not really cooking, but just made macadamia butter, more fat bombs.

working out what to make the kids. ;)

Vegan sausage, red capsicum and brown rice casserole, a bean salad roughly based on Yummy Brown Rice salad and a roast vege frittata (I seem to make this a lot lately because it is so easy)

I've made some Hazelnut Cacao Cookies. the recipe is from the latest WW Food magazine. DH said they taste like nothing, but DD likes them. I had one and think they are lovely. They are dairy free and I think gluten free. As usual I mucked around with the recipe a bit so I will post it.
May all dairy items in your fridge be of questionable vintage.

Made another Pumpkin and Date loaf, lovely.  Annoyed Thyroid recipe.
Tried to reproduce the Beetroot and Walnut loaf.  Nice but not quite like the one we had.

Beetroot and Walnut with Cream Cheese icing. Recipe made 2 of these.  Gave one to neighbour who looks after our Chooks when we are not at home.

So after not cooking much for awhile I decided to make Thermobloggers steamed recipes .
Spelt loaf bread , it has sunflower seeds in it and it I s quite nutty - we all liked it .
Fluffy Lemon poppy cake , took 70 minuets to steam but is so light and delicious.

Ral cut up a large pumpkin for me so it is pumpkin everything. !  Pumpkin soup today. ( pumpkin and Date cake yesterday)
More chicken Pot Pies with mashed potato on top. Will have leftover salads from Souvalaki with them.
Made an interesting Sweet dish. Placed some diced pear into small serving cast iron pots. Added a dash of plum liquor and covered with custard leftover from Portuguese Custard Tarts. Heated in AF.  Very nice.  Will make again.

I wasn’t completely happy with Beetroot cake, although neighbours and visitor loved it. Making it again today with a few adjustments.

I have RTE home made pastrami in the oven at the moment.  I cooked the corned beef yesterday and now I’m cooking it for 30 minutes to set the outside crust.  I’m looking forward to trying it.

I bought a heap of cheap strawberries this morning. I have washed and sliced them to make sure they are ok to eat and I will freeze them. I can not understand how anyone could be so stupid to put needles into strawberries.

Cookie, I am going to try and buy some cheap strawberries to make jam.  Not much room in the freezer at the moment.  Why would someone put needles in Strawberries?  Crazy.

The chicken pie mixture made 4 pies so still 2 to go.

Several days ago I roasted a 4/4 of lamb.  We has the first meal as a roast dinner.  The next day I sliced the remaining meat into thin pieces.  These I cooked over a high heat in the frying pan with a little garlic.  This I used as the meat in the Souvlaki.  Was full of flavour and crisp but not dry. Also got rid of a lot of remaining fat.

I bought fruit & veg yesterday but there were no strawberries where I shopped.  I hope it all comes to an end soon and the culprits are caught - a hard task though I’m sure.
I’m making some soup with the last of the roast carcasses I had in the freezer.  I thought I’d thawed out 2 x 2 packs last night but one turned out to be last year’s ham bone so I need to buy some split peas and make that soup tonight.
