Farro Lentil Soup
Ingredients:
10g parsley leaves
40g onion, quartered
75g celery stalk, roughly chopped
60g carrot, roughly chopped
100g red pepper, roughly chopped
2 cloves of garlic
30g extra virgin olive oil
200g green lentils (to be weighed before rinsing)
1000gr boiling water
2 tsps Thermomix Meat or Vegetable Stock Concentrate
100g farro (spelt)
Preparation:
Chop parsley for 5 seconds on Speed 7 and set aside.
Chop onion, celery stalk, carrot, pepper and cloves of garlic by speeding Up and Down between 2 and 5 with short intervals until they are chopped as you desire.
Add oil and cook for 4 minutes at 100°C on Reverse / Speed 1.
Add rinsed/drained lentils, Thermomix concentrate and boiling water. Cook for 10 minutes at 100°C on Reverse / Speed 1.
Add farro and half of parsley. Cook for 30 minutes at 100°C on Reverse / Speed 1.
Serve into serving bowls, sprinkle with the remaining parsley.

Perfect time to be posting soup recipes as the weather is getting colder and colder. I wish my lot enjoyed soup more though :(
A nice hot soup with some crusty bread, yum yum. :)

Here it starts getting warmer so I will be posting some icecream recipes soon. Do you think your lot would prefer those no matter what the temperature is over there? ;)

You've probably realised by now that I don't have much experience with lentils or freezing, so I just wanted to check :)

I made this tonight! I had to make a few adaptions. I had no red pepper so I just used a bit extra of the other vegies, and I couldn't find farro in Woolworths so I used pearl barley instead.
It is ABSOLUTELY DELICIOUS!! You know JD, I don't think any is going to make it to the freezer... :-))

If farro is spelt I only have wholemeal spelt. Is farro whole spelt?

I guess there is a confusion about what exactly farro is
You can see the farro article in wikipedia (http://en.wikipedia.org/wiki/Farro).
I live in Italy so what farro is to me is what they sell here as farro

Oh, that looks a lot like pearl barley to me... Can someone clarify please? Pearl barley is what I had to substitute for the farro anyway, and it turned out really yum.
I had trouble finding farro because I have only ever seen it rolled for making porridge, so I wasn't sure what I was looking for.

Could I use red lentils in this? I've never cooked with lentils before so have no idea of the differences. On another post someone said to try the Morrocan lentil soup from EDC but I jsut haven't got around to it. It good soup weather in Melbourne at the moment so thought I might give one of these recipes a try and use up the lentils.

Yes, you can use red lentils instead green ones Wonder.
