Chit Chat / Happy Hour!

Tonight I  was invited to happy hour and dinner that followed at a friends place. I took pre dinner nibbles & dessert.   Dukkah from EDC and Judydawn French onion dip. The FOD was just fantastic. so tasty and without all the preservatives.  For dessert I made Brons, Banoffee Pie, which was just fantastic, I was a bit worried it would be too sweet, but it was just right, and I didn't add sugar to the cream. I also made the biscuit base instead of the pastry one. I also took along a sample of Fundj's Limoncello, which I had only just finished making.  Could easily get addicted to this. Do you drink this straight on the rocks(ice) or mix it with mineral water?

I have just returned from my 2 weeks holiday in Tassie.  For those of you who live there, you have such a beautiful back yard.  Although, I must say, after doing most of the driving, I now feel that I am qualified to become a rally driver, not so much for the speed but for the twisting roads.  And for the scenery WOW but so much road kill  :( :'((not from us). Two weeks just went by so quickly, another week would have been just great and given us a bit more time to spend here and there to explore more. The convict built bridge etc were just beautiful, locally grown fruit, veg, cheese so fresh & tasty. Mona was amazing, Gordon River Cruise, Tahune air walk, Port Arthur etc etc etc just  awesome. Many pictures taken and fond memories stored, and all the very friendly people we met along the way both travelling and living there.  Also a big thank you to the considerate drivers who let you in when you put your blinker on (maybe that was because we were driving a Britz van and they knew we didn't know where we were going!!!)  A fantastic holiday, and to anyone who hasn't been there, start saving your pennies. I know it's early in the year, but won't be long before its getting close to the time we need to start thinking of making things, and with so many of you making some fantastic things, from lots of sites, thought it may be good to share.

I am heading down to Tassie, with two other female friends for a 2 week (much needed for us all ) holiday of Tassie, starting on the 3rd March, please advise of the BEST MUST SEE places for those of you who live there (not into the cassino scene).  We will be based in Hobart for the 1st week with a hire car, then heading off for the 2nd week with a Britz campervan, 1st stop Strahan, staying in caravan parks.  Can't wait, we have all been through some sort of emotional issues of late be they health related or other, and are so looking forward to this trip.

I purchased a 10Kg box of sauce tomatoes on Friday, ready to make my yearly tomato chutney, then thought I may do it in the thermomix, thereby led to my trying to convert the recipe. I have made 3 lots of the converted recipe, and they all taste good, even DH says so, but the dilemma is   Do you spend 1 1/2 hrs making one big lot of chutney or lots of little lots.  Little lots are good if you only get small amounts of tomatoes at a time, but here in South Australia at this time of year you can buy good quality sauce tomatoes for $10, a 10kg box. I also purchased 10 kg of BBQ onions for  $3.99 (these onions were in really good condition, sometimes cheap onions mean lot of rubbish in the bin when peeling them) Here in South Australia, we can also purchase a product called EZY-SAUCE, (in the sauce section of Woolworth's and Cole's) it contains 90% of all the spices you need in a vinegar base, and it is the Tom Chutney recipe on this bottle that I have used for the last 4 yrs, and today adapted for the TMX.Monica

Hi, I get sent emails about cooking classes in Adelaide, and from what I can see, as they are called "back to basics" classes, they are for the intending buyers of a thermomix (as I understand). Do any of these classes realate to those of us who are more exp users, looking at new recipes, or for new tips/hints etc.? Anyone out there who has used a TMX for sometime found these classes useful?

Chit Chat / thermomix on holiday

Have just spent a week away in a caravan park in south australia, only to see a lady washing up her Thermomix in the communal washing area.  How surprised I was, I was too worried to take mine, due to the feet and the sensitive scales, and all the bouncing that goes on in a caravan whilst on the move.  Her husband said they had rigged up a foam box and sponge, for travelling. Will give it some thought next time we go away, (Not that that happens very often)

Sorry but don't have time to go through all the pages of chat, but does anyone else have trouble with the search section. I have just spent 10min trying to search for a recipe that i know is there, just to be told that it isn't there, so had to manually go through the section where it would be.  It seems to me, that unless you print the search exactly as it is, capital letters etc it doesn't give you all the options there are for it. Am I using this section wrong?

IHave fallen in love with the taste of homemade icecream (as has DH) in the TMX am now wondering whether it is worth spending the money to also buy a good icecream maker. Anyone out there have one and use it reg comp to using the TMX way?

Wow what a response. Thanks to you all who looked at my post.  Nicola your version the Vinod, looks really nice, and more like the thermoserver. The one I trialed looked more like the picture that Cornish cream posted, that was from the UK. My test results, were:  at 6.10pm I boiled the kettle with 2L water and put 1L into each pot and used a jam making thermometer to test the temp of the water. The thermoserver read 90deg and the Indian pot 89deg. At 8.00pm  the thermoserver 54deg, the Indian 68deg. At 9.25pm  thermoserver 40 deg and Indian 54deg. I had to make a visit to the toilet at 1am. so thought I would do a test then and the thermoserver 28deg and the Indian 40 deg. I took the thermometer back to 0 in between testing each pot  by plunging it into cold water, to make sure each started at the same point.   The Indian pot certainly retained the heat for longer.
Then the next day I did a test for the cold. At 5.35 pm  I made a batch of fruity dream from the ED cook book and put 1/2 in each pot, and tested both at 6.35pm and 7.40pm  these were tested by taste and not thermometer, and by 7.40pm the batch in the Indian pot certainly tasted cooler than the batch in the thermoserver. Although they had both retained their shape. 
I just thought if doing a dinner party I may need more than one thermoserver, and there are only so many demos you can host to  get an extra thermoserver. Hope this maybe of help to you. Yes I think most indian grocery stores would sell these pots. Cheers.

Herbal posted a question in june 2010 requesting where to buy something like a thermoserver, and very happy jan suggested to try an indian grocery shop. Wanting to find something similar myself, I went into one today and they sell an insulated casserole which I have just purchased for $18.00. The sales man said it would keep food hot for may hours, so i,  am currently doing a temp/length of time hot trial between it and the thermoserver. Will let you know how it went.

Found this combination in the chit chat section posted by thermomixer,but being new to this forum but wasn't able to get to recipie. As I love chicken livers in place of lambs liver eg lambs fry,  this took my attention.  How can I find this recipie. Cheers.

Chit Chat / veg stock concentrate

Have now got my TM and haven't stopped trying out recipes, what a fantastic machine. Thought I would be clever and make double quantity of veg stock concentrate and freeze 1 tab spoon portions in ice cube trays, but after 2 days in freezer it's still not frozen, would that be due to the high salt concentration in it? maybe not so clever after all   :'(

Have just got the call that my TM is arriving on Sunday, I have spent the last week since ordering it looking through the forum (which has blown me away how you all help one another)  and have so may recipes that I want to try, I don't know how I am going to fit them all in.
