Title: Honey & Soy Chicken
Post by: rainbow on May 30, 2011, 05:08:17 am

I have had this recipe in my folder for a while but tried it for the first time last night and it was well liked by the family

Honey & Soy Chicken
by Sandra Cronyn WA

800g Chicken thighs cut into bite size pieces
1cm piece of ginger
1 clove of garlic
140g Soy sauce
130ml water
160g honey
1 teaspoon paprika
30g olive oil
2 heaped tablespoons cornflour

Toasted sesame seeds to garnish

Chop ginger and garlic for 5 sec speed 7.
Add oil and saute 2 mins, 100 deg, speed 1
Add chicken and cook 2 mins, 100 deg, reverse, speed soft.
Add remaining ingredients and cook 15 mins 100deg, reverse speed soft.

Serve on rice sprinkled with toasted sesame seeds

Tweeks

I only used 400g of chicken as only 3 people eating, kept the the sauce same and there was a nice lot of sauce.
I didn't use big heaps tablespoons of cornflour,
I used 2 garlic cloves.

Changes made by other forum members.
Uni used prawns, garlic and ginger.
People have found that there is a lot of sauce. Some froze the extra, others have had it over eggs, rice, pasta.
Judy added frozen vegies to the sauce.
Cookie1 made the sauce in the  *:. Partially cooked the chicken in a frypan and then poured the sauce over. While it finished cooking she did the rice in the thermomix.
Kulsha her comments.I also used 2 cloves of garlic and normal tablespoon of cornflour - but halved the soy sauce, water and honey to reduce the amount of sauce (kept all of the other seasonings the same), I only had a standard woollies type tray of chicken (about 500grams) - these quantities were perfect for 2 of us with some leftovers (we will fight over who will get this for lunch tomorrow) ... I kept the same cooking time - and it turned out perfect, the chicken was tender and there was still more than enough sauce for the rice and vegies. Oh and I sprinkled with a few crushed peanuts as I didn't have any sesame seeds...
Wonder suggested using the sauce as a marinade. Possibly without the cornflour. Said it was lovely as a marinade for grilled chicken.
Amy used Worcestershire sauce and soy. Added steamed peas and corn when it was cooked. She also loved it with Hokkein noodles.
Kimmy added capsicum and carrots halfway through the cooking time.
KazandCo suggested  I put some Singapore noodles in the bottom of the thermoserver then drained the sauce from the chicken, chucked the chicken ontop of the noodles then whacked the temp up to Verona, added a little more cornflour & reduced the sauce for 5 mins. Made it extra yummy! mixed it all together then sprinkled with the seeds. Next time I'll reduce the honey by a smidge.
GreyhoundMum 600 g chicken
1/2 cup frozen peas added towards the end of cook time
1/2 cup bamboo shoots
And a large handful of raw cashews.
I used slightly less honey about 100 g and a combination of dark soy, light soy and kepap manis (sweet soy)
Oh I also added 1/2 red chilli deseeded at the beginning with the ginger and garlic
Phatasafairy made considerable changes. They can be seen here (http://www.forumthermomix.com/index.php?topic=6371.120).
SuzieG reduced honey and soy, added oyster sauce and Chinese 5 spice instead of paprika.
Kulsha replaced honey with 60g lemon juice for lemon soy chicken.
Kimmy made a half batch of sauce and stirred it through some vegies and hollies noodles.
Cornish Cream reduced the honey to 100g and threw in some snow peas.

This looks nice and easy and good for the budget. Will have this on my menu plan next week. Just looking at doing it now.

Thanks for posting.

There is only 3 of us, did you waste much sauce by halving  the chicken.

We tried it for dinner tonight. Used 2 Chicken Breasts weighing 800g all up. There was sufficient sauce for 3 Breasts that size. The sauce will get used on toast with maybe some eggs over the next day or so.

We will do this one again.

I was happy for it to be saucey Hally but was concerned if I reduced the sauce I wouldn't get the right dish if you see what I mean.  If any one does reduce the sauce to fit a smaller recipe please post.  I am happy for the recipe to be moved if it can be, thanks to all who have tried it.  ;D

Rainbow, this recipe is delicious.  As you can see from the photo, I microwaved some frozen stir fried vegies and added them to the finished dish. I used 600g thigh fillets (defatted weight) but left everything as per the recipe.

I know some people don't like using thigh meat because it takes forever to remove the fat but if you buy organic ones, it takes very little time as there is so much less fat.  Dearer yes but so worth the extra cost when you don't have to spend too much time to prepare them.

I have just printed this one out and added it to the menu plan for next week.

