Name of Recipe:Coffee Ice-cream
Number of People:The idea for this recipe came about from my love of Quirky Jo's Raw vegan Chocolate Mousse and my love for all things coffee flavoured.
Ingredients: 150g Raw Cashew
350g Ice cubes
100g Dates (I use dried, but you can use fresh)
2 Tablespoons Instant coffee granules mixed with approx 1-2 tablespoons hot water till dissolved.
15-20g maple syrup (optional, depending on your desire for sweetness)
1. Grind cashews speed 9 for 10 secs
2. Add ice and grind on speed 9 for 20 secs
3. Scrape down bowl then add Dates, Coffee and maple syrup if using. Mix on speed 9 for 30 secs. Scrape down sides and continue mixing
On speed 9 till smooth. I find this takes 1 and 1/2 to 2 mins. Pour into a container and pop in freezer to firm.
It will set hard, good idea to remove from freezer 1/2 hour before eating.
If you love coffee, you will enjoy this
Makes 1.2 litres.

JD - I tasted this at varying stages and just wasn't sure if I liked it or not. During all these tastings I did think it was a great alternative for DF people though. This morning, after it had been in the freezer overnight (didn't set too hard either as my fridge/freezer tends to keep ice-cream at just the right consistency for spooning) it tasted soooo much better so I can now honestly say it is very tasty and I have just enjoyed a dishful. Thanks for sharing with us Katj.
