BEEF ENCHILADAS - Serves 4
2 tblsp olive oil
2 cloves garlic
1 medium onion, cut into quarters
1 long green chilli, cut into chunks
1 green capsicum, seeds removed and cut into chunks
2 tsp ground cumin
¼ tsp chilli powder (or to taste)
½ tsp sweet paprika
½ tsp ground cinnamon
1 tsp salt
1 ½ tsp sugar
1 x 700g bottle passata (pureed tomatoes)
1 tblsp olive oil, extra
500g premium beef mince
8 flour tortillas (or make your own) - recipe below
150g tasty cheese, cubed
Sour cream &coriander or cont parsley to serve
If making your own tortillas, make them first and put aside until needed.
Place cheese into TM bowl. Grate 5 secs/speed 8. Remove from the bowl and put aside.
Place oil, onion, garlic, capsicum and chilli in TM bowl, and chop for 5 secs/speed 5.
Sauté for 10 mins/100°C/speed 2..MC off. Scrape down sides.
Add spices and cook further 3 mins/90°C/speed 1.5, MC off.
Add salt, sugar and passata, cook 9 mins/100°C/speed 1. MC off. You’ll need to turn up to speed 3 for a few seconds to get going, then turn back down to speed 1. Remove from bowl, no need to clean TM bowl.
Add extra 1 tbsp oil to bowl, sauté for 3 mins/100°C/speed 1. MC off
Add mince and cook for 5 mins/V Temp/Reverse + speed spoon to speed 1. May need to initially have on speed 2 + reverse, to break up lumps in mince, then turn down to spoon or 1. MC off.
Add ¾ of enchilada sauce, stir 30 secs/Reverse + speed 2 ½. MC off. Preheat oven 180°C.
Divide mince mixture among the tortillas, placing it neatly in the centre. Roll tortillas up from one side to enclose the filling. Place in 20cm x 30cm approx. ovenproof dish seam side down.
Spoon remaining tomato sauce over enchiladas and top with cheese. Bake for 15 minutes until heated through and cheese is melted and browned. Serve with sour cream and coriander/parsley.
I made my own tortillas using this recipe by Trudy Olive.
320g plain flour
1teaspn salt
3 tblspns olive oil
1 tspn baking powder
180g warm water
Place everything into the bowl.
Mix 10 seconds on speed 7 to combine.
Set to locked position and knead for 3 mins.
Put dough onto bread mat and rest 5-10 mins.
Divide dough into 12 pieces and roll each piece into a flat round.
Fry in an oiled hot frying pan until they start to brown. Turn them over and cook the other side.
OK to freeze.
Also great for making tortilla chips in the oven with any leftovers.

CP - this was divine - not only in comparison to the bought stuff - but in flavour. The green chilli, capsicum and spice mix really enhanced the mince. Very easy to make and looked so delicious when I pulled them out of the oven that I didn't have time to add the sour cream -- too much salivating.

When I did my monthly shopping at the supermarket I picked up a packet of tortillas to check the ingredients and counted 9 preservatives/additives listed. Now I know that they are so easy and cheap to make (and tasty) I won't be buying them again.

