DD coming for Dinner. Grilled salmon with prawn sauce. Mashed potato and cold slaw. Blueberries, Greek yogurt and sprinkled with Carmen cereal.

We had a thick vegetable soup with Cheese, Bacon and Onion scrolls.

DD loves Japanese Eggplant. Recently we went to a posh Japanese Restaurant and the Eggplant dish was $30 for a small serve. I made some. Very easy but did have to buy some Miso paste. DD said it was equal to what she had at the restaurant. Vegan and easy.
I have 2 roasted chicken breasts and some leftover cheese sauce. I’ll make chicken mushroom pies in the pie machine.
Ballarat is having a month long pie competition. Some are not very good.ill try adding a photo. Probably won’t work.

Cauli and parsnip soup again. Lots of parsley. Toast with TMX Anchovy and Tuna spread.

While reading about Japanese bread, I noticed that they score the thick slices in a diamond pattern. I’m not sure if it is then toasted.

GC amazed me last night. They loved the Chicken filo triangles. Kept saying how good they were. It was a good way to use up leftover BBQ chicken. Basically leftover chicken breast, diced, creamed Sweet corn, cheese sauce and something to give a little kick. ( I used wasabi stalked but a pinch of chilli powder would do) . Used olive oil to brush sheets of filo.
