ROFL. How about lots of rocky road, then make a biscuit layer in a slice tin and put marshmallows on it, warm and spread out.
Lots of lovely coffees and chocolates with them in?

OK, I'm going to put my serious face on now and help poor CarolineJ use up some of those marshmallows.

With Easter not far away, perhaps you could keep some (that won't be hard  :D :D) and just dip in chocolate then sprinkle with coconut.

Thanks for the laughs and the recipes  ;D.

I have them because it was a "deal of the day" special a few weeks ago.  24 packets of Pascal marshmallows for $10, and $5.95 postage.  I have given away 7 packets so far, for friends preparing for birthday parties, but so many left ;)

I've converted one of the recipes mentioned above - they are really good.

Chocolate Rice Krispies (bubbles) Treats

60 gms butter or margarine
285 gms marshmallows
60 gms unsweetened chocolate squares (or you can use 1/3 cup unsweetened cocoa)
5 cups Rice bubbles

Melt the marshmallows, butter and chocolate in the THMX on speed 1-2 for 6 mins at 90. Meanwhile, butter a large bowl and add the Rice bubbles. Butter a baking pan, also.
Pour the melted marshmallow mixture over the cereal and stir to coat completely. Press into prepared baking pan. Cut into squares when cool.

These smell a lot like LCMs, hopefully they taste as great.
Cooking is fun again with my TMX!

Hi Caroline :)

After I managed to pull myself back onto my chair ( ;D ;D ;D ;D ;D ) I managed to give your dilemma some serious consideration, and I remembered something I used to do a lot when I had marshmallows I needed to use up. Its quite simple really. When you are cooking a cake, take it out of the oven 5 minutes before the end of its cooking time and cover the top with marshmallows. Put it back in the oven for the last 5 minutes and the marshmallows will melt over the top of your cake! :o
When you take the cake out of the oven after the marshmallows have melted, let them set a little bit and then drizzle melted chocolate over the top ;D

Yum yum :D It works particularly well with chocolate cakes, plain butter cakes or marble cakes. They are the only cakes I've tried it with anyway :) :) :)