cathy79 - These were fantastic. The flavours were really fresh and delicious. At first glance, the recipe looks a little overwhelmin but it's actually very straight forward. I guess it's the list of ingredients. But I had everything in the cupboard. Used half the chilli and didn't put in the chilli powder and was perfect for the kids (and me). I even made my own tortillas. That was a little fiddly and looked a little dodgy compared to bought but once they were rolled up and baked in the oven, no one would know their original strange shape.
Next time, I'll add extra vegies to this recipe.
Caroline J - IT'S DELICIOUS!!! Thanks for the recipe, JulieO, this will be a regular in our house now. DH was complimenting me (you) with every mouthful. I might try and squeeze a few more vegies in next time for the kidlets.
Berry - this was the first 'meal' that I made and we were thoroughly impressed, it was absolutely delicious! I think that the home-made tortillas made all the difference and am going to invest in a tortilla press.
theweewelshone - Well although the enchiladas were hard to roll due to the liquidy-ness they ended up tasting great and the kids devoured them and even asked for seconds Smiley The tortillas soaked up some of the sauce whilst cooking so it looked fine in the end.
Next time I make them I'll add the enchilada sauce bit by bit so I can still roll them up.
The addition of kidney beans was nice and the kids ate those no worries. I added the kidney beans a few minutes after the mince was put in as I liked my beans softened by some cooking. As they were put in during the reverse + 1 stage they remained whole so if you don't like whole beans - or want to hide them from the kids - then chop them before doing the mince stage.
maddy - Absolutely scrumptious Julie! Kids cleaned their plates too. We really enjoyed the flavours. Nothing more satisfying than making your own tortilla's. I didn't have passata sauce, so I used 2 tins diced tomatoes (roughly drained) and just mixed it longer on speed 3 with mince. I bag my mince in 600g lots, so with the extra meat mix that didn't fit in tortilla's, I added it in with the salsa for the topping.
hopefulcook - I called it "Mexican Lasagne" to convince the sceptical small people. It was a hit! I prepped the meat in TMX but then cooked on the stove (I don't like mince cooked in TM), then gave a quick rinse and made a 'taco sauce' for the top which I got from an old Mexican cookbook (one of those small hard cover cook books). It was excellent:
1) Put 1 tbs EVO, 1 onion, 3 cloves garlic (and chilli but I left this out for kids), give a quick blitz then saute for 3 min 100 degrees, speed 1.
2) Add 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp brown sugar saute for 1 min 100 degrees, speed 1.
3) Add 400g tin tomatoes, juice 1/2 lemon, cook for 15 min, reverse, speed 1, 100 degrees.
Use this instead of Passata. I only put on the top, did not bother in the tortilla.
Also had no sour cream so I used yogurt and it was fine/good.
As this was such a success I am determined to try and make my own tortillas next time.
Chelsea - I made these tonight with chicken and they were heavenly. I followed JulieO's directions up to where the passata is added and it is cooked for 9 minutes. I then transferred a third of the sauce into a jug (for the topping) and added 500g of diced chicken thighs to the remainder of the sauce in the TM. I cooked that for 6 minutes, 100 degrees, reverse speed 1 and then proceeded on with the recipe (making up the enchiladas and baking them etc). I think we loved the chicken even more than the beef and it was cooked to perfection. Such a yummy recipe Julie.
Denzelmum - my tweak for vegetarian version - using Sanitarium Casserole Mince, a handful of sliced mushroom, 125g canned corn and 125g canned red kidney bean. Yum...
KerrynN - they were FANTASTIC!!! Who would go to a restaurant when you can make this at home??? Thanks for the recipe! Will be a definite repeat.

I had quite a bit of meat left over (as my wraps dwindled in number due to DS1 eating some of them). Froze the leftover mixture and will use it a sort of nacho style dish.
Bubbles - Thanks JulieO for such a fantastic recipe! They were so delicious,and so easy to make! Mexican is DH favourite meal, so he has requested them weekly! Yum Yum !!

buzzbee - This is a very popular and oft-requested dinner option in our house. It makes a lot - enough for lunch the next day, which is handy.

I also have Trudy olives tortilla recipes so it must have appeared somewhere on here. It is hand written though which would suggest it wasn't put in the recipe section. My exercise book comes in handy for jotting down things like this that I just know I won't be able to find when I need them.
I am going to use this recipe to make some nachos for Fathers' Day lunch - the grandies won't miss the beans as they don't like them anyway. I'll use the tortillas to make the 'corn chips'. Thanks JulieO, that's one dish down on paper, now to find a few more.

