Title: Mince Meat Curry
Post by: judydawn on May 16, 2009, 07:21:24 am
Name of Recipe: Mince meat curry
Number of People: 4 serves
Ingredients:
1 onion, quartered
2 cloves garlic
2 carrots, roughly chopped
2 sticks celery, roughly chopped
45g oil
2 teaspoons curry powder (or more to taste)
500g minced beef (or make your own in the TMX)
300g 200g water
1 teaspoon homemade meat stock or a beef stock cube
2 tablespoons tomato paste
l heaped tablespoon fruit chutney
3 teaspoons cornflour

Preparation:
Place onion, garlic, carrots and celery in the bowl.  Chop 3 seconds on speed 5.
Add oil and curry powder & saute 4 minutes/100o/speed 1.
Add minced meat and cook 10 minutes/varoma temperature/reverse/soft speed (or speed 1 if the food isn't moving enough).
Mix the cornflour with a bit of water, add the rest of the water, tomato paste, fruit chutney and meat stock and add to the bowl.
Cook for 15 minutes/100o/reverse/soft speed (or speed 1) with MC on. If you feel as if there is too much liquid in the bowl, leave the MC off to help with the evaporation.

Serve over rice.
Tips/Hints:
You could stretch this meal further by adding any vegies of choice after you add the stock etc and cook until the vegies are done. We don't like hot curries so this is only a mild one - I'm sure the kids wouldn't even know it is in there.

12/4/10 Have reduced the original quantity of water to make it thicker.

Rowyfo - Thanks SO much for this. My 10 yo daughter loved it and she is soooo fussy. And DH said it was good enough to have once a week!  I used pork & veal mince instead of beef and added frozen peas, corn and beans until it was sitting at the 2L mark. Everybody ate it apart from miss 4 but that's normal!

Carrie - I made this tonight, a nice quick easy dinner. Was very yummy too. Thanks for posting it, JD.

tonydav - Very nice. Kids both had seconds and the wife said "it's a keeper". I added zucchini, mushrooms and capsicum as well. Just love how it ends up still textured but tiny so the kids just think it's mince.

maddy - Thanks Judy......kids wolfed your dish down tonight! I also added mushroom, capsicum and used 3 tablespoons of leggos (garlic/herb) pizza sauce, instead of the tomato paste. We had some sauce left so I will freeze it and use it as a topping for whole baked  potatoes.

MJ - This was delicious! Mine was very sloppy, even though I used less water. But, I'll definitely make it again, thanks JD!

chookie - Made JD's curry mince. Thought I had better stick with the recipe, thought there was too much veg but pressed ahead. It was perfect except DH doesn't like carrot so I zapped it on speed 7 for 5 seconds.  Chopped the carrot nicely.
Judy, this is soooo easy and tasty. I made it again today to fill some little round bread rolls. I will cut off the tops, dig out the crumb and fill with the curry mince then heat in the oven. Thanks for making this so easy.

farfallina - I finally made it and it was great. Thank you for the recipe. I am happy I managed to make also chutney, it wouldn't be the same otherwise. For me it should be served with rice. They are just great together. It could be used also as pasta sauce.

Frozzie - thanks JD love this recipe.  Always a hit...have made this recipe several times in the past couple of months and everyone always loves it, even the French and they aren't big fans of spice!

missgrunge - I made this for my first dinner meal in my TMX as a newbie.  It was so easy, quick, nutritious and tasty. I used Branston pickle for the fruit chutney and the finished curry was delish!  I told my son the meal was called "Meat-o-rama" as I don't believe 'Mince Meat Curry' does it justice, and I didn't want to put him off with thoughts of hot spicy curries.  He LOVED it!  Well done and thank you for the recipe.  Meat-o-rama has a secure place in our home now.

nix - Made this but didn't have some ingredients so ad-libbed - it tastes great.  I used chopped dried apricots instead of chutney and added garam masala and chilli flakes for some heat. Also added pumpkin.

dede - This is a hit. Very quick and easy and everyone loved it. My 4 year old asked if I could make it again in the thermomixer thing. Thanks for sharing this.

