Subs & Alterations: 1/4tsp dried chili instead of 1/2 long fresh, 3tsp raw sugar instead of coconut sugar, 2tbs hoisin sauce instead of fish, and 400g chicken breast instead of 300g thigh .. Oh and I made the coconut milk (100g dried/600g water, 100 / till steaming /sp1)  instead of using a can  ;)

Reminiscent of my favourite take-away that I only get to enjoy a few times a year - Thai green curry, I really can't express just how satisfying and enjoyable I found this ultra-easy-yet-flavoursome soup .. Even more so because I didn't have to buy any special ingredients for it (big bonus when you live isolated rural) ..

My son said it tasted "odd" lol, but happily ate all the chicken in his bowl, and I really don't mind as it just means there's more for me  ;D  

I'll definitely be making this one often .. Love it!


* I've already heated up left overs and poured into a bowl of some freshly steamed rice to make filling main meal

Rules and Instructions Of Use / Dead Thread Protocol ..?

I was just wondering what's the go with dead/old threads because I know some forums don't like them being bumped after so many days ..

Reason being I really wanted to thank meganjane for sharing her Best Cooked Mayonnaise recipe which I made this morning and absolutely love!  Only the last comment on that post was in 2012 ..

I don't know what happened but this resulted in a honey flavoured watery mess with and a bitter after-taste that even extra toppings (yoghurt/fruit/coconut) could barely disguise .. Even after leaving it till cool so the chia seeds could absorb more liquid neither of us could eat it, so I ended up throwing it all out  :-\

Very disappointed at the waste, and now I have to find something else to do with a near full expensive bag of quinoa flakes as I bought them specifically to make this recipe!

Our third night eating out of the new book and another great success!

The only alteration I made this time was to add about 3/4 of a cup of frozen corn kernels at the end as we like a thicker minestrone, and the only thing I will do differently next time is to mix the meat & herbs/spices a little longer because I bit into one that must have had a pocket of cayenne pepper in it  :o

Very flavourful, quick and easy, hearty & filling = a great autumn/winter meal  ;)

This was the first time I've ever made or even tasted a chocolate chili, and I was actually a bit nervous about what the resulting flavour would be .. I need-not have worried though because it's Really Good!

The only alteration I made was to sub in 1/2tsp of dried chili as I couldn't find any fresh (skipping step 2), and after removing half for another meal (makes heaps and there's only me and the boy to feed) I added 1/2 cup of frozen corn (sweetness & texture worked well) and cooked for another 5min 100/ :-: ^^ .. Then served with rice to soak up all the sauce .. YUM!


PS: It's oddly not mentioned in the recipe, but it pays to weigh & grate chocolate in TMX (then set aside) at the very beginning - unless of course you like grating by hand?!   :-))

PPS: I think next time I may throw in a handful of sultanas too, again I think the sweetness will blend well and the texture will be a good addition  ;)

My book arrived yesterday afternoon and I wasted no time devouring it while waiting in the car as my son did Aikido  :D  

The first recipe I was going to try was the Black Bean Molé, only my day ran longer than imagined so we needed something quick, and the Beef Stroganoff with steamed cabbage 'noodles' seemed just the thing, served along with rice ..

Must note I had to sub plain yoghurt for the dairy free sour cream (recipe also in book) as I didn't have any soaked nuts, and I was a little short on tomato paste too but made do with approx half of what was asked for, and still the result was absolutely delicious!  Even the boy who is very anti-mushroom loved it!

I think the smoked parprkia is the real star of this recipe, but it's well balanced with all the other flavours .. And the sauce has a really lovely creamy texture, plenty of it too, so the rice was a great addition ..

I should also mention that I only cooked it for 20min instead of 25, and only added the cabbage & varoma for the last 10min of that instead of at the start as we like our steamed veggies to have a bit of crunch ..

Will definitely be making this again soon!  ;)

Recipe Requests / Hemp Milk

Hi All, I haven't been here for quite a while as I've been doing the raw food & juice cleanse thing, but I'm really interested to find out how to make my own hemp milk in the Thermomix ..

You can't buy it down here in New Zealand, in fact the only hemp product other than oil is 'crushed seed' or 'flakes' that's made to human consumption standards, but only legal to be sold for animal use *rolls eyes* .. The health food shops make it very clear that it's safe & healthy to consume though, so now worries about that!

So any advise as to ratio's, or if the Thermy is even powerful enough to do the job would be really appreciated  ;)

Raw Recipes / A Variety of Raw 'Ice-Cream' Ideas

I wasn't sure if I should post this here or in the general dessert thread, but there's already quite a few ice-cream recipes on that one, including banana based ..  These are a bit different to what I saw though, so I figured I'd put them where the raw foodies would most easily find them .. I've been on a (LFHR) low fat high raw diet since Jan '11, hence my user name  ;)  But I can assure you that even my non-raw friends and family love these too!


This first one is my (19yr old) daughters favourite, and she makes it every night when staying here during school holidays ..

2 Frozen Bananas
2 Tbspn Maple Syrup / or Raw Honey / or Date Paste
* Whiz in TM until pureed, then either re-freeze or serve immediately with a small handful of Raw Walnuts, and a couple of cracks of Himalayan Salt .. I sometimes add Maca Powder to this too ..



This second one is MY personal favourite, and I call it 'Green Speckled Frog'  ;D

2 Frozen Bananas
Meat of young Coconut
1 Tbspn Raw Manuka Honey
1 Tbspn Spirulina Powder
1 Tbspn Lucuma Powder
* Whiz in TM until pureed, then either re-freeze or serve immediately  ..


