These are healthy and delicious.

Dry Mix
150g plain wholemeal flour
170g plain flour
2 tsp baking powder
1/2 tsp bi-carb soda
1 tsp mixed spice
Wet Mix
150g brown sugar
210g milk
1 egg
35g butter
1 T oil
2 ripe bananas
grated rind one orange
Preheat oven to 180C and line muffin tins with patty pan papers.
Blend dry mix in *: on speed 2 for 10 seconds.
Remove and place in a mixing bowl.
Blend wet mix in *: on speed 3 for 15 - 20 seconds.
Add wet mix to dry mix and incorporate very gently with a spatula.
Spoon into patty pans, almost filling to top (as long as paper is well below the muffin tin hole).
Bake 20 minutes.
Split while warm and serve with butter or ice with orange flavoured (use rind and some of the juice) cream cheese icing.

They look lovely. I have heaps of frozen bananas.

Bananas from the freezer would be perfect for this recipe.
Bananas are so expensive now, but I bought some recently as they were from Carnarvon. I figured if we don't buy them, then the supermarkets won't buy them and I couldn't' bear to see the Carnarvon farmers go through any more heart ache.
Unfortunately, we didn't get around to eating them so I had to use them up.

Have lots of banana, made this for DD's lunch box. Half in muffin and half in muffin top. Yum!
