Title: Bimby Chocolate Cake

Hi,
This is a conversion of my favorite chocolate cake. It's lighter than the "Too Easy Chocolate Cake" in Everyday Cookbook, and makes about double the quantity. And just as easy:

Ingredients:
170g Butter (can use room temp, however I've been using it straight from the fridge and it's worked fine)
4 eggs
250g milk
300g self raising flour
370g raw sugar
40g cocoa powder
1 tsp vanilla essence or extract

Method:
Pop it all into the  *: and stir for on speed 6 for 1 minute.
Pour into a pre-prepared tin and bake in the over at 160oC (fan forced oven) or 180oC  for normal oven for 1 hour (or accordingly to the size/shape cake tin you use).

This makes about double the quantity of the standard recipe - so use a larger round, square or slab tin.
Currently I have one in the oven in a slab tin (to cut out butterfly wings for DD's birthday cake) and I it will take about 45mins

TIPS:

Frozzie uses soft brown sugar for a more moist finish to the cake.
Others have used the pureed apple substitute for half of the fat and sugar content with great results.
You could also substitue part of the butter for olive or macadamia oil for a moist finish to the cake as well as posted by another member (sorry I haven't gone through and collected all the names  :-)) )
It freezes well.

LuisaFM -  I just wanted to say this recipe is amazing! I have just made cupcakes I will freeze and ice mid next week for my daughter to take to school for her birthday. I had to make 2 batches because my family kept eating the cakes  as they were- with no icing! They are lovely - moist and light. And with a 1 minute stirring time they were even quicker to make than the packet variety I have sometimes resorted to for convenience!!

jessiesgirl - Thanks for this AWESOME recipe. It was my sweetheart's birthday yesterday, I made this recipe with White Wings GF SR flour and then made a strange sort of ganache topping. It was divine. It's going into my essential recipe collection that's for sure.

Meagan - Made this cake this morning to take to playgroup. I made a cream cheese, honey and cocoa with a little icing sugar for icing and just had a little bit. Yummo.

VHJ - I made cup cakes with this recipe last night and this morning used a butter icing that someone posted somewhere on this forum. Thank you to whoever that was.

125 Butter at room temp
3/4 cup icing sugar
2tbs milk
2tbs cocoa
Put butterfly and all ingredients into bowl.
speed 4. blitz, scrape down and blitz again until smooth.

I can't thank you enough for this recipe. I make it in varying forms ALL THE TIME and it is always a winner. I've made slab, round, square, cupcake, replaced butter & sugar with equivalent apple sauce, mixed through chop chip for double choc,  mini M&M's for rainbow. Iced it with ordinary choc icing, choc ganache, frosting & even dusted it with icing sugar & served it with cream for dessert. For anyone who hasn't tried this recipe it is the easiest & tastiest choc cake ever.

Made this again today but substituted apple sauce for some of the butter & sugar. I had 200 gm of apple sauce so only put in 85 gm of butter & 255 gm sugar. The cake is lovely & moist & being devoured as I type. This is my favourite chocolate cake recipe - it never fails no matter what I do to it. Thanks again ILB

obbie - I just really need to say THANKYOU...this cake is so good. I made this cake yesterday to sell at the kindy cafe. I got amazing comments, it was so good, moist, yummy, I loved it. It will be another all time favourite.

Violin Cuddles - Made this yesterday and it's lovely. I left it in the oven a little too long (forgot to set the timer  Roll Eyes ) so it was a little dry, but definitely keeps better than the EDC version!

cathy79 - It was really nice. Thanks for a fantastic easy recipe.

maddy - made a cookie cake for my Dad's Birthday today. I sandwiched it with a thin layer of chocolate butter cream. I had enough batter left over to make 4 large cupcakes too. The kids assured me it was delish and everyone loved the cake....so Thank-you bimby, your recipe is  a keeper.

I used your recipe to make cupcakes for my Sons Birthday on the weekend.
I piped scooters on them (can't believe I didn't take a photo!), and they turned out great.
The recipe made 24 cupcakes (cases filled to 3/4 level), and I baked them for 25 minutes, at 170oC.
There wasn't 1 left to bring home.

I can't count how many times I've used your recipe!  Love it. The full mix was the perfect amount for the two sections of a giant donut cake.

This recipe makes a  fantastic vanilla version. Obviously omitting the cocoa and added in 1 Tablespoon vanilla extract. Used 2 round sponge tins, baked around 40 minutes and iced and sandwiched with whipped white chocolate ganache. 5 days later, still fresh enough to eat.

and once again I've made this, but I grated and melted 100g dark chocolate before adding the rest of the ingredients.....Just because.
 
Rogizoja - Great cake this. I sandwiched mine with fruit spread (UK cookbook) after making lemonade. The slightly bitter marmalady character  of the spread goes really well with the chocolate flavour. An added bonus is that the spread soaks into the cake slightly making it nice and gooey. Next one I make will have a bit of chilli powder in it!

RoxyS - It is definitely a winner. Doesn't even need icing and keeps well.

Frozzie - yummo..so incredibly quick and actually tastes good and its light..very impressed..never thought that quick and good went together!!

Made this mix tonight but instead of cacao I put in three bananas, some mixed spice and a little vanilla....made a loaf cake and a bunch of cupcakes.....yum....will ice tomorrow. Used 250g brown sugar and the rest in raw.

Jules - Just wondering if you used the same amount of gluten free flour as "normal" flour in this recipe?  I know a lot of recipes the quantities need tweaking.

ILB - For DD's birthday cake I did exactly the same and substituted equal amounts of normal flour for GF flour but I think I used the Orgran brand instead.

Carrie - The mix tastes  beautiful, so I bet the cake will too. Thanks for the recipe!  I used it for a Bob the Builder birthday cake.
He loved it. I was quite proud of it too. Thanks again for the recipe, the cake was delicious.

versaceyoyo - I made bimby choc cake with peanut butter frosting.  It was very good!  Great recipe thanks ILB!  

cookie1 - DH wanted a nice chocolate cake for the boss lady where he is doing relief as she is going on LSL. I made this for him and made an icing using leftover mascarpone. They raved about it and he proudly said 'oh this was all made in the TMX, even the icing sugar' He is a very good advertisement.

Nay-nay - This is the BEST ever recipe for a slab cake! Will never order one again!! I covered it in mock cream.

simplyrhonda - Thank you so much for this cake recipe. It was so easy and so delicious.  My 3 year old said it was the best cake she's ever tasted. I was wondering if it could be altered to be a vanilla cake.

CC - Finally tried this cake today after a friend brought back from the U.S, as a present, the "cookie" cake tins that I saw that Maddy had used in previous post.Turned out great and what a delicious cake it is. Different from my chocolate fudge cake but very yummy. My DH had a huge slice and enjoyed every crumb. Wonderful recipe ILB, many thanks.
Made again - The cake mixture fitted beautifully in my new Bundt Cake Tin. It took 50 minutes to cook.

Caroline J - Made a half measure of this (only had 2 eggs) for DH's birthday cake and it turned out well (I think). Then I waited, and iced it with the icing recipe earlier in this thread.  Anyway, the icing slowly sunk into the cake, and when I served it, it was like a mud cake with no icing!!
What did I do wrong?  I am thinking icing too runny, or cake still too warm, perhaps?

CC - Caroline it sounds as though your cake was still warm when you spread the icing.You can always make a custard and make it into a dessert for the family. Just think of it this way, all great recipes are created by mistakes!!

MJ - Mine rose too much in the middle, but, then again, it was a 6 egg mix! Will stick with the regular size next time. I cut it into three, iced one piece and froze the other two.

I've just made this in a small baking dish and it turned out beautifully, didn't rise in the middle and crack like so many of my cakes do. My tweaks were as follows:;
I use only plain flour, so I added 2 tsp baking powder and 1 tsp bi-carb soda. Also, cut down raw sugar to 280g. Still plenty sweet enough. I had HUGE (67g) eggs, so only used 3. Also, I used the traditional method, creaming butter and sugar, adding eggs etc. just to make sure that it would work out for me!!

My Chocolate Cake was the best I've ever made!! This is now and  forever ILB's Award Winning Chocolate Bimby Cake! I was so thrilled with it that I tried a Vanilla version today, with the same stunning results. I still only used the 3 eggs (even though they were a bit smaller) and replaced the 40g cocoa with 40g custard powder. It's lovely, even better than my Hilight Cake. I'll make a batch of buttercream and ice it tonight. Family will be ecstatic!!
  
tassie bugalugs - I have made this cake 4 times now.  In the last batch I knocked 20g off the butter and added 30g of olive oil.  I found this helped keep the cake a little bit moister.

