Zucchini Slice is a hit here with my 4yo and 2yo. I make it with a mix of zucchini and carrot and sometimes pumpkin as it gives it a yummy sweetness. Great for freezing too, I cook it once a week and freeze 1/2 so there is always something for their lunch if needed.

I don't have a recipe as such. I usually use 1 or 2 zucchini/carrot depending on size. Onion, ham/bacon (optional), flour, 5 or 6 eggs and grated cheese.

I just make it up as I go along. Only mistake I made the first time in tmx was 'chopping' the veggies too much and it was turned into mush :(

Vegemite Scrolls another favourite here.

Made double batch and made 6 pizzas with a bit left over. Tmx handled the double batch easily :)

Thanks for the replies.

I found the dough a bit wet last time I made it so added extra floury but it was yummy .

Making pizzas tonight for 6 people so hoping the double batch works :)

Can this be made in a double batch and some frozen???

Is it better to freeze in a ball or in a rolled out circle?

Thanks  :)

Questions? Technical Issues? The Survival Guide / Fresh Yeast
« on: July 15, 2012, 12:53:47 pm »
Hi everyone  :)

I managed to find some fresh yeast and I am not loving it  :(  I have used it twice ( a buttermilk loaf and pizza dough ) and they both had a different taste when compared to using dried yeast.  Is that normal?

I have been putting the fresh yeast in with the warm water and putting on sp 1/2 for a few secs to dissolve.

The smell of the fresh yeast turns my stomach as soon as I cut it up and I think that might be having an impact on me eating the final product, reliving the terrible smell  :P

Does anyone else use the fresh stuff????

Thanks for all the help, I am going to try it next week when it is my turn to take in a morning tea to work.  I would have to bake the night before so hope it stays looking yummy!

Emeraldsue it looks amazing! How did you fold/put it in the dish? I want to make one but not sure how to go about it. Is it a pie/quiche dish?