CarolineW -  made this for my family and it was a big hit - even with suddenly fussy DD1.  It has been requested by all that it gets added as a regular family meal from now on.
I didn't have curry paste to hand, so I just put in various spices I would put in a curry.  The only chutney I could find at that precise moment was mango chutney, so I used that.  My other chutneys came out from their hiding place the next day but I'm a bit afraid to use anything but mango in future, in case I have to face the Wrath Of The Family.
Thanks so much for sharing - this is now a family favourite.

foodiebate - it was a winner with my two fussy children....
Today when I made it, a bit sad .....I heard you could walk away after the timer goes off and not worry that the dish will continue cooking with a tmx.... Well I had to race to an appointment and when I came back the meat is almost mush....no fault of the recipe...just going to remember that it does indeed still cook...

JD -  foodiebate, I wouldn't advise leaving the TMX on and leaving the house.  Yes you can leave it whilst you go off somewhere in the house and do other jobs but once the timer goes off, it really should be turned off as soon as you can get to it.  The continuing movement of the blades would be what has caused it to turn to mush.

johnro - This dish was one of the first meals I did in thermie and has always been tops - did this for dinner tonight with jacket potatoes, sour cream and grated cheese - fed 4 adults and 4 children.

Jamberie - This is great! I had 250g pork mince and 250g beef mince I wanted to use and didn't feel like bolognaise (again).
I made quite a few tweaks based on what I had in the cupboard, thought I'd post the tweaks just in case someone finds it useful.
The biggest tweak I made was to add 200g rice to the bowl after the mince was browned - to minimise dishes! I then added a can of crushed tomatoes and 300g water and 1/2 packet of frozen spinach and cooked the lot for 17mins/reverse/sp1...about 2 minutes from the end I added a cup of peas.
Also, I didn't have any fruit chutney so I added 2tbsp golden syrup and 1 or 2 tbsp of soy sauce.

obbie - Made this with vegies. yummy.

JuliaC83 - Made this and although it is visually unappealing, everyone loved it. Used 500g pork/veal mince. Served with buttery couscous and peas/corn mix!

djinni373 - Made this and it was really good. I did a few things differently and I think I’ll do them again. If my memory is correct this is what I did:
-added an extra carrot
-fried the curry powder with the onion etc
-didn’t have cornflour so put equal amount normal flour in with the mince and fried it
-didn’t have fruit chutney so I sliced 4 or 5? dried apricots and added them instead.
-added a diced large zucchini and added with the water etc
-added a big handful of broccoli floweret pieces and a small handful of sultanas with 10 minutes to go.
Chookies rice for the family (http://www.forumthermomix.com/index.php?topic=9059.0) cooked itself in the thermoserver while this cooked in the thermie. (I always use quality “heart smart” mince which I think has a lower fat content)
Very quick, very easy and tasted good too - just a hint of sweet.
Sorry no pic but it actually looked pretty good too. Next time.

Thanks Rowyfo, it is such a thrill when you read that someone has tried one of your recipes and liked it.  Nice winter dish born out of necessity and lack of meat recipes in any of the TMX books. Cheap too.

Remember Tenina is putting together a meat cookbook - so send any meaty pieces to her (hope it's not too late ;) )

Hi Thermomixer,

You must be in the "know"as I hadn't heard about the meat cookbook.  Unfortunately here in SAust we don't seem to get much info as to what is going on, hence why I'm loving this site!!!

I hope the meat recipe book will be indicative of the types of meat dishes we eat here in Australia not just ones translated from other books from other countries.

Trudy

Blink and you miss it - it was advertised in the Christmas newsletter that went out, but TMX HQ doesn't seem to be as helpful with Tenina (and us) as they could be.

Occasionally you see evidence http://www.forumthermomix.com/index.php?topic=918.msg5090#msg5090 (http://www.forumthermomix.com/index.php?topic=918.msg5090#msg5090)  and this excerpt from the March blog http://thermorecipes.blogspot.com/2009/03/lime-meets-chocolate-head-on.html (http://thermorecipes.blogspot.com/2009/03/lime-meets-chocolate-head-on.html):
SO...as this is late, the next posting will seem early, so don't take too long...make this weekend a Cookie-a-thon and let me know your vote soon! And just to be going on with, for April, I think we will go your VERY BEST 'meat in the Thermomix' recipes! We are trying to collate our meat book now...which to date remains nameless, so any good ideas on that score would be appreciated as well!
Don't be strangers now!