Jabba - This is a great recipe! I made only half the quantity because I didn't have enough ingredients.  Popped it into a ring pan for about 40 minutes and it was perfect. Thanks for sharing this one!  I think it'll become a regular around here.

al - Thanks so much for this easy and fabulous cake ... was under pressure today to make something for the school fair cake stall tomorrow and this saved me a lot of stress ... a great success!!

joynatalie - Many thanks my family did not really like the EDC choc cake. Made this again, this time I softened and mixed the butter first and it really improved the texture.

Lellyj - Thanks for this recipe.  Made it for a quick birthday cake solution.  Was delicious and easy.

Coops - I used some olive oil to replace some of the butter and some brown sugar to replace some of the raw sugar, I reduced the amount of sugar a bit too. Judging by the taste when I licked the spoon it should be great, thanks for an awesome quick recipe! Does it freeze well, if I cut it up in to individual portions?
  
VHJ - It freezes really well Coops. I cut, wrap & freeze this ready for lunchboxes.

Mum to Four - Bimby this is great - thank you.  I wasn't overly happy with the "original" version that came in the book but this now a favourite and just as easy!

bigTcup - Made this today - it's my new fave recipe...so versatile.  I had 95g of butter already opened, so used that and replaced the rest with olive oil.  Didn't have any milk so used 100g rice/almond milk and 150g coconut milk.  Used 100g less sugar and did half half brown & raw.

Doubled this recipe to make a pirate birthday cake for master 3.  TM wasn't really happy with the doubled mixture - next time only 1.5x .I split the batch in 2 and made one batch vanilla & the other chocolate them marbled them together for the final product.

Coops - this has become a regular for the lunch boxes. I throw in a fresh beet and some water and juice it up before throwing the ingredients for the cake in as normal and it makes the most nicest, fudgiest choc cake ever, and the kids have no clue that there is  beetroot in it!

cgonsalv - Thanks for the recipe.  I had my first baking success using the Thermomix and this recipe, so it was very exciting.  
I tried the beetroot idea because I love really fudgy cakes.  It was good, but I may try the original recipe next time.  
I used a very big square cake tin, and it baked in about 35 minutes.  

MJ - This is still my favourite chocolate cake. I reduce the sugar and use Dairy Soft butter blend (mix of oil and butter), but other than that everything's the same. I've found that Woolies Home Brand Cocoa is the richest and darkest I've found. I also make muffins with this recipe and increase the oven to 175C, cooking them for about 20 minutes. It makes 20 large muffins.

johnro - Like you both, dede and MJ I too made the super quick, easy and decadent Bimby Choc cake today - did 2 actually, 1 batch was muffins and cooked the 2nd in a deep slice pan and cut into squares when iced - gave each batch to 2 different families.

Hally - saw this recipe on cp's list and thought I would give it a go. It's 3 1/2 inches high, wow it's incredible. Never had a cake rise so much.
Just love this cake both ways with either raw sugar or brown sugar and the butter icing JD gave me was superb, I used it on both cakes. Each time I let the cakes bake for just over 1 hour. It is nice warmed up served with vanilla ice-cream.
Made cup cakes from this recipe. I don't make any other kind of chocolate now. For cup cakes I fill to about 2/3 up, then cover the whole tray with foil and bake them like that. It ensures the cakes rise evenly, so you don't have a lump in the middle. You want a nice flat surface to decorate. Also to help make them all the same size.

Wonder - I make this cake most weeks for lunches but find no matter what I do it has a huge dome in the centre and doesn't rise that much around the sides. I've tried everything including lowering/increasing the temp, wrapping the tin in heat strips, a rose nail and I still get the dome,  I made some as cupcakes today and even the have big peaks in the centre. It's still tastes great but I really can't figure out what the problem is. My oven cooks very unevenly (i will never buy Smeg again). Does anyone else have the same problem. I also use an oven thermometer already so tried that.

KerrynN - I made this cake again this afternoon for my DH's birthday. He had to share it with all the Cubs and their dads in my Cub Pack but everyone enjoyed it. One of my Cubs is allergic to dairy so I made it dairy free using home made rice milk (just rice and water) and nuttelex. I frosted it with the icing at http://www.forumthermomix.com/index.php?topic=5997.0 using nuttelex again. I made one and a half times the amount and mixed it for 2 minutes instead of 1 (not sure if this was a great idea though as the cake rose a lot more in the middle and split). It took about 1 hour 20 to bake.

phatassphairy - EPIC FAIL, not the recipe ....omg it is such a yummy recipe ..... DEFINATELY NOT FOR PATTY TINS !!! ... it rose too high and in turn spilled. I have a muffin pan covered in cake and nearly nothing in the patty papers. Going to wrap it up and feed to the neighbour hood ratty rats that hang out with my 3 little pigs ...... I am sure hungry teenage boys will help get the cake off the tins.  I think i will try again later in a slab tin .......

Joanne - I made this chocolate cake tonight, it was so good, thank you for your recipe.  I will be doing this again.  My kids loved it.  I even made it with the chocolate sauce from the EDC and served it with ice-cream.  Yummy.

Lady Ding - Thanks to this recipe. I use it almost every week now to make muffins for the family. We're a bit health conscious so I just use 130 grams of raw organic sugar and cacao powder instead of cocoa. I've also tried organic carob powder instead of cocoa and just use 100 grams sugar for it. My kids really love it!

Bron - the easier the better  ;D  And 45 minutes for a slab was pretty much perfect.

My only problem is that my cakes rise in the middle - not usually a problem only this time I need them flat, and it seems such a same cutting them down  :-))  Oh well.  This one has to turn into some fairy wings...

ILB i'm sure i've read that if you wrap a quite wet (but not dripping) towel around the tin before putting in the oven it should stop that.

i made heaps of buttercream icing the past 2 days, i jsut did it without the butterfly and it was fine. chuck it all in and use speed 4-5, scrape down once or twice

ILB, My Womans Weekly Kids Birthday Cake book has this recipe - 125g butter at room temperature, beat until white as possible, gradually add 3/4 cup icing sugar whisking all the time, then add 2 tablespoons milk gradually, then gradually add another 3/4 cup icing sugar. Mixture should be smooth and easy to spread with a spatula.   Gradually is used a lot in the making of this icing! Sure you can work out how to do it in Jenie.   For chocolate icing, add 2 tablespoons sifted cocoa to the icing sugar.  Icing sugar should be sifted through a fine sieve for best results. They call it Vienna Cream.  I have not made it though so perhaps someone else has.

Put the butter in front of the heater to soften a little - but got distracted with DD's wet bed and when I came back half of it had melted...  :o :o :o :o!!!!
So now have it in the fridge trying to cool down. I usually have a huge stock of butter in the fridge ready to go but this was the last of it.... >:(

Hope you can get it all to come together - I am really feeling the stress you must be under now but you know you can do it ILB.  I take my hat off to you young ones making elaborate cakes for your children, so many people just go out and buy them instead or get Grandma to do it.  The kids get such a kick out of seeing their cake come together though and it is something they will remember for a very long time and love you for it.

Thanks JD. After a freind who worked at a National supermarket bakery told me their "egg mixture" is a pink goo - I stay right away from commercial cakes!

Had planned on the party being at my place if it was good weather (DD and I are in a 2 bedroom town house which while it has a huge backyard, it isn't big enough inside if it rained), but it looked like it was supposed to rain (ain't that a joke!!) and I have been in a course all day today so we opted for the easy option of holding it at an indoor play centre for kids.  I think the cake will be the healthiest option out of all the food offered to them.... ???

Here's the finished product:

Used 1 slab of cake which I diagonally cut and shaped into wings.

I used a double quantity of butter cream icing (thanks Bron and JD - worked a treat!)

Perhaps next time I might soften the butter a bit first before mixing the cake together... it still turned out fine, just a little heavier than previous ones.

Anyway DD was most impressed when she saw her beloved cake this morning and was very excited about the cake bit at her party.  Half way through cutting it up and passing pieces to everyone she jumped off her seat and gave me a huge kiss  :-* and cuddle and thanked me for her cake  :o - it made the late night and only 3 hours of sleep suddenly seem all worthwhile  :)

Happy to report not much cake was left... (also found a positive to having to "trim" the cake... my midnight snack... he he he)

Well done - great job.  Birthday cakes are a big deal !!!

