2ND POSTING AFTER FIRST BATCH DID NOT SET PROPERLY - the following recipe is excellent !!!!!!! I also reduced the glucose to 1 tabsp compared to the first version which used 2 tabsp. Enjoy
Cookies and Cream Fudge - adapted from www.bestrecipes.com.au - recipe no. 10 981
Ingredients
1 can condensed milk
1 cup castor sugar
125g butter
1 tabsp (25g) liquid glucose (available form supermarkets)
200g white chocolate - chopped
1/2 x 150g pkt Oreo biscuits - chopped = 7 biscuits it is easier to simply break biscuits to save amount of crumbs when chopped
Method
1. Add to TM bowl milk, butter, sugar and glucose - cook 100⁰ C - 8 mins - speed 3
2. Scrape the sides and bottom of bowl with flexible plate scraper
3. Cook further 20mins varoma temp - speed 3 - add an extra 2 mins of cooking time if a more caramelised result is desired
4. Add chopped chocolate and Oreo biscuits - stir through 10 secs - :-: - speed 3-4 - until choc is melted
3. Pour into lined square pan or slice tray - refrigerate until set. Slice into small squares - this time it cut perfectly.
These pics look as though the cut fudge is from a different batch - but be assured this is not the case, photography is not my long suit!!!

Slice into squares using hot knife.
andie had a hint the other day with cutting slices etc, and that was tying some dental floss around 2 corks and using this to get a good clean cut.

Love the look & sound of this fudge, but oh boy will need to brush the teeth afterwards - that's a lot of potential tooth decay there, besides the extra tire around the middle. Did, I say I like the look & sound of this fudge?? Yummo!

Made another batch this morning and this was even tastier as I cooked for 2 mins longer which allowed the sugar to caramelise further, tasted like russian caramel but creamier -(the TMX does a far better job than I - standing for 20/25 mins stirring while the caramelisation was happening). ;D ;D

Made this tonight - so easy and soooooo yummy!
I cooked it the extra 2 minutes that johnro suggested, and it went all gorgeous and caramel-ish.
Dangerous though ...... I burnt my finger and my tongue doing a little taste test of the hot mixture :P
I also recommend cleaning out the TMX asap - or at least soaking it immediately. I left it for a few minutes while I cleaned up other things, and the set fudge was much harder to get off that it would have been if I had done it straight away.

Johnro, have you altered the recipe to accommodate the extra 2 minutes or do we add it to the 20 minutes?

JD as yet I have not added the extra time but will amend that right now. Cheers :) Thanks for cleaning tips KJH, it comes as second nature to immediately put water into any equipment after making any type of confectionery (a result of being the convenor of the sweets making for school fetes etc) thanks again :) :)

I've never made confectionery before johnro, and so I didnt know about the cleaning thing! Your recipe was my first effort at any kind of confectionery, and it was so easy that I am now inspired to try much more!
That is the amazing thing about the TMX - I have been cooking so many things that I have never had the time or confidence to try before - jams, sauces, chutney, lemon curd etc etc ... not so good for the hips and thighs!!
I brought a plate of the fudge in to work for our Christmas party - instant hit with everyone.

Thanks for this recipe Robyn. My first batch of fudge and a huge success. Enough for at least 4 gift packs to friends plus my hairdresser and DD's hamper. Goodness knows how many pieces went into my mouth whilst I was chopping it up :-)) :-))
No trouble washing the bowl immediately, covered the blades with hot water, added a squirt of dishwashing liquid and it was clean in no time.

Since initially posting this after converting for TMX - I have made in excess of 20 batches, with the most recent being for a Mother's Day afternoon today. A couple of modifications to the initial posting - breaking the biscuits (I do 2 at a time breaking into 6-7 pieces) produces fewer crumbs than chopping with knife plus you will be able to save some time as there is no longer need to stop and scrape down the bowl during 20 mins cooking time. All batches have been successful after the 8 min scrape down, after which you only need follow recipe temp / time and wait - perfect each time!!! Happy Mother's day to all!