JD do you think some thinly sliced veg could be added in with the chicken? Is there enough sauce to cook them in?
Title: Re: Honey & Soy Chicken
Post by: judydawn on July 04, 2011, 05:55:01 am
Yes Chelsea, plenty of sauce so that would work.
Title: Re: Honey & Soy Chicken
Post by: Yvette on July 04, 2011, 07:56:24 am
Judy I always use chicken thighs and after buying them at many different places I find Woolworths is the best place by far, hardly any fat and no bits of bone.  Some places you buy them are full of fat and bone and you lose so much of the thigh before you start.
Title: Re: Honey & Soy Chicken
Post by: judydawn on July 04, 2011, 04:31:54 pm
Are they just ordinary chicken thighs Yvette not the more expensive organic ones?

Its good to see honesty on here. Not everyone likes the same things. If I try a recipe I don't like I either throw it or tweak it (Depends on how bad it was)
Title: Re: Honey & Soy Chicken
Post by: cookie1 on July 20, 2011, 02:52:38 am
With all the rave reviews I thought we had better try this. I like to use chicken breasts and we don't really like the way they break up in the TMX so I made a few modifications. I cooked the breasts in the non stick, made the sauce in the TMX and then poured it over the partially cooked breasts. While they simmered on low I cooked the rice in the TMX.
We loved it and it received DH's greatest praise-"This would be a good one in the van." I think he has a one track mind at the moment. ;)

I just made this tonight using skinned thigh bits with no bones in it. All the kids loved it.  I think I 'heaped' my tablespoons of corn flour a little too much so I added a little extra water at the end and cooked it for another few minutes - so that is the only changed I'd make.
My fussy 4 year old even gobbled it up! Thanks for the recipe, will now be on our fortnightly menu I think!
cheers Jo and Co   :-*

I was thinking of cooking the sauce from this recipe to reduce it slightly and then once cooled using it as a marinade for chicken thighs to be cooked tomorrow on the BBQ. Has anyone tried using the recipe as a marinade? Do others think this would work?
Title: Re: Honey & Soy Chicken
Post by: DizzyGirl on January 16, 2012, 03:51:46 am
Wonder I can't see why it wouldn't work. I would perhaps leave the cornflour out though. I have never added cornflour to any of my marinades as I prefer it runny to really be able to soak into the meat.

Post by: Wonder on January 16, 2012, 03:58:59 am
Sorry I should have added I won't be inlcuding the cornflour. I thought if I cooked and reduced slightly it might give a better marinade.

... or perhaps rather than reducing by cooking it down, reduce the quantity in recipe and add a dash more soy sauce?  ... I think it would make a lovely marinade, I love the sauce in this dish. Its one of our regulars.

Made this last week, was an absolute hit we had it with rice noodles(well DH did), and for the rest of us I used some left over 2 min noodles in the cupboard.  Yes there was a fair amount of sauce, but that just made our children scrap the plates to finish it off.  ;D ;D

Who's DD was it that says "Yum yum fairy's bum"? I can't remember now but we all shared that sentiment and more for this recipe!

A definite keeper! My DH made it and has noted some tweaks on his paper copy (less water, less cooking time for the chicken) but we all really, really, really enjoyed this meal.

This dish is awesome :)

I've started meal planning again and this fortnight it's all going to be done in the TM, this was the first night.

We had it with rice and steamed vegies and it's all gone :)

We used about 500g chicken as that's what we divide our batches into and it worked well only cause hubby wasn't eating, when we do it next we'll tweak it and use 1kg so there's leftovers for lunch.

Very impressed.

This makes a perfect all-in-one meal! I soaked a 440g packet of thin egg hokkien noodles and added them in the last five minutes of cooking with 1 cup of peas and a small tin of drained corn kernels. I chopped the noodles up a bit before adding them.

I'm new so please bear with me, is it possible to cook the chicken first, then put it in the varoma on some baking paper to keep warm while I steam the rice? I don't have a thermoserver just yet.
Title: Re: Honey & Soy Chicken
Post by: judydawn on August 21, 2012, 03:09:26 am
Good idea Becci but if you have a casserole dish that fits in the varoma that might be less messy.  I don't really think you can overcook chicken thighs and hopefully the sauce won't dry out.  From memory there is plenty of sauce in that recipe though.
You could just sit the casserole dish on the lid (MC off) too, that should keep it warm enough whilst the rice is cooking or you could just reheat it for a short time in the microwave too.  Give it a go though and let us know how it worked out.

How strange about your chicken Becci ???

But its amazing how easy the sauce is, and it tastes so much better than store-bought! ;D

Hi! I made this for tea tonight as anything "honey soy" goes down well! However, I didn't have any thigh fillets, but had some breast fillets that were approaching their use by date. I think that was a big mistake. The chicken ended up shredded, even though I had it on reverse  :( Everyone else's photo's look so nice and appetizing!