Mrs T gave her daughter the Womens Weekly Kids Birthday Cake book last weekend.  I tried to explain that it is 11 months before the first birthday - but she insisted that her daughter should start planning !!!!!!

Thanks for this wonderful recipe.  My family stir me when they come for dinner as I usually put a lot of effort in making a couple of courses, but never have the time or energy to get a dessert made - I sometimes fit in some date scones, but this cake sounds like something that I could manage without too much effort.  So thanks for the recipe and as I've mentioned in other posts, I just love to see pictures of the recipe so thanks for taking the time to post those too.

This is my posting too, exactly!  :)  I'm so impressed at how creative you are - I don't think I could ever do anything like that.  Birthday cakes a la Caroline just have icing, candles, and some bought decorations on  :-\

They usually turn out disasterous!  For DD's 2nd birthday I had made her a Green Dinasour cake after Dorothy the Dinasour (Wiggles character), thankfully DD knew what it was but no body else did! I had to keep explaining it to them  :-)) :-)) LOL.

For this one I just googled fairy birthday cakes and found the easiest one I could, used a butterfly wing design for a guide (again googled butterfly wing templates) and away I went. Luckily I managed to find fairy hundreds and thousands, some silver balls and mini marshmallows. And a barbie in the middle just made it easier.

There are some truely amazing cake decorators out there! I'm in awe of their skills.

I have to admit that after 18 years of birthday cake decorating when DH decided this year that he wanted to do it for the younger two (which are the only ones getting decorated cakes now thank goodness) I was only too happy to hand over the reigns. Thing is he knows all my tips that I have learnt over the years and did a jolly fantastic job on his first two cakes  :-)) :-)) :-)) But hey at least I didn't have to spend hours doing it  ;D

This makes about double the quantity of the standard recipe - so use a larger round, square or slab tin.
Currently I have one in the oven in a slab tin (to cut out butterfly wings for DD's birthday cake) and I it will take about 45mins

I was completely inspired by the cake you made your daughter, ILB, so I decided I would make one for my daughter.  We're having a traditional 'at home' party with a treasure island theme, so I'm making a treasure chest cake.  I've never made anything other than a normal cake before, and I'm VERY nervous  :-\  Anyway, I'm determined to give it a try.  I want this party to be special, to make up for the last 2 years when I couldn't face her Birthday (grieving a lost baby, grief kept rising up at DD's Birthday, the poor sausage).  Because finally I'm able to be excited for her again, which feels great.

A very long-winded way of saying that I need a mix which will make a 13 x 9 x 2" cake - would this mix do it, or would I need to do extra?  And roughly how long would I cook it for?  Hope you can help - I'm starting to freeze with nerves  :D  I keep repeating the mantra - 'you could always pop to M&S for a cake if it fails, you could always pop to M&S for a cake if it fails' to try and calm myself  ;D ;D

LOL!!! Oh what wonderful news!!! I'm so happy for you  :-* :-*.  Now we want to see a pic of your cake too  ;) ;D :-*

As luck would have it, that's exactly the same size as the tin I used for DD's cake  ;D ;D

From memory, the middle rose to just over 2 inches and the sides may not have been quiet that high. So you may need to just level off the top (I just pressed mine down  :-)) ) So I imagine that it may not affect the result too much if it doesn't quiet reach the 2 inches in total height?  ??? I'm not sure how much more you could increase the mix in the tmx (maybe by 1/4) as it is a large mix in the bowl. Otherwise, half the mix and make a second batch to pour over the top. 

In a tray this size and a single mix it took 45 mins. If you increase the quantitiy perhaps try 1hr but keen an eye on it towards the end.

Oh and another tip - when it comes to icing it, it makes it easier if you actually freeze the cake before icing as it stops it crumbling and getting cake crumbs in the icing. (that's if you leave time to do that however I didn't  :-)))

I made a treasure chest cake for my DS birthday one year and I think it was one of the easiest ones I've tackled.  Will find a pic to give you something to go by with decorations...Did a loaf size cake  for the treasure chest and a larger rectangle cake to sit it on.

Well, the cake is now made (very easy, thanks for posting ILB).  It took a bit more than one lot of mix to fill the tin to the depth I needed for the treasure chest cake.  So tomorrow is D Day for my treasure chest building attempt (gulp)!!!  :o :o :P

I was going to make the yummy fudgy chocolate icing which belongs to the double chocolate cake in the UK book, but I don't want to take any risks that it won't hold its shape enough (when I make it look like wood planks, etc).  So I'm going to be chicken and make some chocolate butter icing instead.  On second thoughts - maybe I should go with the original icing after all, so that I have an excuse when it doesn't look like planks of wood after I've done my fiddling!  ;D ;D

Does anyone already have a butter icing tmx recipe to save me converting, by any chance??  I'm guessing I'd better make a double quantity of it to be on the safe side.  Does that sound right, all you experienced cake decorators out there?

(Repeat mantra after me:  'There's still time to make a normal cake if it doesn't turn out.  There's still time to make a normal cake if it doesn't turn out .....')

Caroline, I made cup cakes with this recipe last night and this morning used a butter icing that someone posted somewhere on this forum. Thank you to whoever that was.

125 Butter at room temp
3/4 cup icing suger
2tbs milk
2tbs cocoa
Put butterfly and all ingredients into bowl.
spd 4. blitz, scrape down and blitz again until smooth.

Thanks, VHJ.  I made a double quantity of this icing today, took a deep breath and went for it.  I'm really chuffed with the finished cake, actually.  I can't believe how well it's turned out.  I mean - it would have been much better if any of you guys had made it, but for an incompetent's first attempt, it really isn't bad.  It's now hidden in the oven, with the oven dials all taped over so that I can't have a Senior Moment and turn it on!!!  :o  DH is going to take a photo of it so that I can post it for you to see.

The party went really well, the kids had a great time and didn't want to leave (has to be a good sign  :D ) and everyone ooohed and ahhhed at the cake, which was nice.  DH took the required photo - but I'm still waiting for it!  One of the kids said it was the best cake she'd ever tasted, by the way, so that was thanks to you ILB, and to you VHJ.

The weather was glorious, so we were able to do everything outside, which was much more fun.  All in all, a really great day - if exhausting!  DH made a brilliant pirate MC-ing the party games I'd put together, complete with inflatable parrot on his shoulder!  ;D

I forgot to review this.  I made it for a school morning tea as I'm on the "baking" roster.  It was really nice.

When I went to pick up the containers from reception, the lady gave me a knowing look and said "so that was your chocolate cake".  Apparently there was leftovers so the staff were finishing it off.  It was like she was putting the two together so she knew who to ask again.

ILB I can't thank you enough for this recipe. I make it in varying forms ALL THE TIME and it is always a winner. I've made slab, round, square,cupcake, replaced butter & sugar with equivalent apple sauce, mixed through chop chip for double choc,  mini M&M's for rainbow. Iced it with ordinary choc icing, choc ganache, frosting & even dusted it with icing sugar & served it with cream for dessert. For anyone who hasn't tried this recipe it is the easiest & tastiest choc cake ever.  :-* :-* :-* :-*

Great cake this. I sandwiched mine with fruit spread (UK cookbook) after making lemonade. The slightly bitter marmalady character  of the spread goes really well with the chocolate flavour. An addedbonus is that the spread soaks into the cake slightly making it nice and gooey. Next one I make will have a bit of chilli powder in it!

After reading all the reactions to this recipe I finally got to try it on Monday. Had folk over not long after it came out of the oven and had a request that it be cut. Was very mean and only gave the person who had requested the piece a piece otherwise there wouldn't have been any left. As it was I came out later to find that DH had also had a piece. He loved it. It is definitely a winner. Doesn't even need icing and keeps well, although half of it is gone already, and I'm sure all of it would be gone if I hadn't done heaps of other baking.

Heres the cake - before todays party.  I made a double batch using substituted GF SR flour. About 20% of the second batch went into the Varden mould and the rest went into a square cake tin.

As it turned out it was too much for the Varden cake, but I needed the extra height for Barbie's legs without amputating them  :o

So the varden cake was placed on top of the square one and were a pretty good fit.

Unfortunatly the icing dropped a bit after decorating it, but I'll fix it up before everyone gets here... hopefully

Actually a couple of mothers were asking questions along the lines of if I'd make cakes for their kids birthdays. LOL. I used to do decorative painting but stopped just before DD was born, so I enjoy the cakes as I can still be a little creative. Not great at it, but passable by DD's standards anyway.  ;)

Fabulous job ILB!

