Post by: Denzelmum on August 04, 2011, 04:41:23 am
Does anyone have TMX conversion to make okonomiyaki?
Thank you.

Hi Dede, it's Japanese savoury pancake with cabbage.  I might serve it with TMX mayonnaise and tomato sauce.

Thank you JD  :-* :-* :-* :-* :-*  will try this out, hope kids like this.

Love okonomiyaki. I'd imagine you could chop the cabbage following coleslaw directions, set aside and then do the batter?

Sounds interesting. Let us know how they go, I must admit I do usually like to see reviews before I give something a try. I think its that I don't like wasting ingredients if I thing it wouldn't get eaten.

Wow!! Thanks for the request Denzelmum. Never heard of 'em but made them tonight thanks to JD's link. They are a fantastic 'slack night' meal in front of the telly watching footy. Kinda like a springroll in a pikelet. Kids and hubby give them a thumbs up.  :D

Wow, you're quick Nay-nay!  Dede, one good review from Nay-Nay.  I was working today, late to pick up DD from after school care and missed the bus, decided to have left over nasi kuning (Indonesian yellow rice) leftover from the other day for the kids.

Nay-nay, I was wondering how many this recipe served.  Thinking of making it tomorrow (swimming night) as you say it's quick for a slack night!

I think it was about 9 - 10 large ones. I must say I ate 3 and was stuffed very full. I also didn't mention that I think there was way to much mix for the TMX so I had my very large mixing bowl that everything got mixed in. I milled the cheese and put it in bowl then cabbage, carrot, shallot whizzed and in bowl then the wet ingredients and flour whizzed and mixed into bowl - As I mentioned I have never heard of these before and had no expectation as to what they are suppose to be like so added a couple teaspoons of baking powder so they had a little air like a pikelet and we did enjoy them.  ;)

Thank you Denzelmum for your original request, Judydawn for tracking down the recipe and Nay-Nay for your "tweaks".

We all loved this recipe, vegetarians and omnivores alike!  How quick and easy is it with TMX--imagine all that grating if you didn't have one! For those who give this recipe a shot, Nay-nay is absolutely right, the mix is way to much for the TMX bowl, so I also milled the cheese and tipped into a large mixing bowl, then chopped the veg, tipped into the bowl, then mixed the batter and sitirred it into the other ingredients.  I also added a few tsps of baking powder. I made 10 pancakes about the size of a small saucer.  I served it with thermomix mayo and bbq sauce.  When you buy them the sauces are often squirted on in a lattice like pattern, but I just dabbed on the mayo.  Next time I'm at an Asian grocers, I will look out for real okonmiyaki sauce.

Thanks again everyone for a healthy, tasty and easy meal idea!

For just the 2 of us, I was going to make half quantity Lellyj, do you think that quantity would fit back into the TMX OK?
Just loving the reviews of this one and can't wait to find out for myself what it tastes like - maybe Wednesday night's tea.

Judy, I just tested the volume of my mixing bowl with the tmx jug and yes I think a half mix would fit in, but it was no drama to dump the cheese and veg into a bowl and then stir through the batter either.  I should have pointed out that I used a standard 375 ml tin of evaporated skim milk as that's what I had in the cupboard and only added 50 ml of water.

I hope you and your husband enjoy it too.

Thank you, guess I will play it by ear with the quantity of liquid then - is it supposed to be a thick batter or thin (before adding everything back into it).

It was a bit thicker than a normal pancake batter, spooning rather than pouring consistency.

Will definitely have to try this one. I converted one the other day and it just didn't taste right. Too much cabbage for my kids, but they love ones we've had a restaurant. And having said that, has anyone been able to replicate the Kewpie mayo?

Good thinking - I followed the recipe to make it 1-1.5cm batter, end up with 3 20cm diameter and one baby one.  I think Lelly's version is better, making 10 but a lot thinner.  DS had one and pack for DD lunch box.  Waiting for her verdict.

Oh yes - I had forgotton about that - the can of milk I used was 375ml not the 485ml (never seen or heard of one that big!) just made up the rest with water. All mix into a big mixing bowl, using a ladle full of mix was just the right size for a serve and I had 2 frypans going to get through it all quicker.  ;)

Next time I'm at an Asian grocers, I will look out for real okonmiyaki sauce.
I just used Thermie mayo and tomato sauce but am interested in this okonmiyaki sauce. I found this recipe  (http://asianhomestylecooking.tribe.net/thread/debce0bb-b993-4831-93e0-a2881108db65) when doing a search.

