Title: Chocolate Shortbread Stars

These cookies looks so festive and taste so fabulous! Now it's twice as fun, and twice as fast now I have converted the recipe to make them in my Thermomix.

Ingredients

250g unsalted  butter, softened

160g  raw sugar

185g plain flour

100g rice flour

25g cocoa powder

125g dark choc bits

2 tablespoons icing sugar, extra

 

How to

1. Mill sugar for 15 seconds on speed 9.
2. Add butter to sugar in TM bowl and chop for 5 seconds  on speed 6.
3. Add half the plain flour, rice flour and cocoa powder and mix for 5 seconds on speed 6.
4. Add the remaining plain flour, rice flour and cocoa and mix for 5 - 8 seconds on speed 6.
5. Remove the mixture from the TM bowl and knead on a floured surface  until smooth. Roll the dough between sheets of baking paper until 1cm thick; refrigerate 30 minutes.
6. Preheat oven to 160 C (140 C fan-forced) .   Line two oven trays with baking paper.
7. Cut 25 x 6.5cm stars from dough. Place 4cm apart on baking trays. Decorate with Choc Bits; 1 Choc Bit in each point of the star.
8. Bake stars 20 minutes; cool on trays. Dust stars with extra sifted icing sugar.

Judy, you work faster than the speed of light! I love the look of yours! I've always loved these cookies, and I love them even more now I can make them in the thermie! Love your work, JD!

The recipe just popped up at the right time TAT.  We've got Katie & her DH coming for afternoon tea tomorrow so I needed something else for that - trouble is no surprises for her as she now knows what to expect but hopefully she hasn't had time to make them herself yet  ;D

Morning Judy. I woke up at my normal time and then remembered I'm on holidays and don't have to go to work, yay! I did get up to start the washing, but now I'm back in bed reading the forum on my phone.

Made these again this year as I remembered how nice they were the first time I made them.  Made difference shapes this year using various Christmas themed cutters.  Just have to dust them before serving to pretty them up a bit more.

Mine neither.  :D  I've have to hide them, but I'm thinking of gifts to bake.

They stay fresh for ages girls, especially stored in a tin.  Biscuits last me a long time as I don't eat many but I do like to have home made bikkies in the house.

They look awesome Judy. Thanks for reminding me to make some. I have been knee deep (slight exaggeration) in Almond Addiction and gingerbread. However, Christmas isn't Christmas without Chocolate Shortbread Stars!  :)

Just bumping this because I'm making them today. The mixture seems rather sticky to me, might have to add a bit more flour. The dough is currently in the fridge before rolling in the hope that it might firm up a bit. The raw mixture tastes good though.

I've made these heaps of times and never add more flour. The mixture is quite sticky though, especially in hot weather! Even the dough is yummy! I'd love to know how you go...

They taste great!!

The mixture did not firm up as much as I would have liked. I used a brand of butter that I have never used before, not sure if that is the reason. The stars did spread quite a lot on the trays, but I have have saved some of the better looking stars to use as a gift for a friend. When they are dusted with icing sugar they will look very festive.

I do miss my shortbread assistant, DD always has cold hands. She moved out this year. Was a bit sad when I realised that we always make shortbread and rum balls together every Christmas.

This warm weather can play havoc with ye olde cookie dough. They do look lovely with a sprinkle of icing sugar though and they taste ah-mazing! Happy holidays! x

I made halve the recipe over the weekend.Did the method a little different.Creamed the butter and sugar as stated but then added all the other ingredients in one go and  :: for 2 minutes.The dough had started to come together by then.
GS had a great time cutting out the dough with my Christmas cookie cutter :D They taste delicious.

No Cookie he didn't try the cookie dough.But he loved the cooked version :D