I used your recipe to make cupcakes for my Sons Birthday on the weekend.
I piped scooters on them (can't believe I didn't take a photo!  :-[), and they turned out great.
The recipe made 24 cupcakes (cases filled to 3/4 level), and I baked them for 25 minutes, at 170c.

There wasn't 1 left to bring home  ;)

Thermomixer, another grandchild, congratulations. Making birthday cakes is wonderful as it so easy to cover the errors and the children are usually never aware. Just lots more icing.

ok im adding to the already thousands of replys but thank you ILB..made this cake this afternoon and yummo..so incredibly quick and actually tastes good and its light..very impressed..never thought that quick and good went together!!

as they say in france ..chapeau. (bascially hat off to you, bravo etc etc)

also i noticed your decorating for bday cakes etc..good to see others doing it..most of my friends buy bought decorated cakes..its a tradition in our family to make our own..the kids choose the cake they want and mummy makes it..usually out of hte WW birthday cookbook.always gets lots of wows over here..kids bday parties are usually a pretty basic packet cake, some kind of drink, a bag of lollies to take home and an hour and a half at the bday kids house and thats it..this year im doing a lunch and afternoon with homemade sausage rolls, fairy bread etc etc, lots of games..how i remmeber when i was a kid..!

Yes, I had to make the Number "1" from that book for our grandson - it has lots of names alongside cakes for various birthdays.

For DD's birthday cake I did exactly the same and substituted equal amounts of normal flour for GF flour but I think I used the Orgran brand instead.

We went to a 3rd birthday party on the weekend & it was a bob the builder one. Green slab cake with crushed choch ripple biscuits for dirt in front of a grader & smooth brown icing behind with some little figurines, witches hats etc. Looked fantastic!

I did a similar thing for my eldest son's cake this year.  I made the choc ripple biscuits (from the UK TMX website - chocolate sandwich cake??) and crushed them up for the muddy racetrack.  It looked a treat and was easy to assemble. I found some flashy little racing cars for the cake and they were then part of his birthday present.  Very fun.  :)

My first attempt at a decorative cake - I made bimby choc cake with peanut butter frosting.  it was very good!  great recipe thanks ILB!  And the character of the cake is Anpanman - a Japanese cartoon figure who is actually a cake!

DH wanted a nice chocolate cake for the boss lady where he is doing relief as she is going on LSL. I made this for him and made an icing using leftover mascarpone. They raved about it and he proudly said 'oh this was all made in the TMX, even the icing sugar' He is a very good advertisement.

Thank you so much for this cake recipe. It was so easy and so delicious. Made it on Saturday for a Christmas in July party. Finished it off today. My 3 year old said it was the best cake she's ever tasted  :) I was wondering if it could be altered to be a vanilla cake.

Finally tried this cake today after a friend brought back from the U.S, as a present, the "cookie" cake tins that I saw that Maddy had used in previous post.Turned out great and what a delicious cake it is.Different from my chocolate fudge cake but very yummy.My DH had a huge slice and enjoyed every crumb.Wonderful recipe ILB, many thanks.

Cooking a half measure of this (only had 2 eggs) for DH's birthday cake.  Review later :D

Ok, so I made this cake, and it turned out well (I think).  Then I waited, and iced it with the icing recipe earlier in this thread.  Anyway, the icing slowly sunk into the cake, and when I served it, it was like a mud cake with no icing!!

What did I do wrong?  I am thinking icing too runny, or cake still too warm, perhaps?

Caroline it sounds as though your cake was still warm when you spread the icing.You can always make a custard and make it into a dessert for the family.Just think of it this way, all great recipes are created by mistakes!!

Mine rose too much in the middle, but, then again, it was a 6 egg mix! Will stick with the regular size next time. I cut it into three, iced one piece and froze the other two.

Made this again today but substituted apple sauce for some of the butter & sugar. I had 200gm of apple sauce so only put in 85gm of butter & 255gm sugar. The cake is lovely & moist & being devoured as I type. This is my favourite chocolate cake recipe - it never fails no matter what I do to it. Thanks again ILB  :-*

I have made this cake 4 times now.  In the last batch I knocked 20g off the butter and added 30g of olive oil.  I found this helped keep the cake a little bit moister.

well had my DS 5th bday party today and made the bimby cake as the base in a large slab tin (rectangular not square) to make a football field cake as thats what he wanted and we have a tradition in our family that the kids always get to choose the cake they want (usually out of the WW birthday cake book) then mum has to make it!  So here is this years effort for my DS..DD is next week so alot of cake for us for the next couple of weeks!

Frozzie, that cake looks really wonderful, well done.
My DD always got to choose her cake too, from the same book. One year she chose a rollerskate. I nearly had a fit, but by following the instructions VERY carefully we got there.
You should be very proud of your cake. I wonder what you will have to make next week.

thanks JD, ILB and cookie  :) and JD they do love choosing their own but I love watching them as I did too when I was little and love that they love it too..contining traditions!

next week cookie its the bunny rabbit..my mum made me the same cake when i was 1..DD will be 2!  Photos to follow next week:) lol re the rollerskate cake (i can only imagine)..i generally steer them away from choosing something with a whole lot of detail as they usually choose a couple and we have to narrow it down.  ;D  Im sure as they get older they will get more complicated then later on they probably wont want them at all   :(

Thanks guys and Cornish Cream I think a clock cake and a hedgehog are pretty impressive!  I love doing the bday cakes..last year my DD had a ladybird and my son a turtle! (pics below)  And I often do cakes for the school committee to sell (have attached the easter cupcakes)

forgot to add as well that for the recipe I use brown sugar in the place of 'normal' sugar..i have found it seems a bit moister and tastes even better..already great but doesnt help to try different ingredients now and then...i actually used it the first time as i had no normal sugar and only brown and had already made it a couple of times as per the recipe but from now on i only use the brown sugar..yum and i get 40kgs bags of flour from our local mill that i share with my neighbour (another thermomix owner)...its a blend of different grains T65 i think and i use that for breads, cakes and anything else really and for this recipe i just add a couple of teaspoons of bicarb soda to lighten it up as we dont have self raising over here and the cake flour isnt that great..anyway they are my tweaks i forgot to mention before (not that it needed tweaking just little accidents that we found we preferred in our house  :) )

still want to try other flavour bases with this cake mix..i think it could be so versatile...and a hundred other things when i get 5 mins lol

Thanks for showing us these pictures Frozzie.  The highlight of any child's birthday party has to be the cake and when they get older they will never forget the efforts their dear Mum put into them.  Very happy childhood memories indeed which will hopefully inspire them to do the same for their own children.

ok here is the bunny cake i made for my DD for her second bday today..i was tired and in a hurry but it turned out ok..i also decided to attempt to replace the cocoa by citrus and it tasted quite ok just wasnt what i expected as i used the brown sugar as usual and it turned the cake a light brown kind of like the colour of a spice cake haha you dont notice it at allwith teh chocolate version but plain or other flavours it overpowers it..DH loved it anyway next time ill try the white or raw sugar with the citrus..prepared recipe as is just took out the cocoa and added the zest of a lemon and a lime, 3/4 cup grated dried coconut (additions to be folded in at the end of the mixing time for the rest of the ingredients)..and i added a few tablespoons of lemon juice..i think the brown sugar was a little strong and overpowed a little the zest..anyway will try again some time soon with raw sugar once we get through all this cake and repost if it works out how i want it to!  :) :)

This is a great recipe!

I made only half the quantity because I didn't have enough ingredients.  Popped it into a ring pan for about 40 minutes and it was perfect.

This is a great recipe, Jabba! I think it needs an award, just like Baf64's Creamy Chicken Recipe.

I've just made this in a small baking dish and it turned out beautifully, didn't rise in the middle and crack like so many of my cakes do.

My tweaks were as follows:;

I use only plain flour, so I added 2 tsp baking powder and 1 tsp bi-carb soda. Also, cut down raw sugar to 280g. Still plenty sweet enough. I had HUGE (67g) eggs, so only used 3. Also, I used the traditional method, creaming butter and sugar, adding eggs etc. just to make sure that it would work out for me!!

I was so thrilled with it that I tried a Vanilla version today, with the same stunning results. I still only used the 3 eggs (even though they were a bit smaller) and replaced the 40g cocoa with 40g custard powder.

It's lovely, even better than my Hilight Cake. I'll make a batch of buttercream and ice it tonight. Family will be ecstatic!!