Chelsea this was the original thread but after making it so many times I simply changed it with the title 2nd posting - with the exception of the amount of glucose there were no other changes to ingredients, just streamlining of the recipe. :) :) Did that make any sense?? xx

Perfect sense!!! :) The recipe works brilliantly so your streamlining has paid off. Hubby isn't a sweet tooth at all and even he is on his third piece!

Thank you for sharing this one... I just made it tonight for my father in law who is in hospital having a knee reco. I am not a fan of fudge at all but :o this is devine! I might have to make another batch just for us, lol. It was sooooo easy. It could be a whole new business venture this fudge could even be very addicting. The flavours are endless and the texture I love it. I think I was put off other fudges because of the texture this one is so smooth.

Oh Denise! Thank you, my tummy loves you but my teeth won't.
Robyn, as the recipe says, it's a Scottish treat (which I grew up eating in Northern Ireland, could be expensive). Basically it's a hard fudge the crumbles deliciously as you eat it.
[edit] hmm not sure I can get condensed milk here, missus not sure either. Will need to investigate.

Everyone here never stops at a piece Uni, so it is almost bite size in this house. I have been known to make a batch for a particular occasion then keep nibbling so now I buy condensed milk in lots of 3 :o - no will power here when it comes to this fudge :) :)

Johnro, I think I love you! It is delicious and so much easier than on the stove top. I make a lovely caramel slice that is also going to be easier with TMX.
Bugger the diet! It almost christmas.

Do you need to keep the Fudge recipes in the fridge? I wanted to put them in a hamper and wonder how long you could wrap it before christmas.

Denise I was obviously posting at the same time as your question - the choc (tablet which I made yesterday)fudge (http://www.forumthermomix.com/index.php?topic=7894.0) keeps better out of the fridge for an extended period of time - the cookies and cream fudge as a result of the choc inclusion maybe best kept chilled or at least when you make it choose the longer cooking time to further caramelise the sugar/condensed milk, therefore helping extend the shelf life. Judy may be able to provide some input as she made cookies and cream fudge for Christmas gifts/hampers last year. I usually only do it a few days before putting the hamper together for gift giving. Hope I have not added to the confusion of this time:) :)

It is over 12 months since I made the Cookies & Cream Fudge for my hampers, looking back, I see I made it on the 21st December. I packaged it up and kept it in the fridge until handing the hampers out over Christmas but I especially made it for one friend with whom I did not catch up with until the end of March (aren't diaries great!). Hers was not fudgy like the fresher fudge, it was more like a caramel sweet - still very nice though. I would therefore advise that you could make it a good week or so in advance of your gift giving and keep it in a zip lock bag in the fridge.

I'm not the greatest snacker around Cookie but I did occasionally pinch one from my friend's pack to make sure it was still suitable to hand over. I certainly don't take after my Mum, when I give her things she goes through them so fast :o

Made a batch today, omitted the oreos and for my year 8 class today added craisins and pistashios (thought that I should at least look as though I am attempting to be aware of the Healthy Schools policy). Unfortunately no camera on hand and none left to bring home - so only one choice will need to make another batch!! :) :D

Judy I am really going to throw the cat among the pigeons now by telling you that I make a marshmallow fudge which needs to be kept cold (uses melted white choc, butter and pink and white marshmallows). I don't enjoy it as much as it is very sickly sweet but all of Allan's staff devour it as part of a Christmas tray of goodies which I send in on the day they close prior to the Christmas break. :) :)

OK, I think the solution will be that whenever you post a fudge recipe Robyn, you could perhaps include storage information. That way there would be no guessing. :-* :-*

How long should this take to set? I'm wanting to make it for a christmas party early this evening. Have a mostly empty bar fridge that it can have to itself, but I know confectionary takes ages to cool down so I'm not sure that it can actually set as well in time for a 6pm party....

I keep buying cookies, so I can make this recipe, but they disappear before I can find a time slot to make it. Good idea about the berries/cranberries and nuts - maybe I'll just make this fudge and try and use whatever I have in my cupboard. I need to do a test batch anyway.

