omelette with potatoes from full steam ahead p38

I've made this twice now and it is very nice :) :) I tweaked it slightly by sprinkling grated Parmesan cheese on top and served with a small salad as I made this for a lunch dish. If you add more eggs it will need to cook a further few minutes, cut the potatoes a bit larger so they don't turn to mush. The DGSS really loved this as did DH and I... 5/5

I also love this recipe - very easy and good for a healthy lunch, Sunday brunch or a slack night in!  ;) I also add cheese, mushrooms, capsicum - anything really to make it more colourful and substantial.  :)

Omelette with Potatoes from the Full Steam Ahead cookbook - serves 4

200g potatoes, peeled & cut into small cubes
6 x 60g eggs
70g creme fraiche
1/2 tsp salt
pepper, to taste
800g water
1 tbspn chives, snipped

Place potato cubes in steaming basket, set aside.  Insert varoma tray onto varoma dish, place wet and wrung out baking paper onto varoma tray, set aside.
Place eggs, creme fraiche, S & P into TM bowl.  Mix 10 sec/speed 4. Carefully pour mixture onto covered varoma tray.  Clean mixing bowl.
Pour water into mixing bowl. Insert steaming basket, place varoma into position and steam 15min/Varoma/speed1.
Turn the omelette over onto the varoma lid, remove baking paper and place it back onto the varoma tray. Carefully slide the omelette (still upside down) onto the varoma tray and steam 5mins/Varoma/speed 1.
Serve the omelette with potatoes on top and sprinkle with chives.

Instead of creme fraiche you can use semi-skimmed milk
For a creamier omelette, don't turn it over, steam an extra 2 minutes

The only difference is that it is best to pour the mixture into the Varoma tray after it is in position.