Yep, better than the Hilight Cake!! :o

I think it's the slower temperature that works so well. Each time I've made this it takes EXACTLY 40 minutes at 160c. That's a miracle in itself as I usually find that I have to cook cakes a bit longer than the recipe states.

Inspired by the success of the cake I did last year (thanks ton your advice and encouragement) Ive had another go this year.  Thisbyear she's having a campfire party, and they're cooking their food on a campfire at our allotment, and making a scarecrow.

I,ll ask DH to take a photo.  I melted hard boiled sweets in the oven on a tray, then let the sheet harden, then broke it into shards to use  as flames.  If I had time I would do it again using just red and orange for a deeper colour.  The yellow I used has made it a bit too nothing.  Oh well.

Thanks Robyn......well I just use a good old kodak digital camera......get as close as I can before it's out of focus, and click  :P  I really have no idea about photography, and I usually take a few shots, and hope at least one is clear.
I'm not really sure what you mean about compressing the pictures  :P clueless I am  :D

just to be the downer here, mine's not working :(

i think i made it a few weeks ago and it was great (TBH i cant remember if i did this or the EDC one in the end..)

but today did 2 batches and all failed

first lot fair enough - i poured in too much sugar so adjusted the rest of the ingreds and ended up with almost double the quantity so i thought maybe my calcs were a bit off for proportions..but this one I just made is almost the same, just more completely risen. texture feels almost rubbery rather than light cakelike. most of the butter i used was homemade from cream a  few minutes before, and i used the buttermilk as part of the milk, topping up with full fat (would A2 low fat work??). Just thinking - when making the butter from EDc, stage 2 where you add water then strain again I strained the liquid into the earlier thicker buttermilk - not sure if you're supposed to do that or throw it out as it is pretty watery. Could that be why??

I'm using fan oven so did it 140-145 instead of 160

any thoughts?

I'm practising for my daughters 3rd birthday on australia day - these at least give me a chance to test rolling out icing without eating the lot! But i do want to get it right next time..and the next and the next and the next..

Only keep the first straining - that's the buttermilk. Discard all subsequent strainings - that's just water (with a tiny bit of buttermilk in it). Baking is the one cooking disipline where you need to be precise in your quantities, so take care in your measuring. Happy Birthday to the little one and have fun.

Perhaps you should change the temp in the recipe ILB.  It just says 160 degrees.  Should it be 180 degrees or 160 fan forced??  :)

I use 160fan forced, whether it is in a slice tin or a cake tin, the slice/slab tin takes about 45 mins the cake tin round or square takes just over and hour. I have never used buttermilk only milk. I have never had a flop with is one. Good luck with the trials.

aah, so you are using fan forced and 160? I assumed i needed to adjust down. that could make a big difference..

though i also tried the edc today and very similar results. wondering if it is either the all in one process (ok i forgot with the edc one and started adding other ingreds first before the butter so that ended up all in one too!) or i might need to check my baking powder - it was all fine a few weeks ago but maybe that is the issue?

Might try to cream butter and sugar together first next time (thoughts as to how long/speed appreciated!) and then add the rest - and try the higher temp too..

Got to get this right, 4 cakes down now, none are good enough for the birthday

Congratulations to your DD for making a fabulous cake CP63.I made this cake again but decided to make it into a marble cake.I mixed up all the ingredients without the cocoa first,dumped half the mixture into a Bundt cake tin,then added 20g of cocoa to the rest of the mixture in the TM bowl..Then mixed for a few seconds to incorporate the cocoa and then dumped that on top of the vanilla mixture.I swirled the mixture with a toothpick and baked it for 60minutes.It must be good,DH and DS have eaten half of it already and I only made it yesterday.   :D

ILB, I also make this using the traditional cream butter and sugar first method. The only time it failed was when I doubled the recipe.
If I need a large cake, I make two and join them.

2nd is the stegasaurus cake we had for his party with family - with spinach icing for the green colouring :)

Those birthday cakes are fantastic!
I have this cake in the oven now, I used some olive oil to replace some of the butter and some brown sugar to replace some of the raw sugar, I reduced the amount of sugar a bit too. Judging by the taste when I licked the spoon it should be great, thanks for an awesome quick recipe! Does it freeze well, if I cut it up in to individual portions?

Made this today - it's my new fave recipe...so versatile.  I had 95g of butter already opened, so used that and replaced the rest with olive oil.  Didn't have any milk so used 100g rice/almond milk and 150g coconut milk.  Used 100g less sugar and did half half brown & raw.

Just thought I would pop in here and mention that this has become a regular for the lunch boxes. I throw in a fresh beet and some water and juice it up before throwing the ingredients for the cake in as normal and it makes the most nicest, fudgiest choc cake ever, and the kids have no clue that there is  beetroot in it! mwahahahaha :D

Hehe, thanks! I made this again last night and the kids and DH were asking what my secret ingredient was, I thought DH was just playing along till he says 'it's not that beetroot one you make is it?' oh my gosh! what a dork. I just said, oh no, as IF who would make choc cake with beetroot? That would just be gross lol. Can I just say that using raw cacao instead of cocoa also makes it extra indulgant and yum. I used all oat milk yesterday with it too and it was just as delish.

Thanks for the recipe.  I had my first baking success using the Thermomix and this recipe, so it was very exciting. 
I tried the beetroot idea because I love really fudgy cakes.  It was good, but I may try the original recipe next time. 
I used a very big square cake tin, and it baked in about 35 minutes. 

I would love to know how to convert my favourite cake recipes to Thermomix cake recipes ... Does anyone know if this type of information is posted anywhere.  For example if it says beat eggs and sugar for 3 minutes what would it be in the Thermomix.

This is still my favourite chocolate cake. I reduce the sugar and use Dairy Soft butter blend (mix of oil and butter), but other than that everything's the same.
I've found that Woolies Home Brand Cocoa is the richest and darkest I've found.

I also make muffins with this recipe and increase the oven to 175C, cooking them for about 20 minutes. It makes 20 large muffins.

I use this recipe to make muffins as well. They are always gone pretty quickly. I find Muffins are easier for the lunch box than a slice of cake that gets squished.

Like you both, dede and MJ I too made the super quick, easy and decadent Bimby Choc cake today - did 2 actually, 1 batch was muffins and cooked the 2nd in a deep slice pan and cut into squares when iced - gave each batch to 2 different families.  :)  :)  :)

It's 3 1/2 inches high, wow it's incredible. Never had a cake rise so much.

Any suggestions for icing it or filing it. Hoe it tastes like it looks.

125g butter - room temperature
90g icing sugar
2 tblspns milk
2 tblspns cocoa

Butterfly in, speed 4.  Blitz, scrape down, blitz again.

Thanks guys. My DH birthday is coming up on Tuesday and I am thinking of making him a cake as well. I might tackle making a tractor cake. I will post a photo if it works out ok otherwise you will never see the finished product lol.

Just love this cake both ways with either raw sugar or brown sugar and the butter icing JD gave me was superb, I used it on both cakes. Each time I let  the cakes bake for just ,over 1 hour.

We have some in  the fridge at the moment.

It is nice warmed up served with vanilla  ice-cream.

Yes, it's lovely like that! When I make chocolate muffins, I make a chocolate ganache for the topping and those heated up and served with ice cream are superb!

So glad to see this recipe is still a hit!  :D

I use this to make muffins all the time.  lately I use the a premade GF flour mix to subsitute and it's a very nice cake still. Most people don't notice that it's GF at all.  8)

Doubled this recipe to make a pirate birthday cake for master 3.  TM wasn't really happy with the doubled mixture - next time only 1.5x  :o  I split the batch in 2 and made one batch vanilla & the other chocolate them marbled them together for the final product.

This society is becoming so busy now that people opt for the quick easy way. I must admit that for the last few years I haven't made the birthday cakes either. I re-found my love of cake making since the TM arrived in my life. I am far from an expert when decorating but that really doesn't matter when it comes to kids. They just love having a homemade and decorated cake. Its so much more personal I think.

Absolutely!
I always kept the cake a surprise until the morning of their Birthday.  It was like an extra little present.
Even if it's just toys poked into some icing, it's still fun for them.
Now they are wanting cupcakes or cake pops, more than the cake.    Either way, they appreciate that Mum has made them.

