Last night we had Sweet & Sour Chicken with rice.  Not sure what to have tonight.

I made half of this recipe for DH and GS.  They both loved it.  GS had it on its own and DH had a side salad with his.  Only a little left which GS said he'd like for lunch today.  ;D

Didn't get a chance to take a photo of this one, but I will make it again.  :D

Family here tonight and as I’m struggling with a chest infection they’ve gone for fish and chips, for pudding I’ve made a syrup sponge. Almost forgotten how to make puddings as I only eat fruit when I’m on my own. !!

Bought 2 rolled and stuffed chicken thighs from our special butcher.  Will roast them in the BBQ .  Will serve with steamed veggies. Fresh fruit salad.

Thanks Judy.  Yes he's been enjoying most things I've made and I've enjoyed having an extra person to cook/bake for  ;D

We had baked beans on toast with egg and bacon on the top. One of my favourite meals.
May all dairy items in your fridge be of questionable vintage.

Mine too cookie but unfortunately I can’t have baked beans on this Keto way of eating.  I did make myself a big omelette with a filling of spinach, cheese and tomato tonight.

After reading Cookie and Judys meals,  I have come to the conclusion that I like most food.  There isn’t much that I don’t enjoy.  That is probably why I enjoy Julies eye candy , also.!
Tonight, chicken breast some way. As it’s cold today, steamed veggies.

I did make myself a big omelette with a filling of spinach, cheese and tomato tonight.

Judy I made a nice one on NYE for my dinner.  Another MB recipe which had sweetcorn, toms, spinach and spring onions as the filling with a sprinkle of parmesan.  I used a 20cm frypan which was too small so made it hard to flip it properly without breaking open.  Didn't matter though as it tasted good.  Will use a bigger pan next time.  :D

Well this soup was delicious!  It’s a recipe from Tmix+ mag #14, called ‘Spiced cauliflower & dumpling soup’.

I decided to try out using the High Heat mode for cooking the onions at the beginning then carried on with the recipe from the mag, it worked a treat.

I used chicken stock instead of veg as we prefer the flavour, reduced the paprika somewhat and except for maybe cutting the cauli florets a bit smaller so I wouldn’t need to cook it for 4 mins longer which made the dumplings break apart a bit, it turned out excellent and no uncooked onion taste at all  :P, was so good. 

DH has asked if I could make him some for work, especially for nightshift.  I have enough of everything so will do that in the next couple of days.

I didn’t serve any bread with the soup as I was planning on making a dessert.  I made RTE’s  ‘Butterscotch self-saucing pudding’.  I used her ingredients and quantities but used Tenina’s method.  One quirky thing I did was instead of boiling the kettle to make hot water for the sauce, I used the function I didn’t think I would ever use; the Boil kettle mode.  I put the right amount of water in the empty bowl and set it to that mode and stopped it when the water started to boil onto the lid.  Added the other sauce ingredients and carried on with the recipe.  I had a taste and it was really nice, not as overly sweet like some I've tasted.

It made 7 serves, so I've put 6 lots into containers and made a runny custard to pour over as a lot of the sauce has now soaked into the cake.  They are now in the freezer.  It was a good day cooking.  ;D
