Conserve is whole fruit jam. As no water is added, an intense flavour results. To make this Conserve I researched many recipes and took from several the ingredients and method that I thought best suited the TMX. This recipe makes about 1 3/4 to 2 cups.
Ingredients
500g. Strawberries, stems removed and washed.
350g sugar
1 dessertspoon of Vanilla. ( I used home made)
Juice of 1 small Lemon.
1/2 green Apple, washed and cored, and cut into 1/4 s.
2 teaspoons of Jam Setta.
Method
COOK WITH CAP OUT
Drop apple on to spinning blades, speed 5 / 5 seconds.
Add all remaining ingredients.
Cook, 25 mins/ temp 100/ speed 1
Increase temp to Varoma / 10 mins / speed 1. ( if boiling up through hole switch back to 100. )
Test for setting on small dish in freezer.
Bottle in sterile jars, screw lids on turn upside down for 10 mins.
Store in a pantry. Once opened store in fridge.
Notes.
The first boil at 100 allows for some evaporation, so that when the temp is increased, it should not boil over. However a lot depends on the amount of water in the fruit.
The addition of green Apple, Lemon Juice and Jamsetta assist in the setting as Strawberry jam is notorious for not setting.

I got a big bag of strawberries for $1.00 today so tried out this recipe.
I used 100g of xylitol and 14 sachets of stevia as sweetener instead of the sugar.
It is beautiful jam, but not setting well, I guess because it has no sugar.
I can't see the 3 jars lasting very long.

It must taste nice if it isn't going to last long! I must keep my eyes out for some strawberries to make jam.

rosie, interesting no sugar recipe. Just keep it in the fridge although if you put it in sterile bottles it will keep on the shelf until opened. if yoru want it stiff, you can stir in a low/no sugar strawberry jelly.

Chookie, I was a bit worried that it seemed so liquidy. The freezer test turned out ok though.
I used raw sugar as I've run out of sugar. Boys love the jam. DS14 wants it for his cereal tomorrow.
Bread is a Hokkaido milk bread, made with tangzhong starter. I'm still experimenting the process with thermie. Seems so hard to get to window pane stage. Haven't found the sweet spot yet. Yesterday I under kneaded and had to manually knead. Today I over kneaded and it almost turned into a puddle ;D
Perhaps it's not meant to be. Will give it a few more goes before lugging out my kitchenAid.

Can't resist $1 strawberry in the market. We used lemon from the backyard and blitz a bit at the end. Yum!

Made a third batch of this today. Didn't realise that I didn't have any more apples so just added a bit more jamsetta and it turned out fine.

Strawberries are cheap and humongous in Perth at the moment. 3 punnets for about $2.80 at Coles. Want to make more conserve but I've run out of jars I had recycled over the years. Now that I try to avoid the nasties I don't buy a lot of bottled stuff. Nice problem to have ;D
Anyone made Chookie's conserve without jamsetta before? Wondering if I could go all natural??

BZB, I also recycle my jars but if you need some in a hurry try your local op shop, out local shop always has heaps.

BZB, you may need to use a whole apple instead of half a the apple as it contains natural pectin.
I'm not an expert on jams... However Tenina's va voom jam doesn't use jam setta, but does use a whole apple.

It didn't matter that the last lot didn't set. It got used mostly as a pouring sauce on waffles.
And it certainly didn't last long enough to go off.
To avoid the issue of it being runny this time I am putting it into recycled Maple Syrup bottles.
Like most of my jams, I just call them icecream syrup and dare anyone to dispute it.

I've used a whole apple to replace any need for jamsetta. Cooked it for 15 mins in the last round at Varoma temp.

This is certainly a great recipe; I have just made it using frozen cherries and everything else the same and it was so good.

I love cherry jam troupie but have never made it as cherries seem so expensive. I have some frozen ones in the freezer so will give this a try. Thanks for the idea.

Got some "2nds" strawberries so I made this. I don't use jamsetta so I used a whole apple (cored) and a largish lemon. Cooked on 100 degrees (added an extra 10 mins). Had to lick the bowl to make sure none of this delicious jam was wasted! Thank you Chookie :)

Chookie, my eldest boy's teacher told me that her daughter loved the jam so much that she asked her mum to buy. Gave a jar to the teacher as Xmas pressie last year 😆😃

Bought some jam berries, but forgot lemons, will go back and make this tomorrow.
Also will try the raspberry one, with plums and buy nectarines I think as not quite enough plums left!