Thanks, I'll let you know how the cranberry and pistachio fudge turns out. I still want to try making the cookie and cream fudge for gifts. I'll just have to buy the cookies and come home and make the fudge immediately (before the cookies are discovered by the small people).

Silly me, I forgot i needed liquid glucose and need to make it today and the nearest shop is over 35kms away and they probably don't stock it. Has anyone made it without or used a substitue????

Just make this with cranberry and pistachio, in the fridge setting as I type. So easy to make, will report back later when I have tried some.

DG this works fine without glucose - just a Little firmer (my preference actually) - the glucose helps prevent the formation of large sugar crystals and given the original recipe is made in the m'wave using 2 tabsp glucose with very little stirring, hence the need for this ingredient. As a result of the continual movement of the mixture in thermie the recipe is perfect every time with or without glucose - I have lost count of the number of times I have now made this in TMX. :) :)

YUM Johnro! Have just made my first batch of this and it is currently setting but having licked the bowl think it wont be my last batch!! I am someone who needs to follow a recipe but was thinking would it be ok omitting the oreos and white chocolate and instead using dark or milk chocolate and roasted almonds. Do you think this would be ok? Also was interested in the freezing question - would be so handy to make some and have to hand out closer to Christmas.

Shazzy this one needs to be kept in the fridge - rule of thumb - if the confectionery contains chocolate for optimum quality - keep cool. = refrigeration in Oz. I have used milk choc and also did a batch through the week using cranberries and pistachios. I have 3 batches in the freezer having made them this morn - made this so many times and now I don't stop to scrape bowl just cook 10mins at 100degs speed 4 and a further 22mins (I like the darker caramel colour) at varoma temp - speed 3 - then add the choc and nuts/oreos of choice. :) :)

How long will it keep in the fridge? If I am giving them out as presents mid next week should I put it in the freezer now. I made two batches yesterday - yum!

Thanks! I made Tenina's peanut butter fudge today and asked Hubby what he thought of it. His reply was "I would think it was really nice if I hadn't just had a piece of cookies and cream fudge". ;D

I made this last night and yummo...I wonder if I can halve the white chocolate and double the oreo cookies? All I can taste is white chocolate (which I love) but am thinking the cookie part would be goodto taste too...lol

Made another batch last night - halved the sugar and used dark chocolate and roasted almonds. Might even experiment with reducing the sugar further.

urgent question...i cant find liquid glucose anywhere (ive read its a type of corn syrup me thinking it was just sugar syrup....do i need it in the recipe or can i replace it with something else???...

Made this and it was fantastic! Loved the taste, texture and how easy it was to make. The whole batch disappeared way too quickly so will have to make more. Thanks for such a terrific recipe.
Can I ask what the glucose does? Just curious as some of the other recipes don't seem to have it and I really loved yours.

i think it does not crystallize :-))

Moo2, Fundj is correct, glucose is used to prevent the sugar from crystallising (going grainy) during boiling, however it is a successful end result without glucose. I discovered this when I have forgotten to put it in a couple of batches - the fudge is probably a little harder :) :)

I've just made a batch and my husband has declared it to be "the best fudge he's ever eaten". High praise indeed! :)
Just wondering what other variations people might have tried to get some different flavours - eg Baileys or other liqueur? peanut butter? butterscotch? caramel? dark chocolate and nuts?
I thought probably I could just add peanut butter/liqueur/dark choc/nuts at the end in place of the cookies...but would I still need the white choc? Could you substitute brown sugar or add some golden syrup to get caramel fudge instead?

I love this fudge too!! I love the original version but its fun to experiment. I have omitted the white chocolate and all the sugar and replaced with 70% dark choc and a teaspoon of peppermint essence, although next time I will make it two teaspoons of peppermint essence as it wasn't quite minty enough. Oh and I used the full packet of Oreos rather than half. Next time I was thinking of liqueur also as I have some Kalhua, for a coffee flavour and maybe another one with the butterscotch schnapps I have in the cupboard...

yum, I finally made a batch of this fudge - and I ate way to much. Instead of liquid glucose I used 1 tsp of powdered glucose (also known as dextrose, or Traubenzucker in German) - and is available from any Drogerie or Apotheke, in Switzerland.

