Yes i cover the whole tray, its to ensure the cakes rise evenly, so you dont have a lump in the middle. You want a nice flat surface to decorate it. Also to help make them all the same size.

chookie mentioned that tip to me the other day.....id be worried about the aluminium cooking over food.....????  Is it possible to use anything else or only aluminum foil works?? anybody know?

I 1st cover with baking paper then with foil when i make lasagna, roasts, etc. will try next time i bake cup cakes
i don't need a recipe i'm italian

Thanks to this recipe. I use it almost every week now to make muffins for the family. We're a bit health conscious so I just use 130 grams of raw organic sugar and cacao powder instead of cocoa. I've also tried organic carob powder instead of cocoa and just use 100 grams sugar for it. My kids really love it!

Bimby Chocolate cake made once again for my DS's 5 birthday. I'm making the number 5 cake with a racing track on it for him. Party tomorrow with lots of kids and I'm sure they will love it. Yum yum.

This recipe makes a  fantastic vanilla version.
Obviously omitting the cocoa, and added in 1 Tablespoon vanilla extract.


Yes I did colour them pink & green  :P

Used 2 round sponge tins, baked around 40 minutes, and iced and sandwiched with whipped white chocolate ganache.
Baked them Saturday, and 5 days later, still fresh enough to eat  :o
.........EAT CAKE!

Made another vanilla version today, emptied batter into a jug, and stirred in by hand  1/2 a cup of crushed oreos.
Voila....cookies & cream cupcakes  :)



Kids love these.

It's 2 years now since I first made this cake as a treasure chest for DD1's Birthday.  I am sitting here now trying to work up the nerve to go and have a go at making it into a rollerskate for her rollerskating disco party on Sunday!  Gulp.  :o
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

You can do it Carolyn - have you got a roller skate tin or are you going to wing it?  There are pictures you can copy if you google roller skate cake.

Hi Judy, I'm going to wing it.  I did think about a cake tin but a) I'd have to ship one over from the States and b) they're too small (I need a cake for 17 children plus willing adults)

I haven't decided yet whether to do a standing one, or a laying down flat one similar to one of the pictures in  your link.  The standing up one would have more wow factor, but also more chance of failure factor, plus very hard to slice I imagine.  So I'll probably go for the lying down one.

I also haven't decided how to ice it yet - ie type of icing, colour, and recipe for icing.  As the party is on Sunday I'd better get a move on and make some decisions!

CarolineW I made a rollar skate cake many years ago and was rather pleased with myself. I copied it from the WW children's birthday cake book. I used liquorice and for the icing did that meringue type icing.
May all dairy items in your fridge be of questionable vintage.