So, get to work and send in recipes to Tenina

HI JUDY I AM MAKING THIS IT SMELLS YUMMY BUT WHAT DOES SOFT SPEED WITH THE MC OFF MEAN???????
Title: Re: Mince Meat Curry
Post by: Shayla on August 24, 2009, 11:54:41 am
MC = measuring cup - ie you leave the cup out of the lid so the steam can escape. Soft speed reverse - press the reverse button and turn the speed dial to the Spoon icon - before you get to no 1; this prevents the blades from cutting the meat and vegetables any further. If you used the blades on normal direction you would probably end up with curry soup.. :)

Soft speed is the second spot on the speed dial  ^^ between the  *: and 1.  MC out means - don't put the Measuring Cup (MC) in the hole in the lid - allow steam to escape.

DOH - didn't see that there was a second page !!!!!  Hope she gets it now.

Thanks MJ.  Because of your comments I have revisited this recipe today.  Minced 500g topside steak (didn't do it as finely as shop bought mince), added less water (200g) and added 210g mixture of finely diced zucchini and sliced beans at the same time as the water and other ingredients. These days I think my TMX is a little tired and hardly moves the food on soft speed so I tend to use speed 1 or even 2 at times.  Left the MC on for most of the cooking once the water was added seeing as how I had reduced it and it didn't need to evaporate.  It ended up thick enough for us over rice or with mashed potatoes.

Let me get it first Chookie and I will see what I think of it.  When I first got the TMX I wanted it for main meals more than anything else as I wasn't into making bread, cakes, smoothies, desserts only for special occasions etc etc.  Now, of course I make all of those things but to start with I was very disappointed at the number of main meal recipes plus the fact some didn't work for me.  Once everyone started to convert their favourite main meal recipes I was on easy street and have so many to choose from and many more in my 'waiting to be converted' file.

I received my free meat cookbook today with this recipe in it - thanks Tenina, that was quick.
Recipe is pretty well as it is printed on the forum but I have since tried it with only 200mls stock and found it to be a lot thicker so I'd suggest you start off with 200mls and add the extra if and when needed.

My parsley is dormant right now, so no chermoula.
But we put lemons and spring onions on top and salt and pepper. My consultant did a sweet and sour sauce with vegies. I would have preferred a lemony sauce.

Got the meat book as there was an upside down page in a few of the books, so my consultant is letting me have it cheaply. My only criticism is - no pictures! I love pictures in my recipe books!

Oh yes there is Chelsea, I can take the picture but try as I might I cannot put one on the forum.  I am waiting for Chookie to learn so that she can teach me!  I spent an hour one night trying but had no idea what I was doing and couldn't follow the instructions on the forum and gave up.  Decided to email it to Thermomixer to see if he would do it for me but that isn't fair on him either.

It would have to be really simple Chelsea.  I couldn't follow the directions already on the forum.  All I know how to do at this stage is to take the photo & plug the camera into the computer to bring up the photo. Even then I haven't done it enough to really know what I am doing and am just fluking it at the moment I think.  From there I have been able to email photos to people and save them onto the computer but that is it.  I don't understand all the computer terms so it would have to be so simple for dummies like me. I even went back to that mince curry photo and decided to name it but then everything that was in that particular folder that went into my pictures file on that day, ended up with the title of mince curry and I then couldn't work out how to remove it.   :P :P :P  It's not that important I get it right as most other people have been posting pictures when they do these recipes - all I need is for one of the family to have the time to spend here (without children preferably) to teach me.  It is so hard with them around to concentrate on anything, especially with a 2 year old hanging off your leg wanting your attention and a 5 year old wanting to take you outside to play games too.

For months I had a piece of paper that I had printed off about how to download pics on to this website. It looked very difficult and off putting, especially mentioning stuff about Photobucket.

For dummies like me - ignore Photobucket.