My Mum recently gave me a box containing all the old figurines, cake toppers, ruffled banners that wrapped around the cake, and the original candles since I was a child!  It was great seeing these again, and certainly brought back good memories  8)

Im definately with maddy..cakes are so much better homemade especially for bdays etc...my mum did it for us and I do it for my kids and they love it (think it makes them feel special too)...in a few weeks I will be doing a spiderman cake and spiderman cupcakes for DS then a week later probably a hello kitty cake this year for DD..she is a bit obsessed with hello kitty and princesses lol!  Saying that though I am very lucky to have the time to be able to bake for them..I know mothers that live off fast and easy quick foods either fresh or frozen...(blerk!) and no amount of talking convinces them otherwise!  I think the answer to why bother depends on the person..some find it a hassle to cook anything but I absolutely love the idea and very much enjoy cooking and making and decoratingcakes, cupcakes and the like and oh so much more lol!  Dont do it anywhere near as much as maddy though, the cake decorating queen lol...for me its school stands, birthday parties and for friends now and then!!  :)  Dont know what you do for a job maddy or if your a stay at home mum but you should seriously get into cupcake catering lol!  ;D

oh robyn that is so sad :( such a wonderful mum though to drive through it all to give your daughter some normality on her bday..how strong are you!!...i hope she appreciated the gesture  :)

that is the traditional in our family too..ie no surprises and the kids choose their cake every year and its catching as some of my french girlfrends are doing it for their kids now lol!!..;mum always did it with us and i always do it with the kids..previously it has been out of hte woman weekly bday cookbooks (i havea  few of them..one is as old as me lol) but his year its designs on the internet lol eekkk!  I love every minute of it and for me makes the bday..;great memories!

One would think I have too much spare time re: the cupcake stuff  :P
I am a "Queen of the Castle", until I feel comfortable enough for the kids to come home alone......which probably won't happen, as we live rural, and I am the only mode of transport!  We do have our own business, so my job is the paperwork.
As for the cupcake shop.....I dream of having one some day......I have a killer name picked out for it, it's already decorated in my head......just got to wait for a money tree to grow first though  :P

all do no..alot of us yes..but robyn its still very strong what you did even if what drove you was for your kids...you shouldnt downplay your strength....im sure your alot stronger than you think  :) :)

I make this cKe most weeks for lunches but find no matter what I do it has a huge dome in the centre and doesn't rise that much around the sides. I've tried everything including lowering/increasing the temp, wrapping the tin in heat strips, a rose nail and I still get the dome,  I made some as cupcakes today and even the have big peaks in the centre. It's still tastes great but I really can't figure out what the problem is. My oven cooks very unevenly (i will never buy Smeg again). Does anyone else have the same problem. I also use an oven thermometer already so tried that

Wonder, I don't have this problem--I use a large rectangular tin.  My oven's thermostat is off so I have a thermometer, it's generally much hotter than it says, but if you've already tried this, I am at a loss as to what's wrong.  I hope some one can help you.

DS party went off perfectly...14 kids from lunch to 6pm...lots of fun and games and he liked his cake anyway after my disaster....made the bimby choc cake in a round cake that I had planned to ice blue and put a spîderman icing image (with frozen buttercream on) but disaster the black writing icing stick i had didnt freeze after spending ages putting in all the detail..was devastated.  :'( ....am ordering black dye to use in buttercream to still do what i had planned in a couple of weeks as a surprise for DS...ended up at 2am just drawing with the icing stick a very quick spiderman head outline on the cake..threw sprinkles all over the cupcakes and edges of cake and that had to do..crappiest decorated cake i have made but I was too exhausted to do anything else and DS was happy enough which is all that counts.....lol.... hello kitty cake next week but might do lemon version DD bday on wednesday!

thanks guys and yes it could have been worse JD but Im kind of a perfectionist so even though it turned out OK I was still not happy as it wasnt what I had planned to do but we all make mistakes to learn from them so lesson learnt !!

Robyn sure your right...think most mums have beeen there.....and I didnt die until after all the kids went home and was struggling to stay awake but wanted to get photos up for friends and family etc...early to bed tonight as first day back at school in the morning (beginning of school year here tomorrow)!

THanks maddy...i should have taken a photo of the spiderman drawing outline I was so pleasd with it but after it wouldnt freeze and i couldnt transfer it onto the cake as it was gel like I scrunched it up and threw it out lol

maddy question do you use a basic buttercream or in the miette book I received the other day they had a european buttercream that I had never heard of to be honest (not overly a cake person) that has egg whites and a hot syrup that is mixed until cool??? Would be interested to know if you have tried it or not and what you use for buttercream recipe?  :)

Frozzie,  I was reading yesterday  and it was either Rodney Dunn or Dan Lepard,  and he said to cover the tin with foil for the first 1/2 hour,  to stop it peeking in the center.   Haven't tried it, so don't know if it works,  but both are excellent cooks.

Love your cake and feel for you trying to get it just right.

Well to be honest, all I have been using lately is the TM vanilla frosting recipe.....love it!  I really don't like that strong butter taste in traditional buttercream.
I have yet to try the Miette version, looks interesting.....will make that my mission shortly  ;)......and how gorgeous is that book!

maddy that book is gorgeous and love the fact that they give their different base recipes etc especially that buttercream sounds interesting ...kids back to school tomorrow so will have so much more time to cook and play!  I also got another one called 100 different decorating ideas or something like that..will have to post photos...but that miette book even the edging on the paper...so adorable  :)

I made this cake again this afternoon for my DH's birthday. He had to share it with all the Cubs and their dads in my Cub Pack but everyone enjoyed it.

One of my Cubs is allergic to dairy so I made it dairy free using home made rice milk (just rice and water) and nuttelex. I frosted it with the icing at http://www.forumthermomix.com/index.php?topic=5997.0 using nuttelex again. I made one and a half times the amount and mixed it for 2 minutes instead of 1 (not sure if this was a great idea though as the cake rose a lot more in the middle and split). It took about 1 hour 20 to bake.

lol, I have done the same with this recipe with the cupcakes and the cake tin. I usually use the one batch to make a 20cm round cake tin cake and use the rest as muffins but only 1/2 to 3/4 fill the cupcake papers.

Hi,  I made this chocolate cake tonight, it was so good, thank you for your recipe.  I will be doing this again.  My kids loved it.  I even made it with the chocolate sauce from the EDC and served it with icecream.  Yummy.

The cup cakes i made which i decorated, they were made from this recioe. I dont make any other kind of chocolate now. For cup cakes i fill to abou 2/3 up, they cover the tray with foil and bake them like that

Yes i cover the whole tray, its to ensure the cakes rise evenly, so you dont have a lump in the middle. You want a nice flat surface to decorate it. Also to help make them all the same size.

Thanks to this recipe. I use it almost every week now to make muffins for the family. We're a bit health conscious so I just use 130 grams of raw organic sugar and cacao powder instead of cocoa. I've also tried organic carob powder instead of cocoa and just use 100 grams sugar for it. My kids really love it!

Bimby Chocolate cake made once again for my DS's 5 birthday. I'm making the number 5 cake with a racing track on it for him. Party tomorrow with lots of kids and I'm sure they will love it. Yum yum.

This recipe makes a  fantastic vanilla version.
Obviously omitting the cocoa, and added in 1 Tablespoon vanilla extract.

Yes I did colour them pink & green  :P

Used 2 round sponge tins, baked around 40 minutes, and iced and sandwiched with whipped white chocolate ganache.
Baked them Saturday, and 5 days later, still fresh enough to eat  :o

Voila....cookies & cream cupcakes  :)

Hi Judy, I'm going to wing it.  I did think about a cake tin but a) I'd have to ship one over from the States and b) they're too small (I need a cake for 17 children plus willing adults)

I haven't decided yet whether to do a standing one, or a laying down flat one similar to one of the pictures in  your link.  The standing up one would have more wow factor, but also more chance of failure factor, plus very hard to slice I imagine.  So I'll probably go for the lying down one.

I also haven't decided how to ice it yet - ie type of icing, colour, and recipe for icing.  As the party is on Sunday I'd better get a move on and make some decisions!

Just made this in the beast - I used 2 round cake tins and got 2 cakes. I don't eat cake but hhubby and kids loved it . I found after mixing I had. To scrape down the sides and mixed for another 20 secs great recipe thanks for sharing

I have made this as a large cake lots of times to rave reviews. I tried it as cupcakes the other day, still taste great, but the tops are peaked and cracked. Did your cupcakes turn out even? Is there a knack to this?
I used the raspberry buttercream icing that Maddy posted, using my TM strawberry jam, and that was really nice, well worth the extra effort of heating and cooling the mixture.

