Zucchini Slice is a hit here with my 4yo and 2yo. I make it with a mix of zucchini and carrot and sometimes pumpkin as it gives it a yummy sweetness. Great for freezing too, I cook it once a week and freeze 1/2 so there is always something for their lunch if needed.
I don't have a recipe as such. I usually use 1 or 2 zucchini/carrot depending on size. Onion, ham/bacon (optional), flour, 5 or 6 eggs and grated cheese.
I just make it up as I go along. Only mistake I made the first time in tmx was 'chopping' the veggies too much and it was turned into mush
Vegemite Scrolls another favourite here.
