What oil should I use in butter?
« on: May 05, 2014, 06:17:52 am »
I am making butter for the first time. I want to add some salt and oil but don't know which kind of oil, and also how much salt and oil to add. I only used 300ml of cream because that's what I had.

I use the same AB.  Go easy on the salt, my first attempt was spoiled because I was heavy handed with the salt.

There is no such thing as too much salt in butter Bedlam. I usually use 600ml cream and add about 3/4 tsp of Murray river pink sea salt flakes. I never add oil.

I agree Dan and I sometimes add grape seed oil as I cannot leave butter out here. Nice to have it spreadable straight from the fridge sometimes.

I have added Rice Bran oil and EVOO.  Best to pick an oil that won't detract from the taste of the butter.  I add very little salt.

Hi Purtig. I use olive oil from Coles that is extra mild in flavour. 20-25 g per 600g cream. No salt.

I find olive oil too strong. Macadamia or grape seed is my preferred.

It's interesting reading the different things people use.
May all dairy items in your fridge be of questionable vintage.