So pleased you enjoyed this very moorish treat Cheryl - I have made this w'out glucose (simply because I forgot to add it and the resulting product has a slightly harder fudge, less caramel texture!!!!!) :) :)

Janey you can substitute either milk or dark choc instead of the white choc or use any combination of nuts instead of oreoes - it is so very moorish!!!!! :) :)

On the weekend I paid $4.90 for 100gm of Montville fudge (it was lovely..).. With this recipe I have made almost a kilo of the smoothest creamiest fudge I have ever eaten!! for approxiamtely the same price... savings of $45 per kilo!!

I tried to make this today however mine did not set like fudge.
It is very very yummy but it like hard caramel, perfect for putting in a flan crust and having caramel pie if that makes sense.
What do you think happened here? I followed the directions exactly. :-\

BekLE that is unfortunate - when fudge does not set properly it may need longer cooking time or traditionally it had not reached softball temp. However the times I included in this recipe resulted from making the first few batches using the candy thermometer so that I could know the timing. I have made in excess of 20 batches and except for the first one have never had a problem. I amended the recipe posted after the initial batch. Hope that you have success if you decide to attempt again. It matters little whether glucose is included - just a slightly softer fudge!!! :) :)

Just made another batch whilst emptying dishwasher.
Wasnt concentrating added Oreos then cooked for 20 mins, looks darker & tastes more chocolatet. Added white chocolate correctly.

DJ I haven't used the glucose in my last two batches and haven't noticed any difference in the look or texture when I've cut the fudge and it's all been eaten so I guess no one else noticed either. I am glad you mentined the glycerin though as when i was looking through the cake decorating box I noticed a bottle of glycerin and thought - 'ahh that's where my glocuse is' so I would have put it in my next batch if you hadn't pointed out your mistake!!

Had a go at this today, made a couple of changes so that I didn't have to go shopping :)

Oh choc chips are a great idea. I usually buy Oreos specifically for this one....nice to know that choc chips work as I usually have them in the cupboard (unless DH has eaten them :-\ )

DH brought home the glucose syrup today, and I made the fudge tonight.
We had the scrapings, yummo!
Think you are all right, dangerous stuff, just make and give away. QUICKLY.

Started to cut it when cold but put back in fridge and will cut tomorrow.
Taking to a collagues get together tomorrow with Chookies bread and a christmassy brioche. Will report.

Yep, I used the choc chips in place of the chopped white choc and it melted in and made milk choc fudge. I didn't replace the glucose and it was fine without it :)

I crushed up 3 Crunchie bars and stirred through instead of the oreos. And Hey presto HoneyComb fudge. Yummm

I don't know what weight they were but they were about five inches long. It was a spur of the moment idea when I was at the supermarket. They were just sort of sittng there, at the checkout, looking at me, as those sort of things do. I thought I wonder what Honeycomb fudge would be like. Anyway it's very nice. A couple of Violet Crumble bars would probably be good too. Or some Turkish delight or mini M$Ms or.......

This was a big hit. I also ditched the cookies and substituted dark cadbury chocolate to make chocolate fudge. That was awesome too. I didn't have glucose syrup, but found on a baking site, that lite corn syrup could be substituted, so I used that. I gave these two and the salted caramel fudge as gifts. I put a selection of the three in little open boxes that I prettied up with clear cellophane and ribbon. They were very very well recieved.

Just starting to make this for my sister in law now. She wants a contreau version and as I dont drink I have no idea how much to put in. I have looked at some other versions and they vary anywhere from 1/4 cup to 1tbsn. Has anyone done this and any idea how much to put in??? Thanks

I made the dark chocolate, orange fudge and used 50 ml of grand Marnier in that one and it tasted delicious.

....decided to put this out of harms way in the freezer, wouldn't you know it, tastes even better from there!!!! I made another batch of this tonight for a shared lunch tomorrow (I chose sweets)...it was great to have 'on the go' whilst we were eating dinner as I only had to attend to it three times....once at the start, again after 10 minutes and then again after 20 minutes...done!

