We enjoyed this very much.We loved the addition of hard boiled eggs.The only thing I would do next time is reduce the Dijon mustard and reduce the salt.

I always put hard boiled eggs in my Potato salad. Mum used to do it and I have carried it on. Actually I now mash the hard boiled egg as though for a sandwich, and stir that through.
May all dairy items in your fridge be of questionable vintage.