Download your pics from the camera into a file eg. My Pictures
Create another file where you can put all your food photo's eg. Thermomix
When you download your photo's pop them in this file, and you can rename those pics that you want to upload eg. Date Slice
When it comes to downloading, do what you would normally do in this text section here, and then you will see directly under this text box --- Additional Options, click on this. Click on the Browse button where you have the Attach, and by clicking on your files where you have saved the pic (eg. My Pictures, Thermomix, Date Slice) until your desired file name appears.
Then voila! press Post.

Don't wait for someone to help you, just try and do it yourself because it really is easy  ;D

Thanks a lot CP63, have printed it off and will study it when I have time.  Have a busy weekend with DD2's 40th today and Mothers' Day so I need the house to get back to normal before I tackle this. I will let you know how I go.

If you can save your photos from your camera into a file then you are already well on the way JD.  CP's instructions are very good, but I think we could probably break them down a bit more.  Let us know how you go when you have a spare moment.  :)

CP, I have tried to post a picture of my meat pie tonight but when I finally thought I was getting somewhere, I was told the photo was too big.  I can find no way to make it smaller. I think I will give up.

oh...now I encountered that problem, and because I am not good on the computer the only way that I know to downsize it was to email it to myself. (it then asks if you want to make the picture size smaller and you choose 'yes') Then save it with a name in the file where you are putting it. Then that will be the photo that you Browse for. (There is probably a simpler way, but thats how I got around that).

I think there is probably a very easy way, but this is what I do.

I open the folder where the photo is currently saved (can even be your camera folder).
I right click on the photo and a menu appears.
I click on the "open with" option.
I then click on the "paint" option and it will open in the paint program (don't worry if it is huge).
I then click on the "image" menu at the top.
I click on the stretch and skew option in the image menu.
In stretch and skew I change the stretch settings to 25% and 25% (and leave the other settings).
I then click on the file menu and click on the "save as" option.
I type a new name for my smaller sized photo.
I find the folder where I want to save my resized photo in the drop down menu (I use "my pictures" folder)
I click on save and then close the paint program.
The smaller sized photo will be saved in the folder I selected and will open in almost every application (not just paint).

It sounds complicated but that's just because I have put in all of the steps (I hope). Hope this helps. :)

You are not going to believe this guys BUT I DID IT  :o :o :o :o  Thanks so much CP63 & Chelsea .  Check out my picture (in the review section) of my potato topped meat pie.

Chelsea I got down to 'I type a new name for my smaller sized photo' and got lost from there because I couldn't see anywhere to follow the instructions so, knowing that I had probably successfully succeeded in resizing it, I then reverted to what I had been trying to do with CP63's instructions (knew from that part off the top of my head as I had tried it so many times) and voila, there it was.

You should have seen the excitement and I can't get the smile off my face.  Hopefully it will work again next time I try to post something.  Love you guys  :-* :-* :-* :-*

DH has just come to the computer to see what all the excitement was about and he was really pleased for me. I will have to start taking photos of everything now, never used to bother much as I knew I couldn't put them on anyway.  I have a few of rolls, bagels etc but we have all seen how good they look from others so no need to show mine at this stage.   I have the perfect setting for taking photos which is under the skylight in the dining area of the kitchen and as we normally have the main meal for lunch in this house, lighting is not going to be a problem and I can have a photo taken in no time at all.  Good thing I asked the girls to buy DH a digital camera last year for his 60th  :-)) :-)) :-)) ;D ;D ;D

I was just thinking about when I first learnt to reduce photo sizes JD.  It was the day we united with our beautiful son in Ethiopia and I desperately wanted to email a photo to my parents while our little man was having a nap.  Internet was a bit tricky during that stay in Ethiopia and it cut out every two or three minutes and had to be reconnected.  I had to learn how to reduce the size of the photo so that it was tiny enough to attach and send in a two minute timeframe.  My parents didn't get any writing with that email but the precious photo of their first grandchild sure made up for it!  :)

You did so well to manage that Chelsea and your parents would have been thrilled to receive it too. Just how you managed to work it out though is beyond me.  The things you had me clicking on, I had no idea what they were or no idea why I was doing what you instructed until I got down to reducing percentages and it all started to look a bit clearer then.  I hope others will now try posting their photos if they have been in the same boat as me.  Chookie, where are you  ;D ;D ;D

This recipe sounds so tasty JD!  No wonder everyone liked it so much  ;)

