Green soup

Name of Recipe:Green Soup
Number of People: 4 serves
Ingredients:
1 onion, cut into 4
1 tblspn olive oil
250g chopped potato, fairly small pieces
375g frozen broad beans, thawed with skins removed & discarded
500mls boiling water
1.5 tblspns concentrated vegie stock
150g frozen peas
150g spinach, sliced roughly
125mls Carnation evaporated milk
Ground black pepper
Pinch of ground nutmeg
Salt to taste but probably not needed


Preparation:
Chop onion 2 sec/speed 5.
Add the oil and saute 4 mins/100o/speed 1.
Add potato, broadbeans, boiling water and concentrated stock.
Cook 15 mins/100o/speed 1.
Add peas and spinach.
Cook 5 mins/100o/speed 2.
Holding a tea towel over the lid, slowly take the speed up to speed 7 for 10 seconds.
Add evaporated milk, pepper and nutmeg.
Mix 20 seconds/speed 3.

It sounds great JD! I will definitely try this one!  ;)

Do u think I can use normal milk or fresh milk cream instead of evaporated milk?

Well JD, today my DH wanted to make a deal with me :o
He wants to lose weight so I promised him I'd cook light stuff from now on

I want to try this soup and also your spinach au gratin recipe
Not on the same day surely, it would be too green!!  :D

The flavour of the broad beans definitely comes through in this soup and I think the skin may spoil that lovely sweet flavour but if you want to try it for me TMXer......... :-* :-*

Might try it.  I'm happy to peel them, but just thought it may be a pain for some?

If you cook them in the microwave for 3 mins from frozen, they are easier to peel - they just seem to pop out. Tedious but well worth the effort.  This soup is going to be my dinner party starter for winter guests, it is that nice.

Dear JD,

I went to convert the Green Soup I have made for some years (published by Elizabeth Godfrey) and noticed you'd already shared this one.  Mrs Godfrey's recipe is water-based - or should I say chicken stock-based - but it is served with sour cream.  Yours has broad beans.  Hers had an optional ingredient which was   "the tops of broad beans, when pinched out to stop growth".  I thought you might find that an interesting connection.  Her base greens are celery, silver beet and parsley, but she recommends people try anything green except cabbage family, which she finds too dominant.
