Name of Recipe:
creamy fishy curry
Number of People:
Ingredients:
1 Tbl veg oil
100 g onion
2 cloves of garlic
1 long red chilli seeds removed
1 teaspoon of ginger
1 teaspoon of lemongrass
3 Tbl of Thai red curry paste
500 mls of coconut milk
400 mls of water
350 g potatoes or 12 small chat potatoes
6 meduim size mushrooms cut in half
steamed broccolini optional
300 g of green prawns
150 g of basa, i will add 300 g next time
1 teaspoon of fish sauce or to taste
a few steamed mussels would be nice
Preparation:
chop onion chilli and garlic, scarp down sides
add oil, ginger and lemongrass
varoma 4min speed 1 reverse
add curry paste 2 mins 80 speed 1 reverse
insert butterfly
add coconut milk,potatoes, and water 8 mins on varoma speed 1 reverse add mushrooms after 5 mins
check if potatoes are almost tender
add basa 1 min 90 speed 1 reverse
add prawns and fish sauce 2 min 90 speed 1 reverse
sever with rice

Frank hates chilli ,he didnt complain. next time i will leave some of the seeds in
hotness rating i give it a 1

I could stand a low heat rating of 1 Uni, could perhaps even go up to 3 LOL.

Hello Uni, When you say
"add prawns and fish sauce 2 min 90 speed 1 reverse" do you mean the fish sauce from a bottle and how much please?

yes Ann from the bottle add 1 teaspoon and taste it if more is needed add 1/2 teaspoon at a time

I missed this recipe. It looks tasty Uni. I found some not very tasty fish in the freezer from Monkey Mia last night and didn't know what to do with it. This looks perfect, thanks.