I had bookmarked it some time ago to make it some day. However when i've watched the ingredients closely today I saw that there is "fruit chutney" which would be a problem for me cos I've never saw any kind of chutney around here. To be honest I don't even know how it is exactly

So I would like to ask if there is something that I can replace chutney with? Or is it at least doable at home?
Title: Re: Mince Meat Curry

I've been through all my TMX recipe books farfallina and can find no recipe for a chutney that I would use (there are some in the Indian cookbook but I wouldn't use these here). I know I did put this recipe up for a competition once when they wanted recipes using honey and I did substitute the chutney with honey and it worked.  Chutney is a relish made from fruits, spices and herbs and even though it did originate from India, our fruit chutneys would be a lot milder than the Indian ones I would think.   You could also use cranberry sauce or maybe some apricot jam.  Anyone out there got a recipe for an easy chutney to help us out here. Thermomixer, any ideas for a substitute here.

You really are so kind to go through all your books JD! Thanks a lot!  :-*

Since you say that you once substituted chutney with honey and it worked, i guess i will use honey as well unless you find out/remember a better substitute

I will have one more question
I didn't read salt among the ingredients. You don't use any? ???

I want to make this for this evening :)

Was laying in bed at 1am this morning thinking of what I had said here farfallina and remembered it was my tuna curry that I had used the honey in and not the beef mince curry! Can't see why it wouldn't work in this one although I think I would prefer to opt for cranberry sauce or a bit of jam in this instance. S & P may be added to your taste but there is enough salt in the ingredients of fruit chutney, tomato paste and my homemade beef stock concentrate to not warrant using anymore.  I would certainly leave it until the last moment, do the taste test and see what you think but any addition could make it far too salty.

I haven't made any chutney using my TMX, must do so.

Farfallina it usually has fruit, spices, vinegar, sugar in. Sort of a relish. I have lots of recipes but not converted. Let me know if you're interested.

Thanks Cookie, was very surprised to not find chutney recipes in the books or forum.  I think there is one on the forum but some quick easy ones would be appreciated, especially if converted for the TMX.  I rarely use chutney myself, probably only when I do this curry so it is easier for me to buy a small jar.

This is from : http://www.ukthermomix.com/recshow.php?rec_id=74 (http://www.ukthermomix.com/recshow.php?rec_id=74)

Credit Crunch Chutney
Leonie Harvey invented this recipe to use up the remainder of any autumn apples which may have gone a bit soft and any dried fruit left from making Christmas fare. Save it for your local country show and win a prize! Makes about 4 x 450 g jars.
Ingredients
250 g mixed dried fruit e.g. dates, prunes (both without stones), sultanas, raisins, currants, figs
150 g walnuts (optional)
6 cloves garlic, skins on (see Step 2!)
2 to 5 cm chunk fresh ginger, cut into 1 cm slices
130 g onions, peeled and quartered
500 g cooking or dessert apples, weighed after peeling and coring
2 tsp salt
1 tsp yellow mustard seeds
½ tsp Thermomix garam masala (see note below) or 1 tsp coarsely ground coriander (optional)
½ tsp cayenne and/or 1 tsp sweet paprika (optional)
400 g dark soft brown sugar
400 g brown malt vinegar (value brand is fine)