This is our favourite fudge, experimented with some chocolate condensed milk i foung in aldi and added milk choc buttons its all i had as well as oreos. Worked a treat

I helped the GK's make this today with a few tweaks due to the mysterious disappearance of my white chocolate and oreo cookies from my pantry.
I used 160g of Cadbury milk chocolate melts as that's all that I had and used 8 TimTams and a splash of vanilla essence.
They were delicious although I do prefer the cookies and cream original recipe but the kids preferred this as they love TimTams. ( as well as the fact that they were allowed to put the ingredients into the bowl and spread the mix in the tray)(http://img.tapatalk.com/d/13/07/18/2ebemamy.jpg)

hello, Im thinking of recipes for christmas gifts and this is one I have been saving for the occasion!. Just a question regarding packaging, how do others package it up to show it off to the max? cello bags? does it sit ok on top of each other? or does it need to be flat in a single layer? Dont want it to go all squishy and melty.

I like to put it randomly in a bowl/on a plate that will be part of the gift and then wrap in cello bag tied with a bow. I also buy a tub of mini oreos and push a few (maybe 10) into the fudge after I've spread it into the tray...They add a little something (not that this fudge needs any extras though :D:D ). Ill take a photo next time. .. would love to see your finished gifts too :)

I just had my first go at making this and wrecked it and nearly cried. :'(
Was I meant to leave the MC off while cooking???
I'm only a newby and didn't see it anywhere where it says to leave it off.
All was good until I added the chocolate and after mixing it, it was lumpy and had separated into alot of water and a lumpy mess.
I've drained the water and put the lumpy solid stuff into the tray anyway as my partner will eat just about anything.
Do you think the cause was the MC or did I overcook the chocolate?
Its set with a butter like residue on top and the texture is very grainy :-(

Yes I think perhaps the condensation from leaving the mc on has made water come into contact with the chocolate and maybe the chocolate has seized :(
The good news is that it is probably still edible, the texture will be affected more than the taste I would think... some clever slicing night make the best of a sad situation....I would probably have cried too. Good luck!

Turns out I'm a complete idiot! lol
I spent ages reading up on fudge to find out what I did wrong. I Was convinced it was the MC being on that did it so I hit the kitchen again to re-try. I was putting all the ingredients in for the second batch and then read the words "condensed milk" I had completely forgot to put it in in the first batch! Looks like I had more then 1 blooper on my first attempt. lol Fingers crossed they are all out of my system and it's all smooth fudge from here on ;D

Made three lots today while unpacking the kitchen so I misread the ingredients. NB Need to wear my GLASSES!!!
First batch only put 100g white choc in, second batch put same choc and undercooked by 5 mins, misread time and did first cook 3 mins only.
Third batch put 130g milk choc and chopped whole almonds in for a gluten free pressie.
All in fridge, will cut and report tomorrow.
Am sure will all be fine ;D

Why not pop over to the introduce yourself section on the Home Page and tell us a bit about yourself, where you are from, how long you've had your Thermomix etc.

Yes, I agree. I always have the ingredients on hand and ready to go for last minute gifts/morning tea etc.
It's a real winner here as I usually start the process as we sit down for dinner and only get up once or twice to stir it. Then put it in the fridge overnight and it's a fuss free affair :)

There are all sorts of combinations of spices, black or green tea with water and milk; can add honey or sugar. I have several "recipes" that were gleaned from what now appears to be a defunct website. Happy to post them if anyone is interested . . . :)

Just made this.. Almost foolproof .. The first try (which is in the fridge) I was thinking of something else and added the chocolate before cooking at varoma for 20 mins :( went ahead and wel'll see how it turns out. Made a second batch which has turned out perfectly- even before going into the fridge! Super easy IF you follow the directions and very popular!! Can't add photo- tapatalk and I aren't on speaking terms right now :(

Made two batches of this yesterday, it remains the family favourite, made once a year only. Also made a version of chocolate peppermint from Trudy, a sort of mix of the two recipes.