I made two batches of this today. Last batch with remaining strawbs to make tomorrow.
So easy I put it on and went to feed the sheep! Second batch I did the ironing. So easy!
Got plenty for filling cakes now! Cake cheers us up when we need it!

Great jam! I've made 2 lots of this now, the second lot I reduced the sugar to 300g and am more happy with the sweetness for us. Love it Chookie. :)

Julie, I've reduced the sugar to 280g. One whole apple and extra cooking time of 5-10 mins have eliminated the need for jamsetta 😄

Fridge jam!
I small apple peeled,
I mango, 5 plums and last of the strawberries weighed 550 gms
295 sugar plus lemon juice and 1 tsp pectin.
Smells divine!!!!

80c punnets so have a batch of this with a whole pear no jamsetta on the go with a fresh batch of strawberry liqueur started. Still 6 punnets left...

Tips it back into TMX with a bit of water and bring it to the boil. Test on cold plate from freezer. Should wrinkle when you push your finger through it.

I got my hands on some early season strawberries this week so made this, for the first time, yesterday. I used the whole apple, most of the juice of a largish lemon, no jamsetta and a little less sugar (50 / 50 rapadura and white). The cooking time was interrupted, but I would guess that it got an extra 10 minutes at the 100 degree mark. It has turned out beautifully and I am very pleased. Thanks to Chookie for the recipe and to everyone else who posted changes and ideas.

Marina, glad it worked out. Love strawberry jam but it is a real treat with the price of strawberries.
Yesterday I made the Lemon and Carrot Marmalade. Worked out at 50 cents a large jar. I used Meyer lemons and replaced some of the water with lemon juice.

When picking up some milk today saw lots of strawberry punnets for $1 each so thought I would buy some and make this up, I'm not really a jam eater but thought I could give them away at Christmas. It looks good but is still cooling and it fit into 4 jars perfectly so I'll have to hope it tastes good as I'll be giving it all away. I was a little dissapointed that the fruit didn't remain whole.

Don't worry about the taste, Wonder, if I can make it you can too and the taste is great ... I used a little less vanilla as I don't like that flavour to be too dominant. Some of my strawberries went a bit mushy but, for me, that was OK, I wasn't making for gifts, however, I shouldn't think whomever you are giving these to will even notice.

I have just made this using half frozen cherries, that I had in the freezer, and the other half fresh cherries. I licked the bowl, the spatula and the saucer I used to test it. Very yummy.

I've finally made great strawberry jam. Thanks chookie its a brilliant recipe and totally foolproof. I used a whole pink lady Apple and large lemon (no jamsetta) and cooked 10mins longer as per the other girls did. The color is so vibrant and all natural.

I often freeze strawberries when they are cheap and save for this jam; I use the whole apple as well. Best strawberry jam I have made. Also made it with other frozen berries.

Made this yesterday for the first time in preparation for my Christmas hampers. Had a little taste from the bowl and tasted yum , hubby just felt it was a little sour due to the lemon, hope I haven't over done the lemon juice :( Will try it on bread today..
Put them into tiny air tight glass jars but was curious, I am planning to give away the hampers in November, so in around 2 months, will it be okay to keep them at room temperature or do I need to place them in the fridge?

I keep mine in the fridge and it lasts for ages. I'm not sure how long it will last on the shelf though.

I keep in fridge once opened. Unopened in pantry mine lasts well for 2 years.

Thermilover, it should be set when it is cold. Remember that Strawberry Jam is notoriously hard to set.

Chookie, need your expert advice, I havent browsed through the whole post, so apologies if this has already been discussed.. I would like to make this and use a substitute for sugar for my parents who are both diabetic, any suggestions?

Thermilover. If I were making jam , almost sugar free, I would make the berry one with Chai in it. Only problem is that it has a short shelf life.
The problem with, even reduced sugar jam is that at setting point, it is 50% sugar.

Bumping this Chookie as it is the best strawberry jam recipe specially if you need to make room in your fridge for Christmas food . I even made up quantities with nectarines and raspberries the other day , yum .