Method
1. Chop dates at Speed 6 to 9 for a few seconds if using depending on how hard and old they are, tip out and set aside. Mince figs and prunes in the same way or cut into quarters or 6th’s. Tip out and set aside with dates. Chop walnuts coarsely a few seconds/Speed 3 to 4 if using, watching them carefully through the hole in the TM lid so as not to pulverise them. Tip out and set aside with dates.
2. Peel garlic Reverse Blade Direction/Speed 4 for 2 to 6 seconds. Remove garlic and papery skins from the TM bowl. Discard skins.
3. Switch off Reverse Blade Direction, turn to Speed 10, drop garlic and ginger through the hole in the TM lid to mince. Turn down to speed 4½, drop onion through the hole in the TM lid to chop. Scrape down the sides of the TM bowl with the spatula.
4. Soften the onion mix in its own juice 5 minutes/100°C/Speed 1. This is an important step because raw onions put straight into vinegar will toughen.
5. Add the apple quarters and chop roughly a few seconds/Speed 4.
6. Add everything else and cook 10 minutes/100°C/Speed 1.
7. Remove TM Measuring Cup and replace with a piece of folded kitchen roll to absorb the steam and help reduce the chutney. Cook 20 minutes/100°C/Speed 2. Meanwhile prepare jars and lids by scalding with boiling water then put upside down in a warm oven to dry out.
8. Have a look at the mixture. If the dried fruit was old and dry, cook for 10 more minutes/100°C/Speed 2 OR if the fruit was moist and fresher, cook for 10 more minutes/Varoma Temperature/Speed 1 to drive off more liquid to ensure that the chutney is glossy and thick.
9. Optional – if the chutney is too chunky for your taste – this will depend on what fruits you have used – mix at Speed 7 for a few seconds to chop a bit more.
10. Mix everything together well with the TM spatula (scalded in boiling water) to even out the texture as otherwise the mix at the bottom may be thicker and you may find that the first jar you turn out is more liquid than the last. Decant into sterilised jars through a scalded jam funnel, add a wax disc (shiny side down), seal with a vinegar-proof lid and label. Store for a few weeks before using.
Janie's Tip:
Tip: If exhibiting this chutney, make it the season before to allow it to mature.

Tip: For an excellent Garam Masala recipe, see “Fast and Easy Cooking”.

I make a chutney that tastes just like Rosella. I have to make things that taste like the bought ones, or DH won't eat them! I make double quantity as we go through chutney like water. Here's a smaller quantity that would be fine to make in the TMX.

TASTY CHUTNEY

500g apples (or apples and pears)
500g tomatoes
500g onions
150g brown sugar
20g treacle
2 tsp whole pepper
120g sultanas
30g currants
250ml brown malt vinegar
1 1/2 tsp salt
1 1/2 tsp allspice
1 1/2 tsp dry mustard powder
1 1/2 tsp whole cloves

Place everything in TMX bowl and cook on Varoma,  :-: speed 2 - 3 for 1.5 hours. I haven't made it in TMX, so am just guessing!!

Edited to change the quantities. No, I don't cook it in a silo with a large fire underneath it!! :D

Excellent result farfallina, just like Rosella fruit chutney as MJ said.  Thanks MJ for providing us with this great recipe.

Uses for chutney - add a tablespoon to any curry or serve with cold meat or on sandwiches as VHJ suggested.

Chutney chicken recipe - 2 chicken breasts, 2 tblspns chutney, 2 tblspns french mustard, 1/4 cup grated cheddar cheese Mix the mustard with the chutney and cover the chicken breasts.  Place the breasts in a baking dish lined with baking paper, cover with the grated cheese and bake 15-20 minutes at 180o.  This recipe is from 4 Ingredients but has been around long before those books were published - an oldie but a goldie.   I only use 1 tablespoon of mustard and chutney when I make it.

Can one of the moderators please transfer farfallina's chutney conversion to the chutney thread so that others can find it easily in the future.  :-* :-* :-*

Not a mistake! Definitely use 1kg of fruit and half a kilo of onions. I actually make three times that quantity in a big stock pot. It cooks right down and makes three big jars.
It's the 500kgof apples & tomatoes thats got us going!! ;D ;D. You must have a very large pot. Maybe this is to go with the camel recipe I saw somewhere on here !!
Just remembered that the Camel Stew isn't on here but in another school cookbook I have. Something along the lines of: 3 camels, 1 ton salt,1 ton peppers, 500 bushels potatoes & carrots. Serves 3800. If need more serves add 2 rabbits.

I guess the camel stew is a little like the galah casserole.  You place your galahs and vegies into a casserole with a couple of stones. Cook until the stones are tender! :-)) :-))
(galahs are pink and grey cockatoos that live in Australia)

Having grown up in the Aussie bush I still smile at that one. The first time I heard it the end was- When the stones are tender throw away the Galahs & eat the stones as they'll taste better than the Galahs.

Thank you for the recipe  :-* :-*
I am happy I managed to make also chutney, it wouldn't be the same otherwise

For me it should be served with rice. They are just great together
It could be used also as pasta sauce.

