Soups / Melon Soup

Name of Recipe: Melon Soup
Number of People: 6
Ingredients:

1kg melon
50gr bread crumbs
100gr fresh cream
0,5 L sparkling water

Preparation:

Pip the melon and add the pulp into the bowl. Add the rest of the ingredients and blend for 2 minutes, speed 9. Place in fridge for a few hours.

For a little extra, add finely chopped Parma ham into each serving bowl. delicious.  :-* :-*

Vegetarian / Mushroom Stroganoff

Name of Recipe: Mushroom Stroganoff
Number of People: 4-5
Ingredients:

350 gr fresh Mushrooms
120 gr granulated soya
1 can of chopped tomatoes
1 onioin
2 soup spoons of Olive Oil
2 dl coconut milk
1 teaspoon of curry powder
FreshCoriander
Salt and Pepper


Preparation:

Soak the granulated soja in water for 30 mins
Chop the coriander, finely
Add the onion in the bowl and chop for 10 secs, speed 5-7.
Add the olive oil and cook for 6 mins, temp 100, speed 1
Add the chopped fresh mushrooms and cook for 10 mins, temp 100, speed counter clockwise.
Add the curry powder, chopped tomatoes, coconut milk and the soaked soya granules.
Mix well with a spatula and program for 10 mins, 100, counter clockwise.
Add the salt, pepper and coriander, to one's taste.



Tips/Hints:

Serve with parboiled rice and a leafy green salad, seasoned with Balsamic vinegar.

Hally: i have not heard of TVP, sounds like an internet provider

Cuilidh: t is Textured Vegetable Protein, Hally.  Comes in various forms, in this case it is probably the 'mince' version - it is used as 'pretend meat' or meat substitute and made from soya beans.  You have possibly eaten it without knowing.  If you look closely at the ingredients of some foods in the supermarket (meat pies I think are often a case in point) you may see textured vegetable protein, or similar wording, listed, so now you know what you are (or, perhaps, are not) eating.

Bedlam: You could substitute tvp with quorn  mince too

Jude59: I think I might try this but use lentils instead of tvp.  Sounds nice.