Hi sue perb,

Mixed everything in TM as per recipe
Emtpy into a clean bowl, I like to see how much mixture I have
Put cup cake tins (i use silicone) on to baking trays
Put cupcake cases in squashing down frimly on btoom
Use a soup spoon (type u use to eat soup)
have a nice rounded spoon and place into case
Do this until all mixture is used, shoukd 3/4 fill cup cake cases, do not be tempted to overfill
Lay foil over the top , to keep caes flat, i dont do foil now as ths technique makes perfect flat cup caes for me.
Cook in preheared oven for 24 mins at 180 fan forced.

Sue, have you checked your oven temperature lately with a thermometer?
Usually if heat too high with cupcakes, they will peak and crack.  I normally cook cupcakes at 160c/170c at most.  If your oven out, could be the problem.  Do you use fan forced?  Could cause issues, and even the positioning in the oven makes the difference.
If temp. is good, then maybe using  a lower shelf could help.

Just thought I'd let you know the cake turned out well - although we forgot to take a photo!  :-))

I used melted white chocolate to ice the boot, and melted dairy free dark chocolate to ice the buns used as wheels.  I planned to use liquorice as the laces, but ended up using something called mango strings instead as that's what I found.

I made the cake itself with dairy free marg so that dd2 and one of the guests could still eat it, and with spelt flour so that I could eat it too  ;D. All were happy.

definately worth the investment and they arent expensive anyway..i got one before our trip and it made a world of difference...i hae a naughty large gas oven that never baked anything properly but with the thermometer that i place inside the oven i now know the exact temp  :)

I baked this as cupcakes for Mr 5's birthday party. 

I'm pretty particular about my cupcakes and probably would have reverted to my tried and tested recipe using - look away now - beaters - :-[

But things were pretty hectic so I thought I would give this recipe a whirl and I've got to say it was delicious!  So nice and crumbly.  I baked some using the fan force oven and they craked on the top (still tasted great though).  I took Maddy's advice and turned the fan off and those cupcakes turned out perfectly smooth.

So now I've got a new chocolate cake recipe and I've learnt no fan force when cooking cakes!

I have 3 sugar-infused daughters...............!!!!!!!!! :-))! I made a batch of this (using Nuttellex and soy milk because of DD2's intolerances) and made 30 muffins - which have nearly all been demolished! No icing or anything - just choc muffins. I really really thank you for such a quick easy adaptable recipe! And DD3 (just had her first birthday last week) said "cake" for the first time  ;D[while banging on her highchair tray in impatience after finishing one whole muffin!!??] once again a massive thanx!  :D

My girlfriend made the two round bimby cakes and i cut it and decorated it for her however was very rushed as she was supposed to come over in the morning but ended up arriving 2 hours before the party with warm cakes...arghhh

Also ordered pastes to get the right colours but they didnt arrive so made do with what i had..her son was happy so thats all that matters (i guess)

Oh and discovere a new buttercream recipe which had a lovely consistency which was equal parts butter to veg shortening like copha to double of icing sugar

A d for the mouth and eyes used marshmallow fondant with teninas re ipe as a base but different quantities from a cake lady blog...and picked up a tip for black icing or fondant without that horrible bitter taste and that is mix in alot of cacao first then add a bit of black and voila nice tasting very black icing or fondant..

Yeah go for it uni...she would be so surprised.. I see all te time people doing theme cakes for adults not just kids... Just need a picture to inspire you.. Draw the pattern on greeseproof or cooking paper, cook a basic cake.. Bimby or golden syrup etc etc.. Cook and let cool totally rhen cut and ice.. The hardest part is getti g the colours you want but ive just bought the wilton colour pastes.. If you want to see how anything is don evening colouri g icing there are heaps of videos on you tube... And before icing it that it is sitting on the serving board or plate ready to be iced then voila!!

I did make this for my son's birthday yesterday without the cocoa and extra vanilla in my Thermo Chef. It worked perfectly!

Yes. He was 8 and was supposed to have a scaletrics party racing cars, but we had to cancel the night before as it was too hot (40 C). The party was going to be in a shed. The forecast for Saturday kept going up all week. I made traffic light biscuits and tiny teddy racing cars too all in a racing car theme. We had the party at home instead with a Lego theme. The kids had a great time anyway.

Thanks for all your lovely comments about the cake. When I was a child it was a family tradition that you could choose a cake from the Women's  Weekly birthday cake booklets. My mum didn't like cooking much, but she would always make a special effort for our birthdays. I have continued the tradition with my children, and I have a lot of fun doing it! They can choose whatever they want and i'll do my best to make it.

Choosing a cake from the WW book was a highlight for my kids as well. I must admit there were a few that I backed away from doing but most were a lot of fun and the kids were always really delighted even if the funnel was sagging on the train or the duck's beak fell off!

We started off with the kids going through the WW and other kids party cookbooks, they were allowed to choose two or three and then DH and I would select the cake and keep it as a surprise until the party. Now the kids tend to choose some kind of theme for their party and we go from there. This year DH7 had a Plants vs Zombies party and his cake reflected that. The actual cake was made using Krishna's Lamington Muffin recipe, and the decorations were from Orchard White Icing coloured with various Queen liquid food colourings.

Thanks. The cake was a success, but not as much as the figures. I had the kids all asking if they could have this piece or that piece. In the end I waiting until most of the kids had gone and gave some away - I thought they would just take them home, but no, they ate them. I was grossed out as I don't like the taste of that Orchard icing at all, it's just a really useful medium for cake decorating the cheat's fashion.

Made this today.
Used 20g less sugar. Used light brown sugar.

Made 2 in 8" tallish tins. Iced on top with Lees chocolate icing, made with butter.

One for DD work, other for young.

I made this yesterday My boys give it the thumbs up as do I ;D

I used about 80gms of raw sugar and 70gms of brown sugar and it was plenty
I also used wholemeal SP flour instead the batter was grainy but you couldn't tell once it was cooked
I used a large round springform tin and it took about 65-70mins to cook at around 160 (oven is crap and doesn't heat right)
it was super moist on the inside, sweet (but just right) and nice and chocolaty and slightly crunchy on the outside

I will used it again for DS2 birthday in a few weeks :)

Ive been having success with this as cupcakes now thanks to Maddy and thought I would try again as a full cake. I made 1 1/2 times the mixture and disaster. The cake hardly rose and is very dense. I was trying for a vanilla so substituted the cocoa for custard powder and sr flour like someone else had tried. What am I doing wrong.(http://img.tapatalk.com/dced0921-849f-f027.jpg)

I've never been happy with this cake even when doing as a chocolate, it's a similar texture to this on a low oven and if I increase the temp it domes and crates in the middle.

I did the custard powder substitute, too, Wonder, I didn't like the result at all. The taste was nice, but it was way too dense. But I didn't cream the butter & sugar the way I normally would, so I just figured that was why it was so dense.

I made this standard (i.e.: Chocolate) the other day, and creamed the butter & sugar together using the butterfly, then added the eggs 1 by 1, then the vanilla, then removed the butterfly and added all the dry ingredients and I was really happy with the result - I'm going to make cakes like this from now on. I have yet to try it with the custard powder instead of the cocoa though. I have to admit though, that I'm not a big fan of making cakes in the thermomix - it's a lot of work, I always have to stop the thermomix, remove the lid, scraped down the sides and start again. When I made the creamy vanilla frosting, and you mix for 3 minutes, I found myself stopping every 30 seconds. I'd be really dissapointed if I'd bought a thermomix mainly for making cakes, but I LOVE it for all other pruposes, it's great at cooking meals, so I'm by no-means complaining. It's also VERY possible that I'm doing something wrong... lol. I'm still a newbie and learning things.

Having said all of that, though, I haven't made the chocolate version as per the directions given on this thread (just throwing it all in and mixing it), so I could be way off.

I just made four batches of this as cupcakes. They are in the freezer now, and I'll defrost them on Wednesday to decorate for the bake sale fundraiser on Thursday :)

I made a triple batch of this mixture into cupcakes for a fundraising bake sale :D

They were perfect when the came out of the oven but they got a bit smooshed after I put the icing on and tried to package them :(

They should still taste good though :)

I make this into cup cakes too, I made this into mini muffin pan size on the weekend, then did the same recipe and left out the cocoa and added sultanas. :)

I have no idea  :-[ i just do icing sugar,butter, cocoa and beat it together, I think it may be the cocoa I bought the home brand one and it hasn't been that colour before my baking skills are a bit hit and miss

Made this without checking pantry, run out of cocoa powder.  Modified by adding 2 tbs hot choc drink powder and some 70% dark choc.  Color wise is more like banana cake, everyone keep guessing what sort of cake, super yummy!