I made a quick and light rice. It wasn't so special
I boiled 1800g water in the kettle to make it quick
I then put it in TM Bowl with some salt
I inserted TM basket and then put some rice
I cooked for 5 minutes at Varoma Temperature and 10 more minutes at 100ºC always on Speed 1
I put it in a bowl, added a little EVO and stirred to mix
That's all :)

Did my rice this way today farfallina and was very happy with it.  I thought at first there was going to be far too much water and I did have to remove the MC whilst it was cooking on varoma temp due to the bubbling over but it was OK to put it back in for the rest of the cooking at the 100o. So now with this and Bron's steamed garlic rice, these are the 2 ways I will continue to use.

 :-* :-* :-*

I would like to try this JD  ;)
You don't use any salt or EVO at all?  ???
Title: Re: Mince Meat Curry

I often use salt after the meal is cooked, not before farfallina.  So many things already have salt in them that I prefer to wait and see.  You can use EVO if you like but when this recipe first came to notice many years ago, I never even bought EVO.  It is only since I have matured that I have started using it.  Over there you would use EVO a lot more than we do here and in this recipe, where would you use it? Do your own thing farfallina, just go with your own judgement.

always a hit...have made this recipe several times in the past couple of months and everyone always loves it..even the french and they arent big fans of spice!

also will put it in a notebook im preparing for my parents who will soon have their own thermie and so im putting together a few recipes ive tried and have found so easy for them!

still so many great recipes to discover..somehow i think it will be a while before i get around to translating my own haha !

haha yeah fancy that but as good as french food is (when prepared properly) its very traditional and regionally loyal so dishes get old quick for those of us who have the opportunity to eat them often except of course the patisseries...seriously heaven!  So when you cook something different or with a bit of spice they generally love it as long as its not too hot!  They generally assume its Australian cuisine but I guess in a sense most of the dishes are considering the mix of cultures that create they type of dishes that aussies cook???

anyway im glad it put a smile on your face JD!!

I never thought i would love a machine as much as i do my thermie and even hubby is happy as im cooking even more than i used to and so much variety!  Its all good!

JudyDawn,
I made this for my first dinner meal in my TMX as a newbie.  It was so easy, quick, nutritious and tasty.  I had been a bit slow to get my mince out of the freezer and simply made good use of the time it took to defrost to cook my first-ever batch of rice in the TMX!  Then I did the vegie part and by the time I was up to adding the meat it had defrosted fully. Meat-o-rama has a secure place in our home now  ;)
Best,
Miss G.

Thanks missgrunge, such a high compliment for such a simple, basic recipe.  In my early days of owning the TMX there were so few meat dishes to choose from that I came up with this one - how times have changed, look at all the main meal recipes we have nowadays. The recipe did make it into the MOTM cookbook but was credited to Judy Edwards, consultant from WA and not customer from SA :-)) :-))  I now prefer the stock to be reduced to 200mls though for a thicker curry.

I made this for my family last night and it was a big hit - even with suddenly fussy DD1.  It has been requested by all that it gets added as a regular family meal from now on.

I didn't have curry paste to hand, so I just put in various spices I would put in a curry.  And the only chutney I could find at that precise moment was mango chutney, so I used that.  My other chutneys came out from their hiding place the next day, but I'm a bit afraid to use anything but mango in future, in case I have to face the Wrath Of The Family  :o

Thanks so much for sharing - this is now a family favourite.

;D I wondered if that was Aussie for allotment - but mental block would definitely have been appropriate!!!  :D

Well, not much happened with it last year but we're getting stuck in this year.  DH is preparing the beds for planting, and I'm sowing in the greenhouse now.  In fact, I have a day of greenhouse work ahead of me tomorrow - can't wait.  I've got a few beds covered with plastic to warm up the soil to get a head start on the Spring.

DD2 is now walking, so that could make things pretty interesting on the plot  :-))

Love the garden stake idea!  ;D

We had this again last night, to the family's delight.  We didn't have much rice left in the house, and everyone wanted seconds (it even broke DD2s loss of appetite which had continued for 3 days) so we had a sort of Sloppy Joe in bread for seconds.

