Zucchini, Cheese and Bacon Mini Quiches
Ingredients:
80-100g low fat cheddar cheese
125g lean bacon, roughly chopped
375g zucchini, roughly chopped
1 large onion, peeled and quartered
150g SR flour
5 eggs
90ml oil
Salt and pepper, to taste
Preparation:
1. Preheat oven to 180 degrees. Grease some muffin pans.
2. Place cheese in TM bowl and grate on speed 8 until desired consistency is achieved. Set aside.
3. Place bacon in TM bowl and chop on speed 5-6 until fine. Set aside with cheese.
4. Place onion in TM bowl and chop on speed 5-6 until fine but not too mushy. Set aside with cheese and bacon.
5. Place zucchini in TM bowl. Turn TM dial up to speed 8 and back down again. Scrape around sides of bowl and repeat process until zucchini is finely grated but not mushy.
6. Add flour, eggs, oil, salt and pepper to TM bowl. Mix for 20 seconds/reverse + speed 4 until mixture is briefly combined, and then add cheese, bacon and onion back to TM. Mix on reverse + speed 4 until well combined.
7. Spoon mixture into greased muffin pans and bake for approximately 20-25 minutes or until light golden brown.
8. Leave to cool in pans for about 10 minutes. You may need to run a knife around the outside of the quiches to get them out nicely.
Notes:
I used a 1/4 cup measure to put an even amount of mixture into each muffin pan.
If you want to double the recipe, 8 eggs is enough rather than 10. A double quantity is too much for TM. Trust me, I found out the hard way! :( You would be best to grate/chop everything in the TM, mix the flour/egg/oil mixture in the TM, but then mix it all in a large mixing bowl.
I was very nervous when I took my quiches out of the oven and turned them out onto a wire rack because I thought they were undercooked. But since I was told by three different people that they were "perfect", I think I cooked them just right ;)
These little quiches are yummy warm or cold, so they are great for lunchboxes, picnics, etc. Or straight out of the oven with some homemade chips!

They were for a Teddy Bear's Picnic at my work cookie, so I didn't even get to try them. I didn't keep any because I thought there would be lots leftover for me to take home, but they all got eaten. I was obviously much too slow, and definitely unaware of how popular they would be! :o
I have frozen this recipe before though, and it defrosts really well ;)

The yummy looking nicely browned ones were done in the oven, the other 4 in the pie maker. Haven't done the taste test yet.

No pastry crust = much less fat ;) I like them for this reason too!
I hope you have better luck using your pie maker than deedub did ;)

Egg intolerance. Can't eat quiche, scrambled eggs, poached eggs etc. so far I am ok with eggs in cakes etc.

Yes, any less fat and calories in the diet is great. Can have the tasty treat and don't feel like I'm missing out.

I tried experimenting with these to replace the bacon with tuna, which would make them even healthier, but they were a bit bland without that extra little bit of salt from the bacon :-))

These tasted great Amy, even my fussy little beggars loved them! To me the oven baked ones were better but i'm still a novice with the pie maker so others may have better luck.

Great recipe Amy. I made these today for a morning tea and they were all eaten up by mums and kids. They were delicious!!! Best thing was that the kids didn't even know there were veges in there. Next time I'm thinking I might also put in some blended up capsicum (just to increase the hidden vege count!).

This is a great recipe to hide extra vegetables in, and the capsicum sounds like a great idea. I sometimes put corn kernels in mine as well ;)

Amy my DH told me to tell you these are delicious and our visitors this afternoon also went ape over them. They went home with the recipe.
I made one lot using the mini muffin tray and a normal sized muffin tray for the remaining mixture. We had some of the bigger ones for lunch (hot) and I offered around the tiny ones for afternoon tea (cold). Both delicious, hot or cold but the mini ones were my favourites. I have enough left over for the grand-kids tomorrow along with some chicken rolls when they visit their Grandpa for his birthday lunch in case they don't want the seafood risotto I intend making.
I did saute the onion and I added some corn kernels and parsley to the bigger ones. Thanks for sharing this easy recipe with us.

Having said that, my local produce shop sells them off in kg bags really cheap so if I buy them they usually end up being blitzed in a tomato sauce for pasta etc. I think visually the zucchini would look better but flavour wise I couldn't actually taste the carrot so was just happy it was disguised in there for the kids! I will give them another go with zucchini at some stage but its one of those great recipes that can be adapted to what's in the fridge. Another reason I really liked it.

I'm not a big vegetable person, but I know I need to eat them to be healthy, so I try and find ways to keep eating them as pleasant as possible. I find that a lot of times while you can't distinctly taste a vegetable that is within something like this, it adds to the flavour. I pureed an eggplant and put into a shepherds pie when I made it last. I couldn't taste it in the shepherds pie, but it still added a nice flavour to it. Maybe I'm imagining things, but if it works, I'll stick with it.

