Title: Plum Paste

After the success i had with Thermomixer's recipe for Quince Paste,  I thought that I would try some with Plums.    Thermomixer suggested that I might need to add some pectin,  so I did.   Excellent result.

750g. plums,  washed and stones removed.
300g. water
400g. sugar
1 packet Jamsetta, 50g.
Juice of 1 lemon


Place plums and water in TMX bowl, cook at Varoma temp for 10 mins speed 5
Add sugar , jamsetta and lemon juice, cook at Varoma temp, 1 hour 10 mins, speed 4.

Cook with basket in place so that if it spits it will not go over your TMX.
Cool for 5 mins.  then pour into an oiled dish.   When cool,  cover and set in fridge.
Cut in squares and wrap in baking paper and then glad wrap.( I vacuum seal mine)
Eat with cheese or reconstitute by heating with a little water, to Jam consistency and use as you would jam.
Makes a great gift.

Yay. I've been lamenting the fact that I couldn't find Quinces to make Thermomixer's Quince paste but I can get plenty of plums. Thanks Chookie   :-* :-* :-*

Great idea Chookie.  I bought some sweet potato paste once - so that is something else we could try  ???

I think Quinces may be a cold climate fruit,  although I know Maggie Beer makes it.

Friend pointed out,  last night,  that the Quince and Plum Paste make excellent centers in Jam Drop Biscuits.   She said she cuts the paste into small cubes,  and it doesn't run every where like jam.

Chookie thanks for that, I make a lot of jam drop biscuits as they are very popular at car club. All the more reason to make the plum paste.
I bought some quinces the other day but I've cooked them up and eaten them. Delicious with Valerie's yoghurt.

Jan,  I have had some for 2 years,  not in he freezer or fridge.  Seems to be fine.

Finally got this made and thanks to a lovely forum member (thanks Chookie) have got it perfect for our taste. I followed the recipe but think my lemon was too big & the paste set like rubber. So after some discussion with Chookie it was back in the TMX with another cup of water & the end result is great. This has a lovely intense flavour & I can't wait to have friends over to try it out with them and to also make some jam drop biscuits.

I know this is an old topic, but thought I'd put my 2c in :)

I made plum paste in the TM for the first time this year just following my nose. I used:
-1kg organic blood plums, halved (skins on)
-400g raw sugar
*puree all (speed 7ish)
*Varoma, speed 2 for 120mins

I poured/scraped it into jars and it has set like a champion.  I probably could have cooked it for a shorter time in retrospect, but the OMG the flavour is intense as you can imagine.  The plums were quite ripe too, and it still set

How do you get the paste out of jars greenie? Isn't paste supposed to be thick enough to cut and serve on a cheese board?

I wanted to make another 'paste' before christmas as I've had lots of good feedback on the Apple and Raspberry Paste (http://www.forumthermomix.com/index.php?topic=11719.0) I made a few weeks ago.  When I saw a case of plums on sale today I knew I had to give Plum Paste a try.

I followed Chookie's recipe exactly.  The bit I tried when I was pouring it into containers was very tasty so can't wait to try it with a bit of cheese once it is set properly. 

The only feedback I have is not to wait too long before you pour it from the Thermomix into a container.  I poured it into individual containers and by the time I got to the third one it was getting quite difficult to get a clean pour - the fourth container is made up of bits and pieces I either poured or scraped from the TMX bowl. 

I'll report back once it is 'set' and ready to eat.  Can't wait....

We have just had some plum paste that I made 2 years ago.  It eas set in small plastic containers.  Although it was firmer than when it was first made,  it was perfectly acceptable.  No one noticed the difference except me.

Chookie, I've been sneaking bits out of my 'odds and ends' container whilst it's been cooling and it is delicious.  It is quite thick already so am interested to see how much more it sets.  I have plenty more plums so I think I will make another batch but maybe next time I will cook it for slightly less time.

Made some more of this today but this time I cooked it for 1hr 7 minutes and only left it for a couple of minutes before pouring into little containers.  Seems to have worked out well again.

Its me again on about the plum paste.
I have made several batches now and just not that happy with the result... too rubbery. I have managed to salvage the situation by putting it back in the tmx and adding water etc, it is not quite as good however as it becomes a little too soft.

My friend is dropping off a bucket of plums tomorrow she wants me to make her some, but Im wondering should I leave the  pectin out? When I made it stove top I left the stones in, as they were too hard to get out, and it set perfectly. I then removed the stones at the end.

I  might add juice of another lemon, to give the extra pectin?
I would appreciate any advice.

Helen,  don't know that I will be of much help.  It is the same as when you make jam.  I think it is a balance between the plum pulp, sugar, water and pectin.  If you want to cook the plums with the pips in , do so and then push the pulp through a strainer.   Each lot of plums will be a bit different.  So you need to adjust the  pectin.  I am still using plum paste I made over 2 years ago,  In fact having some today with some French cheese, so it is worth the effort to get it right.

I too am still using Plum Paste I made two years ago, from memory I didn't use pectin. Won't be making a new batch this year the Lorikeets have stripped every fruit tree before the fruit was ready and I had not got around to covering the trees.  I hope they all got a belly ache.
