Name of Recipe: Simple, Cheap Chicken Noodle Soup (without chicken)
Number of People: serves 4
Ingredients:
2 tsp oil
150 g onion cut in half
110 g carrot cut into chunks
1/2 tsp garlic paste (opt)
1 large spring onion cut into 5 cm lengths, green part as well
1 litre water & 2 tsp stock powder
100 g fine egg noodle bundles - crush into small pieces with your hands
Preparation:
Chop the onion, carrot & garlic paste 4 sec/speed 5.
Saute 5 mins/varoma/speed 1/reverse.
Add water & stock powder. Cook 10 mins/100o/speed 1/reverse.
Add the broken noodles and cook 3-5 mins/100o/speed 1/reverse.
Tips/Hints:
This is surprisingly tasty for the small amount of ingredients, I think the kids would like it. My Mum and I loved it.

Judy what sort of stock powder did you use? . My grand kids love chicken noodles this would be good it has a little bit of veg too.

I didn't have any home made AB so used Massel stock powder.

Oops, I didn't even notice that. Perhaps it is only chicken stock.

There's no chicken, that's why it is simple, cheap chicken noodle soup - it is really tasty and great for a quick lunch.

Ive just made this soup for lunch - is only me here during the day.
Found it quick n tasty. I had some leftover cooked chicken in the fridge, and broke a few small pieces into my soup - delicious :)
