You could make lime sugar great on pancakes. 8)
 Thinly peel the zest from two limes or more depending on the size of your jar, in the bottom of a large jar put 1/3 cup of sugar then add enough zest to just cover the sugar, (1 layer), then add enough sugar to cover the zest then more zest. Keep layering until the jar is full or you've run out of zest, finishing off with about 1/3 cup of sugar. Leave for about two months so the sugar can absorb all the oils from the zest.  Or a quicker way is to dry the zest either in the oven or a dehydrator then blitz it in the TM with about a cup  and a half of sugar for every two limes. You could always make lime cordial or lemon and lime cordial, great with lemonade and a dash of bitters.

Bump, made this with 3 garlic cloves very potent and delish. Might try just 2 next time for a more subtle flavour.

I haven't made any so far this tomato season, we haven't run out just yet thank goodness,   :)( I made quite a bit early this year), but we found one of the best ways to have it was to use it on pizzas instead of tomato paste. It makes them a bit more interesting and delicious.

This is a quick pizza for those of us who don't have room for a pizza machine, or they can be a sort of last minute idea as there is no waiting for dough to rise. Sorry no photos as camera is out of action :(
Pan Pizzas
Serves 2 to four.

Ingredients
230 gr Self raising flour
½ teaspoon salt
1 teaspoon dried oregano
2 tablespoons of EVOO
150 – 200 mls water

Toppings

Caramelised onions or tomato paste, I've even used pasta sauce at times
Sliced tomatoes
½ cup Grated cheese
Basil or Spinach or Rocket


Method
Place flour salt and Oregano into a clean TMX jug
And mix on speed 6 for 6 seconds.
Set the dial to speed 4 and add the olive oil through the lid then add water slowly until a dough has formed.
Set the dial to knead for approx. 30 seconds
Put dough onto silicone mat or floured board and bring all together by hand.
Divide in half and roll each piece out to 20 to 22 cm or to fit your frying pan.

Heat 1 tablespoon of EVOO in frying pan on low heat, make sure oil covers the pan. Place 1 pizza base in pan and cook for 5 minutes or until pizza is golden.
Remove pizza and add 1 tablespoon of EVOO to pan turn over and cook the other side until golden.

Top pizza with caramelised onion and ¼ cup grated cheese, place under grill until cheese is melted 2 – 3 minutes. Top with sliced tomato and a sprinkle of chopped black olives. Season with salt and pepper, scatter with basil/rocket/spinach and a little EVOO.
Can be placed in a warm oven while making the next.

These go really well with any sort of tomato soup or can be made just for lunch with salad.
My favourite is topped with torn basil leaves.

Hi Judy I'm glad you liked it.
 This does have a lot of sauce but we like it that way we stir through the rice or couscous and that thickens it up considerably.
You could add some extra veggies or just use one cup of water instead of one and a half. And cookie I have added chickpeas on a few occasions and they make a really nice addition.

Just a bump. Made this recently it is a really nice soup . I don't put beans in mine as its so chock full of vegetables there's no room.
 Its great with crusty bread.
