Drunken Chicken from White Cooked Chicken

Drunken Chicken - version 2 - based on Cheong Liew's recipe.

OK, this is a second method of producing a Drunken Chicken style dish:


Ingredients:

1 white cooked chicken, as described HERE

Marinade:
2cm fresh ginger
1 spring onion
1 Tbsp sugar
1/2 cup chicken stock
1 Tbsp gin
1 Tbsp sake (or sherry)
1 teaspoon sesame oil
1 teaspoon fish sauce

Preparation:

Put the ginger into the TM bowl and chop for 10 seconds on speed 7.  Scrape down sides add the spring onion and sugar and chop for 15 seconds at speed 7.  Add the chicken stock and mix for 30 seconds on speed 4.

Add remaining marinade ingredients to the TM bowl and mix for 30 seconds on speed 4.

Strain marinade into a bowl.

Chop chicken into serving pieces and pour marinade over and leave for 30 minutes before serving.