Thankyou everyone :) I've usually made these the 'old' way (stove top) but when we had these last night they were much nicer than previously. Maybe it was the home made tortillas, I don't know, but we really enjoyed the meal.
Not a very spicy dish either, though you could up the amounts of some of the spices that are in it, but we liked this version.
I'm still getting the hang of converting recipes, this is only the second one I've done, so some of the times could probably be tinkered with, but following this, mine came out good. :)

Don't worry - I find that the times vary for me almost every time :-)) Cooked the paella two nights running and the second night it took an extra 10 minutes to cook the rice ??

Made these last night. We rarely have Mexican food, and in the past have usually bought the supermarket pack with the sauce powder etc.... Hubby made this last night in Thermie with a tiny bit of help from me(instruction wise guidence).He put a little too much of the sauce into the meat mixture,so there wasnt enough for the top.He also didnt add a full chilli cos the one we had was hot & Im a bit of a coward when it comes to hot chilli,wished he had popped it all in now cos the enchiladas werent hot enough but we loved this slavered with sour cream.

Please try and make your own tortillas one day when you can, I'm sure that's why we enjoyed this as much as we did, they were much nicer than the store bought ones for sure and they freeze well too,(with baking paper in-between) so you can just pull out as many as needed. They are on my list to make simply to freeze for the times when needed.

YUMMO - Definitely on my 'to do' list.
I love enchilada's but I am put off the store bought ones by how many additives are in them. Not to mention they kind of taste processed if that makes sense. I have never tried making my own, but can't wait to give this recipe a go.

My hubby cooked this dish for us the other night and even made the tortilla's it was sooo yummy, hubby is starting to think the the TM is his! My older daughter has requested that Dad makes more tortilla's for her lunch. What an awesome recipe!! :) ;D

Interesting side note - I did buy tortillas, but when I got them home the "best before" date was October 09, 3 months ago. They looked fine, but didn't dare use them. What on earth could be in them so they last that long???????
Edited to add - I have a recipe that also puts lots of vegies in the mince - celery, zucchini and carrot. It was a great recipe, even though it used "bought" everything. So next time, I'll add the extra vegies to this homemade recipe.

Cathy, I'm so glad that you enjoyed them. I have just bought a tortilla press which arrived yesterday so am hoping to make this meal again next week to try it out. The home made ones are so much nicer than the store bought ones, but take ages to roll out and I could never get them into a good round shape either. Hopefully this little gadget will rectify that problem.
Thanks for reporting back, I like the idea of the extra vegies in the sauce too, I do that with cottage pie filling and the flavour is far more superior. :)

Yes I have read similar. Seems the ones made with cornflour will be nice and thin and easy to do, whereas the wheat ones need rolling with a rolling pin after to make thinner. At least the press should do most of the work and get into a more round shape, I hope.
I will experiment with both kinds and see how they turn out. My only experience with tortillas has been with the ones in this thread and the bought corn ones, the home made ones being far superior taste wise (IMO), so am hoping this little gadget will simplify things for me. :)

Just a quick update. Have just made 3 flour tortillas using a different recipe. I am pleased with how they've turned out so far. I found that after leaving the dough to sit for about 30 mins made it easier to flatten out with the press. The first one I left only for 10 mins and though it flattened initially, it shrunk back into itself once I removed from the press. The next one I left for 20 mins, better result, but the 30 min one was the best and stayed in shape and size. I didn't bother rolling with a rolling pin, though if you wanted super thin then there is that option. I then used my LeCreuset cast iron grill on the flat side over 2 burners, and cooked them on that. The smallest one I just tried and it needed to be cooked for a bit longer, but that one is smaller and slightly thicker than the other 2. It's just getting it right.
I have taken a couple of photos and will upload later, they probably won't be that great as it was a spur of the moment thing and didn't have any lights set up, but you should be able to at least get an idea.
After looking for a recipe for corn tortillas and finding one using corn flour, I attempted to make a half quantity of that, but it just stayed as sludge in the bowl. ??? I had another quick look on line and read that cornflour won't work and you need masa harina flour. Of course it's not something that I can get in my town so I'll have to leave it today, maybe I can get some in Adelaide next week. I'd really like to try and see the difference in the 2.
So I'm just waiting for the TM bowl to dry so I can make some more wheat ones to use in this meal for tonight. I think I'll do the recipe on this thread and then I can compare the 2 recipes.
So far my experience has been pleasant and a much easier option than when I've done the rolling by hand. Of course it being new I took my time, but this next lot should be quicker now I know what it's all about.
Another thing, instead of using gladwrap as the cover for the base and top, I cut out 2 circles from the roll of Magic cooking sheet that I have. It means that I can just wash and dry them after using and put away until the next time. Much easier to use that gladwrap (and no creases) :D