I made this mixture and cooked it as one big quiche for dinner tonight ;D
I used wholemeal flour for a bit of extra nutrition, topped it with sliced tomato and served it with homemade wedges ;)

I put some of these out for afternoon tea with cake and nibbles for visitors this afternoon and they loved them Amy. Great snack food when made in mini cup cake trays which I cook for 15 minutes. Friend took the recipe home with her as she often goes to friends' houses where she takes a plate for supper.

I made these again yesterday and they're nearly all gone - the kids love them! Miss 7 requested them for her lunchbox this morning, & she's just eaten 2 more for her after school snack. I made 12 in the muffin tray, then used a mini tart pan (think that's what it is) for the rest of the mixture, the latter took about 12mins to cook. Added some fresh corn to the mix as well.

I used one of these when I cooked mine, and it was perfect. It's domed, just in case that's not clear in the photo, which makes them SO easy to get out and clean.

NP, I got 36 (3 batches of 12) from the mix. They are a great little size - perfect for finger food. I bought the tin to make this for the birthday party I went to, and they were great. The downside is that they are so easy to eat... ;-)

I've just made a batch of these in my Thermo Chef. I used ham instead of bacon and added a little cream as it was sitting in the fridge. I cooked them in mini muffin tins and it made about 4 dozen. I've had to hide them from DH and DD as I need them for birthday parties this weekend and they keep eating them! I will be making these again :)

Just popped a batch in the oven. While I'm waiting, last time I ordered a muffin from a cafe it came out with baking paper wrapped around it and I thought I would share this easy cheap method. Cut along the black lines and push into muffin tray hole. Fits poifeck

Fabulous Amy, thought about the oil & said it would work as you use oil in zuchinni slice.
I made 1 batch using 20g parmesan cheese, 80g ceddar & 125g silverside as I had some left over.
I got 22 from this batch.
Great way to use up silverside.
Taking some to a friends for melbourne cup, just the 2 of us, quiet one.
Getting frustrated, painful to cook.

They are good. Great way for me to use my mass production of zuchinnis. I have frozen 12 today, good for lunch boxes if you have no fresh bread, after school snacks etc, or even for dinner with salad. Great back up in the freezer. But i think I have back ups of back ups!! LOL

Going to put some in my freezer and take some to DD for her kids.
Will have tonight with salad for my dinner.
I also put in some Parmesan as well as cheddar simply because I love Parmesan.

And I also made some individual sized quiches for my best friend who is quite sick at the moment and her diet is very limited but eggs are really good for her. She can't have any meat so I omitted the ham and added in some red capsicum and spring onion instead. Looks kind of Christmassy with the red and green! Hope she likes them.

Made these today to take to school tomorrow.. Cooked corned beef first then mixed all up and put in a large bowl as like amy said is a bit too much for thermie.. Think it made around 90 mini muffins but hard to say exactly as they kept disappearing lol.. Told they are very moorish lol.. It surprised me as a quiche as quiche for me is always egfs and cream but with oil and flour why not.. They are yum and the only thing i did was put 1/3 of parmesan for the cheese and the rest tasty.. Thx amy ..

I had a good non stick mini pan and used nothing.. No paper or no oil etc.. Would depend on your pan..they just pop out

Well the fruit sticks went like hot cakes but not these :(. I think it's mainly because people didn't know what was in them.. We're a lot of people.. Also stopped a vegetarian mum about to pop one in her mouth.. Next time I will write what they are along the edge of the plate..they don't know what they were missing.. About half were eaten though and someone bought a pork pie that nobody touched lol..

It can help sometimes if you peel the dark green skin from the zucchini, then they don't look as healthy ;D

My son demolished these VERY happily. DH had a few. I got ONE out of the batch, and DD wouldn't try any, which is funny because they are all the things she loves more than anyone else.
Just need some more bacon to make another batch...I think I could put these in DS's lunchbox every day and he'd be more than happy.

Amy. Its a lovely tasty recipe..you should know its a Tough crowd.. Lots of hippies and vegetarians and alternative lifestyle types lol.. Think it would be impossible to please them all.. There were cupcakes fruit and vegie sticks and dips mainly.. Not your typical bring a plate menu.. Well i didnt think so ..😉

No time like the present.... I happened to have the ingredients for these so decided to make them for dinner tonight. I only made a 1/2 batch and put the entire mixture into a slice tray rather than make individual muffins.
Now I know why these are a favourite with forum members. Really nice Amy and so quick and easy to make.

