Just wondering if anyone has noticed the base of TMX base being loose? I have been making bread a lot lately and I am concerned it has made the base loose.  Thelma is 5 years old this month

Chickpea and Sausage
Serves 4

2 tablespoons olive oil
2 garlic cloves
1 medium red onion quartered
1 red capsicum roughly chopped
200g sliced mushrooms
400g can diced Tomatoes
400g lean beef or chicken sausage
400g can Chickpeas, drained and rinsed
Salt and pepper, herbs if you have any

Place onion and garlic in bowl chop 5 secs speed 5
Add capsicum chop 5 secs speed 5
Add sliced mushrooms
Add oil and cook 100 speed 1 for 2 mins
Add tin tomatoes and cook 100 for 10 mins  reverse
Meanwhile cook sausage on stove top and slice into bite size pieces
Add sausage to sauce and cook 5 to 6 min on 100 Reverse speed 1
Add drained chickpeas and cook 2 mins 100 R speed 1

Add salt and pepper or herbs with the chickpeas

This recipe is from my weight watchers magazine, really enjoyed it and very easy to make

ES - it was delicious. I added a button squash, smoked paprika and a pinch of Chilli with the onion, garlic and capsicum. I used plain pork sausages and I served it with couscous with parsley and chicken stock. My family will happily eat this again. Thanks for an easy dinner. I cooked it in my ThermoChef at 90C with the butterfly in as I don't have a reverse function.

Hi, I have had my tmx (thelma) for 2 years now and wouldn't be without her, but we are now down to just hubby and I and I am finding some of the recipes are too big and I would like some help in how to reduce recipe sizes to 2 people?  i.e. do you halve ingredients and cooking time?  cooking rice/pasta do you halve the the ingredients and liquid and time?  I know I can freeze any extra but as we plan to travel in our caravan later this year I would like some recipes that suit 2 people.  Thanks

I have had this recipe in my folder for a while but tried it for the first time last night and it was well liked by the family

Honey & Soy Chicken

800g Chicken thighs cut into bite size pieces
1cm piece of ginger
1 clove of garlic
140g Soy sauce
130ml water
160g honey
1 teaspoon paprika
30g olive oil
2 heaped tablespoons cornflour

Toasted sesame seeds to garnish

Chop ginger and garlic for 5 sec speed 7.
Add oil and saute 2 mins, 100 deg, speed 1
Add chicken and cook 2 mins, 100 deg, reverse, speed soft.
Add remaining ingredients and cook 15 mins 100deg, reverse speed soft.

Serve on rice sprinkled with toasted sesame seeds

Tweeks

I only used 400g of chicken as only 3 people eating, kept the the sauce same and there was a nice lot of sauce.
I didn't use big heaps tablespoons of cornflour,
I used 2 garlic cloves.

Changes made by other forum members.
Uni used prawns, garlic and ginger.
People have found that there is a lot of sauce. Some froze the extra, others have had it over eggs, rice, pasta.
Judy added frozen vegies to the sauce.
Cookie1 made the sauce in the  *:. Partially cooked the chicken in a frypan and then poured the sauce over. While it finished cooking she did the rice in the thermomix.
Kulsha her comments.I also used 2 cloves of garlic and normal tablespoon of cornflour - but halved the soy sauce, water and honey to reduce the amount of sauce (kept all of the other seasonings the same), I only had a standard woollies type tray of chicken (about 500grams) - these quantities were perfect for 2 of us with some leftovers (we will fight over who will get this for lunch tomorrow) ... I kept the same cooking time - and it turned out perfect, the chicken was tender and there was still more than enough sauce for the rice and vegies. Oh and I sprinkled with a few crushed peanuts as I didn't have any sesame seeds...
Wonder suggested using the sauce as a marinade. Possibly without the cornflour. Said it was lovely as a marinade for grilled chicken.
Amy used Worcestershire sauce and soy. Added steamed peas and corn when it was cooked. She also loved it with Hokkein noodles.
Kimmy added capsicum and carrots halfway through the cooking time.
KazandCo suggested  I put some Singapore noodles in the bottom of the thermoserver then drained the sauce from the chicken, chucked the chicken ontop of the noodles then whacked the temp up to Verona, added a little more cornflour & reduced the sauce for 5 mins. Made it extra yummy! mixed it all together then sprinkled with the seeds. Next time I'll reduce the honey by a smidge.
GreyhoundMum 600 g chicken
1/2 cup frozen peas added towards the end of cook time
1/2 cup bamboo shoots
And a large handful of raw cashews.
I used slightly less honey about 100 g and a combination of dark soy, light soy and kepap manis (sweet soy)
Oh I also added 1/2 red chilli deseeded at the beginning with the ginger and garlic
Phatasafairy made considerable changes. They can be seen here.
SuzieG reduced honey and soy, added oyster sauce and Chinese 5 spice instead of paprika.
Kulsha replaced honey with 60g lemon juice for lemon soy chicken.
Kimmy made a half batch of sauce and stirred it through some vegies and hollies noodles.
Cornish Cream reduced the honey to 100g and threw in some snow peas.

