Doesn't look to be anything wrong with that, ES.  I'd be happy with that, as Amy said, with lots of lemon juice and sugar - yummy!

DH cut it up last night while I was in the shower, but he left my bread for lunch today out of the freezer. The slices are sitting on a normal bread and butter plate. I think one slice of this bread is equal to two of normal bread.

True. DH has just gone to car club and he made himself two rounds of sandwiches with it instead of his normal one. I was surprised that it didn't have a big hole in the middle or under the top.