Made this for DS4 racetrack birthday cake and can I say wow. After many dry choc cakes over the years, this one was perfect. Will not use another recipe from now on. Have also made Maddy's vanilla version for cupcakes and they were great too. Thank you for this recipe.

I tried johnro's Banana Cake,Magic Bean cake and a carrot cake.I think the imprints are too fine and a bad design.I just use it now if I need a ring tin.

Judy if your Mum like chocolate cake she will love this one. I don't eat it but DH and DS love it. As i've said before the only problem I have it with it peaking so tend to make it into cup cakes now or use a tin with the whole in the middle. Enjoy

I made 21/2 times the mixture on the weekend in two separate batches. I was trying to make them in a lamington hoping if kept the cakes thin they wouldn't peak. The first time I didn't have quite enough batter to make two the same size so I made a batch of 11/2 times the recipe and that made two lamington size slabs which I will join together with buttercream before icing as the graduation cake for DS's grade 6 year level celebration on Sunday.  I've frozen each of the slabs individually and will defrost on Sunday morning before icing.

Made a 1/2 batch of this today and made little cupcakes.  They are yummy.  I've whipped up a batch of the creamy vanilla frosting as well so will attempt to ice them before taking them along to our bushwalking supper tonight (hope the icing survives as it is still pretty hot outside).

I've made this cake twice this week - 1 vanilla slab and a chocolate one - used 1 1/2 batches in each and they are now in the freezer ready for my pop's 90th on Sunday. ;D Do you think it will be ok to thaw them on Saturday night and decorate them then????? I thought they should be ok popped straight into the fridge and left overnight.  ???

Help!! I am making cupcakes for my dd who turns 18 on Xmas eve to take to work!!

First time I have ever used this recipe, first of all it was very runny, is that normal or maybe (http://img.tapatalk.com/d/12/12/22/y6udutyt.jpg)my scales were out, it was more pouring consistency than spooning.  I filled the cases up to about two thirds full and baked them and they are like volcanoes, see picture.  I have soo much to do and not enough time!!! Now I have to start again!! Any tips would be most welcome.

You could make fairy cakes as well couldn't you?  Just cut the top bit down a bit for the wings.  Save all your scraps of cake if you use Megan's suggestion and make Chookies Queen of Puddings (http://www.forumthermomix.com/index.php?topic=3372.15) with them. You can use either breadcrumbs or cake crumbs for that recipe.

I Meagan, what a wonderful suggestion I would never have thought of that. I am such a perfectionist that I am my own worst enemy sometimes!!!!!,  made two more batches and have now worked out just the right amount to put in the cases will. Try your suggestion for my practice icing!!!

Thank you Sue. The two tone is really easy to do. Make your icing as normal then split it in two. I coloured one half blue then left the other half natural. Depending on your icing bag will depend on your next step. I have a Tupperware icing tool and just placed the blue on one side and the white on the other. As you squeeze down it kind of mixes together. If you are using a more traditional icing bag you can separate your icing with disposable bags inside the icing bag...so fill one bag with blue and the other bag with natural and place both bags inside a piping bag. Hope that makes sense.

It looks so much more complicated than it actually is!

I so love this recipe! This time I'm making it in two tins. I've scrolled through about 15 pages of replies for suggested cooking time for it this way....anyone know?

I've set timer for 45 mins. I hadn't thought of doing it without cocoa, good idea whoever posted that! Such a ripper of a recipe, and anything that begins with "putt all ingredients in bowl" is going to get tried out in my kitchen.

JD it's not a thermomix book but Donna Hays No Time To Cook is great for quick, easy and delicious meals!  I highly recommend it.

Needed to make some cupcakes quickly this morning and remembered someone had recommended this recipe.  The words, "fast" and "easy" simply will not suffice as a description!  It was fabulous!!  Toss in, mix, bake, bingo!!  DS tried one and remarked, "These are great!  They're so light!"

Last batch of cupcakes in the oven. DS is having birthday party on Friday. Fingers are all crossed that i can find time to make the little cakes presentable. I'm sure they are yummy, based on all the glowing comments on this thread :)

This cake paired very well with the Creamy Vanilla Frosting. Match made in heaven.

Baked these cupcakes on Tuesday. Chucked into the freezer in airtight containers. Piped icing yesterday (Thursday). Served them today -- > fabulous!

Has anyone made these and the Creamy Vanilla Frosting using nuttlex or oil? I'm planning on make these for DS3's birthday this Sunday and one of the guests has a dairy intollerance so I would to avoid using butter and cream if possible.

Thanks CC, but I also have to stay nut-free.

 I have found other dairy, nut and gluten-free recipes but the reviews haven't been very good. I have made the Bimby Chocolate Cake and Creamy Vanilla Frosting before and know they are delicious so wanted to see if anyone has tried substituting ingredients without changing the overall taste. I may just stick with original recipe and make a couple of dairy and nut free ones for the special guests.

It was a nearly 5 year old or orchestrating his father's birthday. Streamers balloons noisy blowers, the prettiest part of the cake, dictating the icing (by poking holes in the cake that I had to hide) the overdose of candles, climbing for matches and then knife and then serving us all.  A bit scary really, I'll have to make a fuss of his Party next month.

I used this recipe but the vanilla version for DD's birthday cupcakes, strangely a few people said they tasted better the day after the party!

Thanks, Wonder - we love the tin, too.  When I first saw it I thought it would be a nightmare to have the shapes come out properly, but I found if I just rub it carefully all over with butter there's no problem . . . .I've "up"graded the tapatalk and now I can't seem to control the size of the photographs   :o >:(  Am I missing something??

I have this cake in the oven as fairy vanilla muffins - replaced cocoa with vanilla custard powder then added some 100s&1000s to the mix in the last 20sec of mixing.  :)
Have no idea how they will turn out but hopefully they will be good - hoping to send them to school with miss7 on Friday as a end of term treat for the class as well as art of a thank-you and good luck for the teacher who is going on maternity leave.  :D

Will try to remember to post pics either here or the oops thread!!!!

I for once bypassed my rule of checking the TM scales before using them, went ahead and wondered why the mix was too big for the bowl  :o :o :o :o :o, cooked them anyway and while the effect is there (colored streaks all thru) and the flavour of the insides is nice, the outsides were burnt before the insides were cooked.  :-[ :-[ No fault of the recipe, all fault of mine.  :(
Sure not wasted tho, the girls are eating them like there is no tomorrow!!  :)

Hi everyone, I am planning on making these as cup cakes tonight and icing them in the morning. I have some cup cake 'cake toppers' (the rice paper ones - Fremantle Dockers ones for a grand final snack!) - but I have never used them before. What kind of icing would you recommend? I understand you don't want an icing that stays moist as it will make the image run.

Any tips would be appreciated.

ILB does it again. Omitted cocoa and increased flour by 40g. Divided batter into 4 bowls and tinted with Wilton colour gel.  Baked 4 cakes in 20cm lined sandwich/sponge tins at 180c for 15minutes. Cake still yummy 3 days later.

I made this early this morning for my guests. (unexpected). I used my lovely new cake tin. It was lovely as usual and the cake tin worked really well. In fact it was so nice that there isn't really enough to photograph.  :'(

I made this into butterfly cupcakes on the weekend for a retro birthday party. It was really humid when I was making them, and they looked very flat - no problem when they were filled with icing and had the wings put on. I used Maddy's best chocolate buttercream, and everyone said they were delicious.  ;D

I made this on the weekend for DD to take to work. I reduced the sugar too. I put some ganache made with Lindt Strawberry Intense. DD mentioned everyone liked the subtle strawberry taste!!  The recipe has been spread round her work now as well. Thanks ILB.

ILB, thank you for this brilliant and simple recipe. 😋 I used to avoid making choc cake due to the extra step of heating up cocoa. So messy too.

MJ, I used creamy vanilla frosting for the layers and ganache for the topping. All made in TM 😃

Wonder, the cakes domed on me too. Had to make 2 rounds of cakes to get 4 layers.

Could someone help me with a question regarding this cake. I have always made this using brown sugar and macadamia oil instead of the butter and it turns out lovely and moist and light. Today however I used butter but the cake came out quite dense....very much like a brownie...does anyone know why this may have happened?

I'm not sure Jenny. I've always used brown sugar and butter. Mine always turn out moist and light. My butter is always straight from the fridge too.
