Cauliflower and Almond Soup

Cauliflower and Almond Soup



Ingredients:

few saffron threads
1/2 MC (50ml) water
100g almonds - unblanched
1 large onion, peeled and quartered
1 Tbsp vegetable oil
500g cauliflower, cut into chunks
1000g stock, chicken or vegetable
freshly ground nutmeg
salt and pepper
100ml cream


Method:


Place saffron threads into the water and keep aside.

Place almonds into TM bowl and grind for 30 seconds on Speed 9. Remove and set aside.

Place onion into TM bowl and chop for 10 seconds on speed 5. Add oil and sauté for 4 minutes at 90°C on Speed 1.

Add cauliflower to TM bowl and chop for 10 seconds on speed 5.

Add stock, nutmeg, salt and pepper to TM bowl and cook for 15 minutes at 90°C on Speed 1. Add almonds and saffron in water to TM bowl and cook for 10 minutes at 90°C on Speed 2.

Make sure the MC is in place and slowly increase the Speed up to 9 for 30 seconds. Add the cream and blend for 20 seconds on Speed 4.

Transfer to a serving dish and decorate with more cream over the top.

Lellyj - This was great, thanks Thermomixer.  I thought the almonds gave the soup more "substance" than your run of the mill cauliflower soup and I loved the hint of saffron--next time I'd even put a generous pinch, rather than a few threads of it.

tpcgoh - tried this soup... awesome! .. except I didn't have any cream, so I just used cornflour to thickened it to our consistency (which is like batter!  :P).. Mainly so that my 23 month old can scoop it out of her bowl  :)

Tasty - We make this soup quite a lot and really like it. We leave out the cream.

I had a tired looking cauli I wanted to use up tonight so came across this recipe, had all the ingredients and whipped it up in no time.  A lovely thick, creamy soup, delicious, thanks Thermomixer.

Thanks JD - funny thing about this soup.  I adapted it from a 1970s English cookbook (need to check the title) and it is based on a Spanish idea.  At first I thought that I was crazy, but it works (even without saffron)

Since buying the TMX I always have these ingredients on hand so will keep this in mind for next time I have a cauli looking a little tired. Looking forward to more of your recipes Thermomixer.

Does anyone know if the almonds need to be blanched first for this soup?

Thermomixer would have said if they needed to be blanched deedub, so I'd say no to that question.

Thx Judy - I made the cauli & bacon soup yesterday but still have half a cauli left so I'll try this later in the week.

We make this soup quite a lot and really like it. We have never blanched the almonds and we also leave out the cream.

I am on the lookout for new soup recipes at the moment and since Thermomixer's recipes are usually very good, I tried this for dinner tonight. We did not have cream on top and for topping I cooked some prawns and sundried tomatoes in a little olive oil and voila...a yummy delicious filling meal.