This one  (http://okonomiyakirecipes.nthmost.com/komatsu-sans-traditional-okonomi-sauce-recipe/) looks very authentic with kelp and shiitake mushroom in it.

Had this for tea tonight - did half quantity which made 5 large pancakes.  Quite tasty but not something I would do very often.

The Okonomiyaki I've had often has chinese greens in it, rather than cabbage - this would significantly alter the taste, I suspect.  It is a favourite of mine and is also very good with the sauce from teriyaki chicken, which is quite sweet.
Generally it is served with Japanese mayo, the sweet sauce and bonito flakes.
The Kewpie mayonaise can be replicated by just making an ordinary whole egg mayo, but adding some MSG - I'm told this is what make it so good!  :o

I made this for dinner last night and completely forgot about the suggested baking powder. Found it a bit stodgy but we all really enjoyed the flavour. I think adding the baking powder would have helped. Had it with the Kewpie mayo and Okonomiyaki sauce (we live very close to an Asian grocery). Will definitely make again.

Found this link after hankering for Okonomiyaki, Osaka-style.
http://www.justhungry.com/okonomiyaki-osaka-style
The author also mentions that to make mayo a la Kewpie: '..For Japanese style mayonnaise a la Kewpie, use rice vinegar for the vinegar component, a neutral flavored oil such as canola or safflower oil, and add a little sugar (about 1/2 teaspoon) when you add the salt.'

Glad to be of help, Amanda. I had my first taste at a tiny shop at the basement of Umeda Sky Building in Osaka. Dinner queue was 45 min, but the okonomiyaki was excellent. On my return to Malaysia I had to hunt for a good recipe to make them, that's where I found this link. We are lucky that ingredients are easily available including that slimy nagaimo!

We went to Night Noodle Markets in Hyde Park, part of Sydney International Food Festival and found Okonomiyaki stall.  We ordered the vegetarian one, hmm big thumb up.  Before too late, I took the picture of the last piece.  Actually they sprinke generous amount of cut nori on top, really good!

Just to bring up the topic of okonomiyaki again.... (because I love it!)

I made these from the "in the mix" recipe last night - and they were fantastic! The sauce is divine, and I'd made some fresh mayo earlier that day, so the entire thing was just delicious.

I made these last night as DD had them in Japan and loved them. We sort of enjoyed them (DH and I) but they were very different to anything we had ever had. I will probably make them again but this time not blitz the cabbage so much and I'll add other vegies eg peas and some pieces of chicken torn up.
It seemed so unusual to have a sauce with them and then mayonnaise but the sauce is very strong so the mayonnaise helped with breaking that up.

They are traditionally served with the sauce poured over and then the mayo kind of squiggled over that. If my picture attachment works, this is a fancy version of that (not my photo!).
You could really add any veggies you want, or chicken. It would be fine.

I love the In the Mix recipe but as yet haven't attempted to make the sauce, I've just used the store bought one. Wondering what sort of mustard to use? Recipe just says 'mustard'.

I have just found another version of this recipe. It's not TM one, but shouldn't be too hard to translate. This is the link: http://www.closetcooking.com/2009/05/okonomiyaki-japanese-pancake.html.

 by Closet Cooking
(makes 1 4 serving pancake)

Ingredients:
1 cup flour (I used whole wheat flour)
3/4 cup dashi (or water)
1 egg
1/4 of a cabbage, about 2-3 cups packed (shredded)
1 carrot, about 1/2 cup (grated)
1 small zucchini, about 1 cup (grated)
1 green onion (chopped)
3 slices bacon
okonomiyaki sauce (or Worcestershire sauce)
mayonnaise
green onion (chopped)

Directions:
1. Mix the flour, dashi, egg, cabbage, carrot and zucchini in a large bowl.
2. Heat some oil in pan.
3. Pour in mixture and top with the bacon slices.
4. Cook on medium heat until golden brown on both sides, about 5-15 minutes per side.
5. Top with okonomiyaki sauce, mayonnaise and green onion and slice.

I realise bacon isn't vego, just leave it out. Apparently the bacon cooks when the pancake gets flipped.

I made the Okonomiyaki from In the Mix tonight and I loved them :D I used wholemeal flour and didn't add the sugar or salt. I served them with beetroot salad and a slice of toast (not very Japanese, I know!)
I'll definitely be making them again :D
