Vegetarian / Smoky Lentil Goulash

Name of Recipe: Smoky Lentil Goulash

Number of People:4

Ingredients:
2 cloves garlic
1 onion peeled & quartered
splash of oil
2 carrots chopped
1 tbsp balsamic vinegar
1 tsp sugar
1/2 tsp liquid smoke
1 tbsp vegetable stock concentrate
1 400g can whole tomatoes
semi-dried tomatoes, maybe about 10 pieces
1 tbsp sweet paprika powder
a few strips of lemon rind
pepper to taste
1 tbsp mixed herbs
1/2 tsp mixed spice
small head broccoli cut in florets
1 cup frozen beans
1 400g can lentils, rinsed & drained
handful of baby spinach

Preparation:
Chop garlic & onion 3 seconds on sp 5
Add dash of oil and saute for 3 minutes at Varoma temp on sp 1
Chop carrots 3 seconds on sp 5
Add vinegar, sugar, stock, liquid smoke, tomatoes, herbs & spices and cook 15 minutes 100oC on Reverse + speed soft
Add broccoli & continue to cook further 10 minutes or until softened to taste, throw in the beans at some point.
Add lentils & baby spinach, stir to combine and serve with rice.

Tips/Hints:
I started off making EDC Hungarian Goulash, but didn't have many of the ingredients, so this what I had in the pantry/fridge thrown in.  I didn't measure all of the flavourings, just a splash here and a shake there, so you will make to suit your tastes.  I hope you enjoy my simple, economical, healthy, kids say it delicious, version of goulash and make it your own.
PS I've never tasted a real goulash so apologies if you're Hungarian ;)

Condiments and Sauces / Potato salad dressing

Name of Recipe: Potato salad dressing - from Ina Garten's Barefoot Contessa at Home
Ingredients:
1/2 cup fresh dill (10g)
1/2 cup (1 stalk) celery (50g)
1/2 cup (1 small) red onion (30g)
1 cup good mayonnaise (180g)
1/4 cup white wine, milk or buttermilk (45g)
2 tbsp dijon mustard (30g)
2 tbsp grain mustard (30g)
1 tsp salt
1tsp pepper

Preparation:
Chop 1st 3 ingredients 4 seconds on speed 5.
Scrape down sides and add remaining ingredients & blend 5 seconds on speed 2.
Pour over your cooked potatoes & combine.

Tips/Hints:
Makes more than enough dressing for 1.4 kgs (3 pounds) of potatoes.  You can add most to cooked potatoes, and sometimes the potatoes will soak up the dressing after a few hours in the fridge, so add the remainder.  
Sounds like a lot of dill if you're not used to dill, but it's really delicious and has been a consistent hit at gatherings.

Soups / Roasted Pumpkin Seeds - a diversion whilst making pumpkin soup

A non-TMX diversion whilst your pumpkin soup is cooking.  From Stephanie Alexander's Kitchen Garden Companion.

Name of Recipe: Roasted Pumpkin Seeds
Ingredients: A chunk of pumpkin


Preparation:
Gouge out pulp & seeds from pumpkin.  Tease seeds away from the pulp and drop seeds in a small saucepan.  Preheat oven to 180oC.  Cover seeds with cold water, bring to boil then simmer for 10 mins.  Drain seeds & dry on a tea towel.  Put a little oil in a bowl and mix the seeds in the oil.  Spread seeds on a tray & bake for 15-20 mins.

You can add salt or your favourite spice mix* to the roasted seeds, mix & cool.  Eat!  Or leave plain for other recipes.

* eg 2 tsp coriander seeds, 1/2 tsp cumin seeds, 1 tsp sea salt.  Dry roast & grind in TMX.

Recipe Requests / Samosa help

Does anyone have a fail safe samosa pastry recipe?  I'm a brand new user, I've also never made samosas before but my son is pestering me.  I tried the recipe in Stephanie Alexander's Kitchen Garden Companion but the dough was so runny, I don't know what the normal consistency should be.  If any good Indian cooks out there I'd love to hear from you.  Thank you.