Mistakes do give us a good laugh Cookie1 - you know that though as you have also been a victim. I've had my turn too with the 'front end loader' comment in regard to washing machines and Brazen stuck it up me too. ;D ;D ;D

Yes I'm very happy with the press. Much preferred the recipe that's included in this thread and leaving the dough to sit (in the bowl) for 30 mins is definitely the way to go. It was so quick and easy that the next time I make this meal, once the dough is sitting for the 30 mins, I will clean out the bowl (or maybe I'll have an extra bowl by then) and start making the filling as the actual pressing the dough into shape and cooking takes no time now. So without having tried the corn version yet, this was still a good buy. :)

Good work - sounds like a slow process? can you press one on top of the other with sheets between?

No it's not slow at all, once you've done it a couple of times to get the hang of it. Just put the little ball on the base, press the top down, done, lift off and put aside with a cover over the top, then do the next one, takes no time at all, no mess and no swearing from me trying to get them to roll out with a rolling pin. :D
My first lot this morning (made 3) was the test run, then when I knew what it was all about I made this lot to have with dinner. I pressed 8 in no time.

In my enthusiasm I may not have worded it clearly enough. I know what I mean but sometimes it comes out different. ;D
Basically add all ingredients into bowl, knead for a few mins, then leave to sit for 30 mins.
Divide dough into 8 pieces, roll each into a small ball with your hands, then one at a time, place in press, drop top part down, and press for a couple of seconds, then lift off and repeat with the rest. :D

ok here is my first question for the forum :) and its a really embarrassing one :)
I want to make these tomorrow, but Do you fry the tortillas before using them in the baked enchilada recipe, or use them uncooked? I am sure its means to fry them .... but worried they will go too crunchy to roll them properly so wanted to double check in case I have misunderstood

I did gently fry them, but like you say if you do it too much they will harden. I also kept mine under a tea towel as I did them, less likely to dry out that way too. Good luck, hope you enjoy it. :D

Placing your tortillas on a plate in a plastic bag as you make them is a great way to keep them soft (a Quirky Jo tip ;)). :)

I've been a little slack in posting but this was the first 'meal' (after the obligatory custard and sorbet of course) that I made and we were throroughly impressed, it was absolutely delicious!
Being a novice, I was a little too concerned with breaking the mince up (lesson learned) so it was a little fine, and my tortillas looked a little dodgy, but once it was all put together you couldn't notice that at all. I also think that the home-made tortillas made all the difference, and am going to invest in a tortilla press - I never knew such a thing existed - thanks JulieO! (Actually, it was your enthusiasm and photos that convinced me I needed a thermomix in the first place - without having laid eyes on one - so thanks for everything!) :D

Mine are currently in the oven but I'm not very confident of success. My mince seems very fine although I didn't do Speed 3 as there were no lumps - just left it on Reverse + Speed 1, also it seems very liquidy. I think I added 3/4 of the sauce back to the mince but maybe it was too much. There was still plenty for pouring over the enchiladas.
I added 1/2 a tin of kidney beans during the mince cooking stage as I like kidney beans and extra veggies is always a good idea for the kids.
I would have expected the extra kidney beans (drained) would have made it even less liquidy.
I wonder where I went wrong?
Next time I'll add less enchilada sauce and see how it is. I can always add more if it needs it but once there is too much sauce then you can take it out :)

I only add enough sauce to give the right consistency- the rest goes on top. I think it will still work out fine, even if there was too much in there.

