Chit Chat / Its been awhile

Hi everyone, it's been a couple of years since I joined this page and I used to read it regularly, then for some reason stopped coming on here. 
I have since sold my TM31 and updated to a TM6. I also retired 12 months ago and am enjoying life at home. I have been a bit hit and miss using my TMX but have started getting back into it, and then remembered this site, and how I used to enjoy reading the comments from everyone, and recipe reviews. So I'm looking forward to trying some more recipes from here, even though I notice they are more for TM31 & TM5.

Hi all, it's been awhile, but I'm on the hunt for a peach wine recipe. I have been given a whole load of peaches, and thought among  other things I might give making peach wine a go.  I know there are a few people on this site that make there own "drinks" and was wondering if any of them have tried this and have a recipe they are happy to share,  ;) :P

Hi I have been given a whole pile of tomatoes,  some red, some green, the green I think are just under ripe ones.  I've just finished making tomato relish with the red ones, now need to find what to do with the green ones. Does anyone have a good recipe? Cheers.

Chit Chat / Rice cooker/slow cooker combo

Hi all.  :)  My son and his wife need a new rice cooker and were also thinking of getting a slow cooker, with his wife going back to work shortly. I told him I have read some posts somewhere here about people who seem to have a rice cooker/slow cooker combo.  Can those of you who have them and use them regularly, and have any helpful comments (good or bad)  on your types of machines let me know. Seafood and Fish / Seafood Risotto

I made this tonight, adapted from a Weight Watchers recipe, to do in the TMX. It was really nice. I haven't posted a recipe before so hope I do everything right.
For any weight watcher it has 9 pro points value per serve and serves 6
o. oil
200 g scallops
600g green prawns shelled
150g squid rings
250g ling fillet (or other firm fist) cut into 3cm pieces
1 med onion cut into 1/4
2 cloves garlic
1 1/2 c Arborio rice  dry
1/2 c white wine
3 veg stock cubes into 3 cups boiling water
400g tin canned tomato in juice
1/2 cup fresh flat leaf parsley.
Gently fry seafood in non stick frypan and put into thermo-server when cooked ( I guess you could steam this in varoma whilst risotto is cooking but I liked the taste of gently frying)
Into  *: put onion, garlic and parsley chop 2-3 sec on speed 6-7
Add 1/2 tbsp. o.oil and sauté 2min 100c speed 1 with mc off
Insert butterfly, add rice and wine into TM bowl and sauté 2min 100c  :-:   ^^
Add stock, tomatoes and cook 16-17 min on 100c  :-:   ^^
Season with salt and pepper and put into thermo-server with seafood and allow to rest of at least 5 min before serving.

Bread / Using up your whey

I made some ricotta the other day using skim milk and ended up with two wine bottles of whey.  What to do with it? (the whey)  I had to make some bread today, and still had some Laucke Barossa Sourdough Rye bread mix to use up, so I made a loaf of that and replaced the water with the whey, ended up with a great loaf of bread.  Previous attempts to make this bread using water, in my bread maker have failed miserably, so decided to make it today following  Isi's very normal bread method (which I usually do when making bread in the TMX) and happy days, a great loaf of bread :). Sorry unable to post pics, not that good at that just now. Any other suggestions on what to do with the whey?  :-\

Wow how many entries there are, I have been away for a while, we have finally moved into our new house and then I had a total right knee replacement, so have not been on the forum for a bit.  It's going to take me ages to catch up with all the news. Ah well lots to look forward to.

I have purchased a few non stick roasting pans lately, and the Teflon comes off after a short time, (and I really don't do that much roasting) so I have decided I need to buy a better quality one. I am looking for your advice as to what you use and how you find their performance.

This whole forum is just amazing.  I can't keep  up with all the posts in the different places. Just trying to catch up on the Anything goes for Uni postings is taking me ages.  I have spent the last 4 days after all the other jobs I have to do, trying to catch up and still I am only up to page 76!!!!

I made focaccia dough (for the first time) out of the EDC book on the week end to use as a pizza base as my DH loves the pan fried pizza. The dough was so soft that it was impossible to roll or even  spread the tom paste on  top. Is focaccia dough usually this soft or have I done something wrong. Just thought I'd check before playing with the ingredients. The end product was ok but not quite like the pan fried pizzas.

I am trying to make a buttercream for a cake my mum used to make called frankfurter kranz, (german) and the buttercream was made by beating together unsalted butter (beated to light and fluffy) and cold custard (both need to be at room temp. But my butter has separated from the custard and I have a curdled mess in the mixer bowl. Can anyone help with this as I need to decorate the cake tomorrow pref with this curdled mess if I can. HELP

I lost mum on boxing day and now dad has passed away  Tuesday. He just couldn't cope with loosing mum. There was no life without her for him.