I made these today and here is the verdict from my 3 boys (all with very different tastes and can be a little bit fussy at times). I made in a large muffin tin and the mixture made 20.
DS8 Yummm ! and ate 4
DS6 The fussiest of all and doesn't like quiche. Ate one saying he didn't like them with a big grin on his face saying I don't like quiche ! and then proceeded to eat 2 ! Quite good for my fusspot !
DS4 not feeling the best today and has a sore mouth, at 1 (not too bad after a big bowl of yoghurt.
I had 3 and loved them.
AND the best news of all ........................ no mess from my 3 little messy eaters ! so that saved me sweeping the floor !!

Just cooked a batch of these....found MORE zucchinis in my garden ready to be picked, and had a sad TM on my bench that hadn't been used for a few weeks...so ......
YUM, ate hot from oven, then quickly froze the rest so there would be some later!!! :)

We had a similar note for kinder share lunch this week only teacher put a list up of what food she wanted and each family chose which option they would bring. I am doing vegie sausage rolls.

They worked fine with gluten free flour. I also added a carrot this time, and DH took them to his work Christmas lunch and the container came home empty ;)

Hey DJ, I think you could use capsicum, carrot, corn kernels, sweet potato or a mixture. Just chop them like you would the zucchini. The corn might be nice in a chunkier texture though. Hope this helps! :D

Amy - just made 24 minis and 12 regular size "muffins" - minis for DS to take on car trip - regular for a neighbour and me . . . :D They are just soooo good!! Thanks again for this!! (Only tweak was to use up some left over smoked ham rather than the bacon . .)

DJ - as zucchini has a high water content you may need to add more liquid to the mix if you are using different veg. :)

I whipped up a batch of these last night when I learnt I was going to be able to go to my GD's birthday lunch - 2 dozen mini quiches for the party and 1 dozen mini loaves for us.

Took 4 to work today from freezer.
Heated in Aga at work, served with one made coleslaw from apple, carrot and red cabbage.
Very yummo

Just made a batch 1/2 with am 1/2 with 60g spinach. I must say the chopped up fresh baby spinach in these is yum

I used the zucchini, carrot, some semi sundried tomato and a heap of baby spinach.
They were delicious and kids loved them. A great way of getting veggies into the fussy eaters.
We have two little ones that don't like veggies but they ate these little quiches and asked for more ;D

I've been making these yummy quiches each week for lunches (4 wks in a row now) since I discovered the recipe (thanks, Amy!). Today, I added a medium sized carrot and upped the SR flour by 20g to compensate for the extra carrot. Family loves these. I get a big smile from the toddler (18mths) when he sees the quiche in front of him for lunch. :)

I made this recipe a couple of days ago but had no oil to grease my little pans, so I put a sheet of baking paper in a pie dish and cooked it like that. I also subsituted 2 small tins of salmon for the bacon, and added some stock since there would not have been any saltiness from the bacon. I added carrot too :)

It is a good vegetarian alternative. I have used it many times and no one knows the difference when it is chopped up.
When we had our Blue Mountains get together, we went to a vegan restaurant and I had the BLT which used Sanitariam soy rashers. It was OK in a big slice, a tiny bit thewy but that may be that it was over cooked slightly.

Made a double batch of these yesterday :D Chopped everything individually in TMX and transferred to a large mixing bowl, then mixed batter in TMX and added to mixing bowl. Still a bit messy but less messy than when I tried to mix it all in TMX ;)
Used gluten free flour, came out just as nice as regular flour :D

Hi Amy, I was holding a pink ribbon day for cancer and was providing some of the food, and thought I needed something hot and savory made your quiches, I used puff pastry as the base with the ends overlaping for effect and it was a hug sucess and everyone loved them went in a shot, pity I didnt make more, very tasty. loved them.

These are delicious Amy. Thanks for the recipe. The kids had them in their lunches and thought they were even better cold the next day. Great alternative to sandwiches or rolls. When I made them, I only got to cook half the batter as I had to suddenly go out. I cooked the remaining batter the following day and there was absolutely no difference in taste or texture. They are terrific.

Wanted to make something really quickly tonight having decided at the last minute to go to a meeting. Completely out of butter and a few other things, but had enough to make these: a mixture of the cheddar and parmesan, didn't have any bacon but had chorizo; and a mixture of zucchini and carrot. Baked 24 mini muffins and took those to the meeting (all gone) and the rest went into a rectangular pan - and I'll take some of that to work tomorrow for lunch . . .

I would keep them in the fridge BZB or do you mean make them the night before, refrigerate them then take them to school for the end of year festivities and perhaps not be able to be refrigerated? I'd pack them in an esky or in a freezer bag with those solid ice blocks.

I've successfully kept them in the fridge for a few days. They are actually muffins, not quiches (quiches don't have flour in the mix) but taste good just the same. They really need the bacon, a bit bland if you don't use it.
