Title: Coconut Cupcakes

Coconut Cupcakes

Pre-heat oven to 180c.

125g butter
130g S.R. flour
120g raw sugar
70g dessicated coconut
160g coconut milk
2 eggs
1 tsp. vanilla extract

Add chopped butter to jug, and melt for 2 minutes 30 seconds, 60c, speed 2.
Add the rest of the ingredients into jug.
Mix 30 seconds, speed 5.


Place cupcake papers into tin.  
Spoon mix to 3/4 capacity.
Bake 17/18 minutes.
Allow cakes to cool completely before icing.

Makes around 22 regular sized cupcakes.

KarenH -  they were delish!  I used rapadura sugar instead and whilst they were really nice, I think that a white or raw sugar might be better.  But when I made them I only got 12 out of the recipe - did you really get 22 maddy?? Oh and by the way - I didn't ice them as prettily as you.
Made these again the other day - cut out circular piece from the top, filled them with lemon curd - put the top back on and dusted with icing sugar.  DEEEEE - LICIOUS.

I think my cupcake papers must have been a lot smaller than yours......I should really call then patty cases (no one seems to call them that anymore...except for MJ I think  ???).
Many of the cases around I would class as muffin sized cases.

Hi Maddy - I'm going to make these (and ice them) for morning tea at a friend's house on sunday - can I make and ice them tomorrow and the icing still be ok? will I need to refrigerate them?

I do call them patty pans and patty cakes Maddy, but it's getting harder and harder as Americanisms are taking over in our language! Although, I'm told that New Zealanders have always called them cupcakes.

Love your photo and recipe. I'm going to make these tomorrow! My patty cake 'tin' (it's silicone) is large, so I imagine I'll only get about 14 or so.

Meganjane, I grew up in New Zealand and I cannot recall calling these anything but patty cakes, but that may be because it's what my mum and her friends called them, maybe others did call them cup cakes.  I've got to say that it is really only recently, perhaps in the past five years or so, that cup cakes became the more usual name I started hearing them called by and I wondered what had happened to patty cakes.

Cuilidh, I was told about NZ'ers calling them cupcakes by a representative of the Women's Weekly magazine. I wrote to complain about their usage of 'cupcake' instead of patty cake.
She then told me I'd be even more upset by the new book coming out called, 'Cookies'. And, I was!! :-\

I remember you posting a recipe here on the forum MJ saying something along the lines "notice I called them patty cakes and not cup cakes"  ;D good on you for sticking to your guns.

Like cupcakes and patty cakes, my DH has a real thing about calling biscuits "cookies"  - he HATES it  :D

Also only have coconut cream not coconut milk. Is that OK?