If I make it again, I will definitely use thighs. (I normally use thigh fillets for most things these days as I find they often have more flavour...I just happened to buy breast fillets for a change this week)

The sauce was good, but I think I would reduce the soy sauce and maybe the honey a little bit next time. It was a little bit strong and sweet for my kids (which is strange because my daughter always asks to lick the spoon after using golden syrup!)

I absolutely love the suggestion of serving with hoikkin noodles. The photo looks amazing! Enough to make me want to try it again!

Thanks for posting the recipe!

How strange with all this shredded chicken business ??? I never realised there was such a big difference between using thigh or breast! :o

Blackwood, if you make it again and use the hokkein noodles, I wouldn't recommend reducing to sauces too much. There was just enough in my dish to coat the noodles nicely. If you do reduce something, I'd suggest making it up with some other liquid ;)
In saying that, I will probably reduce the honey next time because when mum had it for lunch the next day, she said the honey came through quite strong :-))

Made this last night and it was fantastic. Made sauce in TM and added chopped capsicum and carrots half way through cooking time. Moved all into saucepan to simmer whilst I made rice in TM.  Added prawns (because no chicken in house for first time ever) to simmering sauce and cooked for a few minutes. Delicious and so versatile. Thank you so much this is on our favourites list forever!

Yep, I was thinking that Amy. I think I'll make it again with the noodles, but maybe reduce the soy sauce and honey slightly and replace with stock maybe?

I don't know why my chicken shredded, next time I use chicken breast in the tMX I will cut the pieces larger. (like I said, I'm not used to using the breast, I usually use thigh)

It is really versatile! I think the marinade suggestion is a great one too!

This recipe is very similar to one I made a few weeks back and it was divine just cooked on the stove top. I ripped it out of an old newspaper I had come across. I am making this for dinner tonight so am looking forward to seeing how it comes out in the thermomix.

Okies,it has been made & eaten here.

The verdict is..... It was very delicious!

It had a lot of sauce which I loved as I like to drown my rice with it.

I garnished it with thin slices of spring onion & chilli.

I tried this with prawns tonight. I made half the sauce so it doesn't look real saucy. Next time will chop the tails off the prawns first to make it easier to eat. DH not keen on prawns but I liked it...

I made this tonight as per the recipe (except for breast instead of thighs) and I loved it.  The little girl visiting liked it :), but my children didn't :(.  That is typical, anything that is easy for me is something they don't like.

Oh well back to the drawing board!!

Three like Chilli, roast lamb, pies, roast potatoes , stir fry and fried rice.  And one is a vego who eats rice, pasta,  raw veggies and berry smoothies.  I am going crazy trying to find something that everyone likes at the same time.  Funnily enough they all like cakes and bickkies.  My thermo is getting a good run in the cakes section.

I have this cooking now! I decreased the water, honey & soy by 40 grams each as I didn't have enough soy so hope it's still ok!

Edit!
This was yum! I put some Singapore noodles in the bottom of the thermoserver then drained the sauce from the chicken, chucked the chicken ontop of the noodles then whacked the temp up to Verona, added a little more cornflour & reduced the sauce for 5 mins. Made it extra yummy! mixed it all together then sprinkled with the seeds. Next time I'll reduce the honey by a smidge.

I have been wanting to try this for a while..  I altered it slightly and used
600 g chicken
1/2 cup frozen peas added towards the end of cook time
1/2 cup bamboo shoots
And a large handful of raw cashews.
I used slightly less honey about 100 g and a combination of dark soy, light soy and kepap manis (sweet soy)
Oh I also added 1/2 red chilli deseded at the beginning with the ginger and garlic.
I won't be eating tonight as I am out...I hope they like it 😄

NF, I prefer thighs to breasts in this type of dish but I spend 1/2 hour removing the fat from a packet of thighs - it is worth the effort but is very time consuming. Not all the fat is visible, there is a little pocket of fat that hides beneath the flesh but it is not safe with me around  :-))

I like thighs better too but find the de-fatting fiddly so lately I've been using tenderloins, just cut in half, they work well in this dish.

You are very patient and dedicated Judy - I try to defat the thighs, but get fed up quickly and cant be bothered.  I end up wasting good meat because I chop it off with the fat in frustration.  I would gladly pay more to the butcher (or anyone) who defatted the thighs properly for me.

Hey thats an idea for a home business for you Judy - you could sell defatted chicken thighs and make a fortune  :D :D :D

Good idea Karen if you could get someone to do it - that person wouldn't be me as it is very tiring, back-breaking work.  Even a butcher wouldn't take enough fat off for my liking  ;)

We made this tonight - it was yummy!! We made it with chicken breasts but forgot to reduce the cooking time, so the chicken was a bit overdone, however it was still really tasty and we'll tweak it next time.  I'd also probably add some more cornflour next time as the sauce was very runny.  It will make a great salad dressing tomorrow though!!