What a great forum this is, not only have I amassed lots of recipes for TMX, read lots of hints I also know all about Kindle and my daughter has bought one, found out about Pinata's and now know how to make a chicken out of a tea towel and it works I tried. I think we are an amazing bunch of people.  ;D  Rainbow

Vegetarian / Quick Beanie mix ( Jude Blereau)

Quick Beanie Mix

2 tablespoons of olive oil
1/2 onion
2 carrots cut into chunks
1 stick of celery cut into chunks
2 cloves of garlic
1/4 teaspoon ground cumin
1/4 to 1/2 teaspoon chilli powder
1/2  orange sweet potato, cut into 1-2cm dice
1x400g can of beans (borlotti or kidney beans) drained and rinsed
1x400g can of chopped tomatoes
1 zucchini cut into 1cm dice


Put onion, carrots, celery and garlic in  *: and chop for a few seconds, add oil and cook 100, speed 1 for 2 -3 mins
add cumin and chilli powder and cook another 2 mins 100 speed 1.
Stir in beans, tin tomatoes and sweet potato, cook 100, speed 1  :-: for 20 mins.  Check sweet potato is cooked  Add zucchini and cook a further few mins



I converted this recipe from Jude Blereau's book Whole food for the Family.  I didn't have zucchini so not sure how long you would cook that and I also left the MC at angle for a while to help it reduce.  In Jude's book she suggest using it for beans on toast or as a nacho dish with avocado and sour cream

Tried this recipe tonight and really enjoyed it. 
Halved the recipe as only DH and I  eating but could have done the full recipe and eaten it all !!!
It doesn't say to use reverse speed after adding the prawns but I decide to. Otherwise except for halving ingredients followed the recipe as per the book.

Easy Carbonara
2 large serves

150g spiral pasta
450g warm water
200g thick cream
3 rashers of bacon diced
1 teaspoon oregano
1 clove of garlic
1 teaspoon salt
1 beaten egg
Grated cheese (keep aside)

Chop garlic 5 seconds speed 7
Place remaining ingredients except egg and program 15 mins, temp 100, spoon soft, reverse speed.
2 mins before the end pour egg through the hole.
Pour into serving dish, sprinkle over cheese.

Tips - let the pasta sit for a few minutes before serving to absorb liquid.
Swap bacon for mushroom for a vegetarian option.

This serves 3 of us with garlic bread/bread
I have tried increasing pasta and liquid to make it serve more but haven't quite got it right yet.

cathy79 - Made this, thank you so much!  This is exactly what I was trying to achieve.  And so easy. It did try to boil over so I reduced the temperature down to 90o.  Luckily I was around and noticed.
I didn't have any cream, so I used only 250g water and 400g milk.  I chopped the garlic, added the liquid and heated then added the rest of the ingredients.  I used wholemeal spirals and thought they might take a little longer but the cooking time was perfect. Instead of bacon I used some chopped cooked chicken.
Makes a great side dish instead of those packet side dish pastas.  There are lots of variations possible with this.

JD - You'll be happy to know this works well with Carnation Light & Creamy Evaporated milk if you're watching your weight.  I substituted liquids with 375 mls evaporated milk, 340 mls water and added 2 tspns cornflour right at the start.
From then on followed the recipe to a T, leaving it 5 minutes to absorb the liquid at the end of the cooking time. 
Next time I will try chicken and broccoli or chicken & mushroom. Didn't have your trouble of it boiling over Cathy so was able to leave temp at 100o the whole time. 
As Cathy said this is a great replacement for those packet pastas but we know exactly what is in ours. Can just check out the varieties at our supermarket and come home and cook our own. Thanks for the posting rainbow.

Kulsha - super yummy and super easy! I didn't have cream or evaporated milk, so just used normal milk + water + 2 tspn cornflour + small knob of butter and the result was very creamy and didn't look or taste low fat.  I threw in a half chopped zucchini but mushrooms would have been nicer and I added a heap of black pepper too as I love that so much. Thanks for the recipe.

SuzieG - This is an amazing recipe. DD had seconds which is pretty rare. Quick and easy - it'll be a regular. Thank you!!

DeeCat - Kids loved it! 4 kids and 4 empty bowls which is rare in our house! Only change I made was add some zucchini and some chicken stock for a bit more flavour. Yum!

Kegvil - got compliments all round. How quick, next time I am definitely starting the garlic bread first.

MJ - I put this recipe on the Forum Community - crediting your name, of course. It's incredibly popular! People have done various tweaks and additions and it's always a winner. Well done!

Kimmyh - Thank you so much for sharing this wonderful recipe. I too made it with evap milk, water and cornflour as suggested in earlier post and it was fantastic. Added mushrooms, any chance to sneak in vegies, and DS3 & DS5 gave it a triple thumbs up!

Greyhoundmum - This one didn't keep too well in the thermoserver. It had plenty of sauce but when I went to serve it about an hour later it was stodgy.  Definitely one to be served and eaten straight away.  I didn't like the taste of the evap milk although my tin had been in the pantry for ages. I think I will try it again with reduced fat cream and I will definitely sauté the bacon first.  Very quick and easy.

Span - I tried this with the evap milk but also substituted the pasta for julienned zucchini. I add the zucchini at the same time as the rest of the ingredients. I only used 1 zucchini but if I were to make it again I would use 2 and cut back the water by about half. Using the zucchini instead of pasta makes the dish worth about 180 calories per serve, which is great for those watching their weight and carb intake. Next time I might try it with a bit of chicken for a little extra protein.

Recipe Book Recipe Reviews / harvest nut loaf

I tried this recipe from A Taste of Vegetarian for the first time a couple of nights ago. We found the taste quite strong, but not having had many nut loaves before maybe they all have a strong taste.  I actually liked it better cold the next day.
I reduced the sauce (tamari) from 2 tablespoon to 1 tablespoon.