And this is the new favourite of my (10yr old) son ..

2 Frozen Bananas
300gm Frozen Strawberries
* Whiz in TM until pureed, then either re-freeze or serve immediately  ..


At other times I include the left over pulp from making nut/coconut/seed milks (also made in TM), dried fruit, dried coconut, mint, cacoa nibs etc .. I find the coconut meat & nut pulp in particular give it more of a creamy texture & taste which you may/may not prefer, and helps it freeze with less ice crystals .. But you can always put it back in the TM and crush it up if needed .. So just have fun and experiment .. It's so quick and easy that the kids can make it themselves after dinner, and adjust to each individuals preference .. We don't even worry about cleaning the TM bowl in-between  :D

Condiments and Sauces / Preserved Avocado

*sorry if I put this in the wrong spot, please feel free to move it*

Did you know you can preserve Avocado's?  I didn't until recently, so yay, I don't have to throw out all these ripe'ns that are way too many for me to eat before they go bad ..  Just add 1 Tbsp Lemon juice for every Avocado & whiz, then freeze (I'm recycling these old produce baggies) ..



Oh, the bottom right is a dip I made for lunch before cleaning the bowl .. Avo puree, chunk of Almond Cheese, Cracked Black Pepper, & some of my Green Goddess stock concentrate (simply a mix of pureed herbs/weeds/garlic, & salt to preserve) :D

Recipe Book Recipe Reviews / EDC Mushroom Risotto (tweaked)

I've made this following the EDC book to the letter, but always had to finish it off in a wok as there was a lot of liquid that didn't get absorbed by the rice .. So I decided to tweak it following some of the suggestions on the many other Risotto threads here .. And even used plain old Jasmine rice instead of Arborio as it was all that I had and a quick google told me it would be fine so long as I didn't wash it (reducing it's starch content) prior to cooking ..

*tweaks*
I used 400gm Jasmine Rice, and 900gm water
Apple Juice instead of Wine
- and cooked using the butterfly

At end of cooking I added: (approx) 125gm Fetta, 1/3 bunch fresh Spinach, zest of 1 Lemon, 1 chopped tomato, 2 chopped (green) spring onions
Mixed it for another 5min on  :-:  ^^ and let sit for 5min before serving ..

I'm super happy with the results, and will definitely be making it like this in the future!  Even my 10yr old son who doesn't like spinach or mushroom ate a huge bowl and declared it "yummy"  ;D

Hi all you Wonderful Thermomixers .. I was a quiet/lurking member here once upon a time, but I couldn't remember my log in details and my email wasn't recognized, so I opened a new account   :D

Anyhoo, my name is Clare and I'm an Aussie (Perth) gal who now calls New Zealand home .. And I've had my TM (Stella) for about two and a half years?  As I'm sure you'll all appreciate she's the star in my kitchen, but even though I keep her active at least every other day, I know I'm not using her to the fullest potential .. Hence my renewed interest in finding great recipes and ideas!

So while searching online for this forum & blogs, I decided to really make it a mission to  a) using up what I already have in my cupboards/fridge/freezer, and b) trying a new recipe every day this week .. So far we've had:


Saturday: EDC Cauliflower Soup http://www.forumthermomix.com/index.php?topic=9503.0 made with a very sad looking cauliflower & extra broccoli to get the required weight, plus I followed judydawn's suggestion and added 2 onions .. It was fabulous, and I have two extra portions in the freezer - one of which I'll be sure to try as a dairy free lasagna (white) sauce ..


Sunday: farfallina's Spinach, Lentil & Buckwheat Soup http://www.forumthermomix.com/index.php?topic=8953.0 I used brown lentils and the EDC stock, and a lot more spinach that it called for .. The texture of this was absolutely perfect, but I found it somewhat lacking in flavour, so next time I'll try adding spices and maybe some tomato paste too ..


Monday: Well it was freezing here yesterday, which got me thinking it was a good day to try making pastry for the first time lol .. I used meganjane's Rough Puff Pastry recipe http://bushgourmand.blogspot.co.nz/2011/05/rough-puff-pastry.html and Cyndi O'Meara's Vegetarian Sausage Roll Filling that everyone on here was excited about http://www.recipecommunity.com.au/node/17055 .. I can certainly see why a lot of you are fans of it, because even tweaking it to what I had on hand (extra walnuts & oats, plus mushrooms instead of breadcrumbs) they turned out great! My pastry was good too, but I think maybe I overworked it as it didn't really 'puff', but it could also be that I rolled it too thick .. No biggie, I've got half of each (pastry & filling) left over to try again ..


Tuesday: well I haven't decided yet, but I'm thinking quirkycooking's Brown Rice Mushroom Risotto with Macadamia Cheese (only I'll have to sub the Maca's for Cashews or just use Parmesan/Fetta) .. Must say the Cashew Honey Vanilla Bean Custard http://quirkycooking.blogspot.com.au/2012/02/cashew-honey-vanilla-bean-custard.html sure is tempting too!


Other things I use Stella for is making nut milk, green smoothies, banana 'ice-cream', AtV's Raw Vegan Sour Cream http://www.addictedtoveggies.com/2010/12/atv-staple-recipe-raw-vegan-sour-cream.html (brilliant in salad dressing & dips), and general chopping/grinding/blending ..

Well thank-you if you read all of the above!  I'll do my best to be an active forum member from now on  ..
Oh and my username just popped into my head, but I guess it's because I eat A LOT of fruit :P
