couple of our fave wood fired pizza's on the way home.
I'm still moving furniture around, and just can't be bothered cooking tonight

Had a heap of veg that needed using up so we are having Italian Shepherds Pie from the EDC (with some sweet potato in the mash). It was so wintery this morning I thought this would be appreciated. Now I think a BBQ out in the sunshine would have been a better idea.

Well, I have three Chicken Breasts defrosting, but still not quite sure. Probably a Baf's Chicken, but not sure what flavour yet...

Made a Donna Hay recipe called Honey & Lemon Roasted Chicken using a small free range chicken cut into quarters. Was really nice served with Judy's parmesan potatoes, mashed sweet potato and green beans.

CP it's similar, here it is, very simple as are most of Donnas.
HONEY & LEMON ROASTED CHICKEN
2 tblsp lemon juice
90g honey
2 tblsp olive oil
sea salt and cracked black pepper
1 brown onion, cut into wedges
1.5kg whole chicken, quartered (I used a small free range chook, about 1.3kg and quartered it myself)
1 lemon, sliced
2 tblsp fresh rosemary leaves
Preheat the oven to 200°C.
Place the lemon juice, honey, oil, salt and pepper in a small bowl and stir to combine.
Place the onion, chicken, lemon and rosemary in a baking paper lined baking dish
Brush the chicken with the honey mixture (I poured what was left over the top) and roast for 45 minutes or until golden and cooked through. (I also turned the chicken over when I could see it was nice and golden on the first side).

Oh that chicken looks divine! Saving that recipe!
Tonight we had a panicked, don't have enough time for the planned meal, makeshift dinner that was great. Made some lovely organic beef and basil sausages into a lovely 'mince' sauce for burrito's. Only took 15 mins to make (was going to do sausages, mash and onion gravy, with steamed veg, but only had 45 mins to be cooked and kids eaten and cleared, lol) and was so tasty and nice.

I have some cooked pork with Italian tomato sausages and lefterover vegetables in the fridge, so I'm going to use Thermomixer's Frittata Recipe that uses the Varoma.I usually use the frying pan, so it will be interesting to see what happens.