As they were put in during the reverse + 1 stage they remained whole so if you don't like whole beans - or want to hide them from the kids - then chop them before doing the mince stage.
My Thermomix is only 2 weeks old so I'm still definitely in the learning curve stage but I'll still classify this meal as a success. My first mexican without using a sachet mix for the flavour - yay! I did use those funny long life tortillas though. The challenge is on to try and make my own.

I think other's thought it was a little dry also, so I re-did it with the MC in place and it resulted in a much wetter sauce and so I edited the original recipe. By all means, leave the MC off if you prefer a dryer sauce, or a mixture of both until you get it how you like it. Thanks for reviewing it for me. :D

Julie - by all accounts your recipe is a huge success - I think my problems stem more in my newness to Thermomix. So do not worry that its your recipe :)

I didn't have passata sauce, so I used 2 tins diced tomatoes (roughly drained) and just mixed it longer on speed 3 with mince. I bag my mince in 600g lots, so with the extra meat mix that didn't fit in tortilla's, I added it in with the salsa for the topping.
P.S........sucker for gadgets, so guess who ordered the tortilla press after dinner ;) ;D

Just a tip, remember to line the press with either plastic wrap before pressing, or do like I do and use a liner that I've cut to size for both the top and bottom plate.

I (did) buy tortilla's often, as the kids were more willing to eat meat dishes served on or in a tortilla. So glad I can make my own now (which justified the press ;)).
Just wanted to ask you, which brand of liner do you use, and did you get it online?

Maddy, bought this liner on a roll (further down the page) so I can cut off what I need. I keep the 2 circles I cut out with the press. I find it very good and better value than buying the one sheet.
Also bought the bbq sheet, again good if you use a solid top bbq at home, much easier to clean up, and more hygeinic if you happen to use a public barbecue when having a day out. :)
No, I haven't looked for a corn recipe yet, another must do. ;D

A bread demonstration I went to, used this type of liner for all her bread roll tins, hot cross buns etc.....
Will definitely come in handy with many uses.

Well T'mixer......it was a very simple process......and a handy gadget. You could also use it for pressing flowers ;)

Good to see it arrived Maddy. I used mine on the weekend too to make fajitas and I found the dough worked better after leaving wrapped for an hour. I also used the tip someone else left and that is put them into a big zip lock bag after cooking with baking paper between to stop sticking It kept them soft and pliable so they didn't crack when rolled.
I've ordered some masa flour to make corn ones as they are supposed to stay quite thin once pressed without extra rolling, but we'll see. I haven't had a corn one so am interested to see what it tastes like.

I made this last week and DH was very surprised (in a good way). I called it "Mexican Lasagne" to convince the sceptical small people. It was a hit! I prepped the meat in TMX but then cooked on the stove (I don't like mince cooked in TM), then gave a quick rinse and made a 'taco sauce' for the top which I got from an old Mexican cookbook (one of those small hard cover cook books). It was excellent:
1) Put 1 tbs EVO, 1 onion, 3 cloves garlic (and chilli but I left this out for kids), give a quick blitz then saute for 3 min 100 degrees, speed 1.
2) Add 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp brown sugar saute for 1 min 100 degrees, speed 1.
3) Add 400g tin tomatoes, juice 1/2 lemon, cook for 15 min, reverse, speed 1, 100 degrees.
Use this instead of Passata. I only put on the top, did not bother in the tortilla.
Also had no sour cream so I used yogurt and it was fine/good.
As this was such a success I am determined to try and make my own tortillas next time. But DH will kill me if I buy any more kitchen gear!!!