Frozzie, DD should be old enough to help you in the vegie patch.  I have planted a few herb gardens with GD and she loves watching them grow, weeding and watering them. We once planted cocktail tomatoes just so that it would give her something to pick and eat.  Get her involved and she may not wreck them  ;)

Love your idea Chookie, do you eat them with a knife and fork or are they served as finger food?

Wow, it must be popular Caroline to have it twice in just a few days.  It never ceases to amaze me how simple, cheap food is so popular.

thats my plan JD..its time to start planting in a couple of weeks, after the last frost as they say over here..but i might start this weekend putting some seeds in the greenhouse with DD and see how she goes..we had cherry tomatoes along with our other tomatoes last year and DD not only ate them green, red or whatever colour but also crushed them, gave them to the dog and had a whole lot of fun lol...lets just say not a whole lot got into the house..im hoping this year if she helps me plant them and water them etc that she will take care of them also..like i said a year older so lets hope!!  We also have a wall of rasperry bushes along the side of hte house that luckily produces alot of raspberries as not onlhy the kids pick and eat them all the time but the dogs have taken to eating htem off the bushes too lol..might have to invest in some kids gardening tools etc so they have their own items and feel its also their gardening!

I have heard so many chefs say that the simplest food is often the best...this dish is a fav of ours too, quick, easy and tasty..i guess as well as having it on its own you could do so many other things with it...might also have to try it in a pasta bake??  :)

Judy,
Made this a couple of weeks ago and it was a winner with my two fussy children....
Today when I made it, a bit sad  :(.....I heard you could walk away after the timer goes off and not worry that the dish will continue cooking with a tmx.... Well I had to race to an apptmnt and when I came back the meat is almost mush....no fault of the recipe...just going to remember that it does indeed still cook...
Title: Re: Mince Meat Curry
Post by: Frozzie on March 18, 2011, 06:04:26 am
Hi foodebate
How long did you leave it for and was it on reverse and what speed.... It shouldn't keep cooking but keep it at a low temp but meat mush could be a result of blade speed???
Title: Re: Mince Meat Curry
Post by: judydawn on March 18, 2011, 06:21:39 am
I'm glad you had a successful version before the disaster one foodebate.  I wouldn't advise leaving the TMX on and leaving the house.  Yes you can leave it whilst you go off somewhere in the house and do other jobs but once the timer goes off, it really should be turned off as soon as you can get to it.  The continuing movement of the blades would be what has caused it to turn to mush.  Hope it was still edible  ;)

JD I have on occasion left mine to go and pick DS up from school (about 5 mins drive away) but usually its still cooking when I leave obviously and it is beeping for max 10 mins before turning it off and it has never hurt the food...think foodebate must have left it for quite a while for it to be mush...

robyn yum for the pototoes..i never got around to doing that..i meant to use this in baked potatoes but never did..will be on hte menu though for this week ..mmmm

This is great!
I had 250g pork mince and 250g beef mince I wanted to use and didn't feel like bolognaise (again).
I made quite a few tweaks based on what I had in the cupboard, thought I'd post the tweaks just in case someone finds it useful.

The biggest tweak I made was to add 200g rice to the bowl after the mince was browned- to minimise dishes! I then added a can of crushed tomatoes and 300g water and 1/2 packet of frozen spinach and cooked the lot for 17mins/reverse/sp1...about 2 minutes from the end I added a cup of peas.

Also, I didn't have any fruit chutney so I added 2tbsp golden syrup and 1or 2 tbsp of soy sauce.

Time is short ATM so the quick and easy recipes reign in this house. Made this last night and it was really good.
Chookies rice for the family cooked itself in the thermoserver while this cooked in the thermie. (I always use quality “heart smart” mince which I think has a lower fat content)
Very quick, very easy and tasted good too-just a hint of sweet.
Sorry no pic but it actually looked pretty good too. Next time ;D

It's an easy recipe to play with Gayle, gosh it's been so long since I made that.  Now that I am a seasoned TMX user I would do exactly what you did ie cook off the curry powder in the first step.  I'll amend the recipe, thanks for bumping it and giving me a chance to re-read it. Would you believe I made this as there was no curried mince recipe around back then, in fact there weren't many recipes at all that suited me.  How times have changed and thank goodness for that.