I made these tonight with chicken and they were heavenly. I followed JulieO's directions up to where the passata is added and it is cooked for 9 minutes. I then transferred a third of the sauce into a jug (for the topping) and added 500g of diced chicken thighs to the remainder of the sauce in the TM. I cooked that for 6 minutes, 100 degrees, reverse speed 1 and then proceeded on with the recipe (making up the enchiladas and baking them etc). I think we loved the chicken even more than the beef and it was cooked to perfection. Such a yummy recipe Julie. ;D

I found this recipe on my robogourmet app and it is pretty much identical except that it has 300g beef mince and 400g kidney. It doesn't mention the kidney beans in the instructions though, so I just wondered if anyone could enlighten me as to when to add them? I'm not sure whether to cook to them as part of the enchilada sauce.

I cooked these the other night. Ultra delicious!!!! Thumbs up all around.
I made my own wraps as well. I'm amazed at what I am actually attempting to do!
I had quite a bit of meat left over (as my wraps dwindled in number due to DS1 eating some of them). Freezed the leftover mixture and will use it a sort of nacho style dish.

Here's Trudy Olive's recipe Halex. I will post it in it's own thread I think as it is hidden somewhere.
This is one by Trudy Olive
320g plain flour
1teaspn salt
3 tblspns olive oil
1 tspn baking powder
180g warm water
Place everything into the bowl.
Mix 10 seconds on speed 7 to combine.
Set to locked position and knead for 3 mins.
Put dough onto breadmat and rest 5-10 mins.
Divide dough into 12 pieces and roll each piece into a flat round.
Fry in an oiled hot frying pan until they start to brown. Turn them over and cook the other side.
OK to freeze.
Also great for making tortilla chips in the oven with any leftovers.

It looks the same as quirky jo's, I've tried all the tips and tricks from a number of blogs and utube but I still end up with a mess and lots of very misshapen hard wraps, i know putting them straight into a plastic bag is meant to keep them soft but just never worked well for me. I managed a strike rate of about 75% with practice, but I just don't have time to make them and clean up the mess from them so have decided I'm happy to go with the preservative laden ones from the shops on the rare occassion we have them. They aren't a big favourite in our house.

I made this mince mixture tonight, to have tomorrow. I have a quick question, after I cooked the mince it was quite brown/burnt and stuck to the bottom of the bowl. I haven't cooked mince much in TMX yet, so wondering whether it is something that usually happens, or something I did wrong? I didn't measure my tablespoon of oil, so perhaps I didn't have enough oil in there to begin with?

Bubbles this happened to me the last time I made it too. It was the spices that had caught on the bottom of the bowl. I think it's because I used the premium mince which has very little fat and therefore was drier. You could certainly add more oil, or use the less lean type of mince. I cleaned mine off easily enough with a little Jif and a scourer. :)

The tortillas on my blog are indeed those from Quirky Jo's. Mine mostly looked like maps of Australia.
I like the idea from this blog post (http://making-cents-at-home.blogspot.com.au/2009/08/home-made-tortillas-by-hand-or.html) of putting a tea towel in a large ziplock bag and layering the tortillas on the tea towel as they're cooked.
Didn't someone do a wrap challenge on their blog where they made and ate wraps for a week?

My DH cooked this for dinner tonight. It was lovely and he was very delighted with it.

Not sure if you're interested in a new recipe but it might work for you Wonder. It is actually for Naan bread but we use it for pizza bases, wraps etc. You must roll it thin for a 'tortilla' type wrap and it tends to puff up so you need to be ready to push it down with a spatula. They keep soft in the thermoserver while you make the remainder. Its easily adapted to the TMX. Even I can do it! I know it's not a tortilla, but hey, whatever works!

I love this recipe for the sauce and make it once every 2 months. We have tacos almost weekly and I use this sauce as taco sauce or salsa. I freeze the sauce in the old jars (perfect portion size). Thanks again.
