Chit Chat / What have you been doing today?

I thought this might make an interesting thread as there are so many members in different countries, states and time zones. For some of us the seasons are back to front etc etc.

If you have a moment and want to share  please post what you have been doing.
Some days will be exciting, some boring, and some  I'm sure we'd even rather forget. And just now and then there may be one we want to remember forever!

Today was nothing special but it has been a good day and I have enjoyed it.
 I did 2 hrs work ( admin), rode my pony for an hour in the sunshine, made muffins in my lunch break, and gardened for 4 hrs on top of normal domestic stuff. My DD came home from Uni tonight too.
I am trying to make a new garden from scratch and 3 days rain is predicted from tonight so I tried to get as much planted as I could. It is really hard going as there are 3 terraces that have been neglected for so many years. I have to dig in compost into ground that has not been turned before, avoiding tree roots and it is very slow, but I have 2/3 of one terrace planted now with packets of seed in the gaps.

How many times a day do you run your dishwasher?

2 to 3 times / day would be my normal as I put pans, Thermy , all plates etc.

However with houseful it can be 4 times and I wondered if that was OTT and what everyone else did?

After supper last night had both Thermy bowls in. One from cookies and one from sauce.

I do also wash up stuff either because I need to use it immediately or is not DW proof.

Look forward to your replies.

Has anyone been to a Dani Valent demo  to promote her new book and is it good value?
Quite a way to travel for me, so,high fuel costs but can sort of tie itin with something else the day before.

Also is the book In the mix worth having?

Soups / Carrot and Coriander

Name of Recipe: carrot and coriander
Converted/adapted from The Soup Bible edited by Debra Mayhew

Number of People: 4 - 6 depending on main course or starter

Ingredients: 50 g butter
3 leeks (or 2 large leeks) cleaned and cut into 4
450 g carrots or 3 large carrots peeled and cut into 4
3 t ground coriander (15ml)
S & p
I litre good chicken stock ( or whatever stock you like)

Garnish Greek yogurt or natural and chopped fresh coriander



Preparation: put butter in  *: add carrots first then leeks, chop on 4  even sized. I am not 100% on timings so watched carefully.
Sweat 10 mins 100 speed 2
Add coriander for another minute as above.

Add 1 litre chicken stock. Cook until done speed 2  :-:  mine took 17 minutes today. The original recipe had sliced veggies and after sweating suggested cooking 20 mins or until done.

Blitz until smooth. Add either more stock or a bit of milk if too thick. If too thin use less stock next time. ( Personal preference)
Add 2 T Greek yogurt, just mix in.
Taste and adjust seasoning if

Serve in bowls with 1 spoon yogurt in bowl and scatter chopped fresh coriander over top,

If freezing omit yogurt, and add on reheating.

Tips/Hints: if you like bitty soup omit final blending. I wore oven gloves and put my hand over top of MC while blitzing. The quantity reached just below the max marker.
the original recipe suggested 1.2 litre but that is runny. My own preference is for thicker soup so I put less than the litre in. It does also depend on size of leeks and carrots.

Today I used parsley as had no coriander.

Sorry cant remember how to post photos via iPad, it is soup and orange will that do?

Has anyone been to one?
Cost £30, plus a lot of fuel for 2.5 hrs.
Plus book is £40

Chit Chat / Low sugar jam recipes ???? Help please

Can anyone help?

I can buy from France ( in the supermarket)  jam made with no added sugar, they use concentrated fruit juice. It is brilliant on home made yogurt.

It is soft fruit season and I came one with cherries today bought on the side of the road. Can anyone point me in the direction of low sugar jam or compote ( needs to keep in jars) .

I don't have access to this often mentioned substitute rapadura (?spelling) and won't use chemical sweeteners.

Cakes / Strawberry streusel muffins

Strawberry Streusel Muffins

Imagine can be made with any fruit. I just had squashy strawbs to use up and made this up today based on something we had when away called strawberry shortcake.

 I think strawberry shortcake is shortbread cream and strawbs, but this was a cake, cooked strawbs and some sort of topping.

Also could be made as cake or tray bake cut into pieces, increase baking time accordingly.

225 g SR flour
1 level t BP
75g butter
75g castor sug
150g milk (or buttermilk)

Chuck all into TMX togther mix till very smooth. Spoon into 9 large muffin cases in a deep muffin tin ( or cake tin)

I made a little hollow in the mixture and added a good dessert spoon of chopped soft strawberries ( and a few rasps) into each one and pressed down lightly.

Streusel Topping
25g SR flour
50g light brown sugar ( or dark brown, whatever you prefer or have in cupboard)
Add 25 g melted butter ( I used microwave)
mix well, I used my fingers at the end.

Sprinkle evenly using fingers over the fruit muffins. I think perhaps for muffins I need to increase slightly to 30 and 60 gms as I barely had enough to cover fruit.

Bake 180 ish 20 to 25 mins till cake batter all cooked when skewer comes out clean
Depends on oven.

I used Aga baking oven first set of runners for 24 mins

Serve warm with custard, cream or ice cream.
Freeze remainder.

Will report when family have eaten them.

Non Thermomix Recipes / Fatless sponge

Fatless sponge

3 eggs large
3 ozs castor sugar
3 ozs SR flour sifted twice
1&1/2 (1.5) Tblsp boiling water

I use Kenwood. can use electric hand whisk, have NOT tried  *:
Beat eggs for a minute, add sugar and beat until white and to a ribbon consistency. It takes a while and should leaves trail when you lift the beater.

Remove bowl from machine, gently sift the flour over the mix ( in 2 batches) and fold in carefully using figure of 8 method with a large metal spoon, turn the bowl slightly as you do this. Be gentle but make sure all the flour is incorporated.
Then add the boiling water and fold in.

Put in 1 9iinch greased and lined (base) tin .
Gently bang tin on work top before placing in preheated oven.
Bake medium hot oven until done.

Today s cake was made with 3 very large duck eggs and took 16 minutes @ 190 in Aga.

You know your oven and will soon work out best timings.

Can increase to 4 eggs and put in 2 sandwich tins.

I often use 5 eggs and 2 x 9" tins.

Can substitute cocoa powder for flour. About 20 - 25% depending on how many eggs.

I hope I have explained this well. It's a family favourite and today's cake had 1/4 pint whipped cream, mixed with 2 heaped T Greek yogurt covered with strawberries.

Often it is jam in middle, and sometimes glacé icing on top.
Or chocolate fudge frosting.
Or used as a topping for fruit as less fat than a traditional Victoria sponge.

The iPad is not same as a pc. Perhaps I need an app?

I wonder which cooking oil the brilliant cooks on here use most? And which oil is you think is healthiest, and why?
I find there is a lot of conflicting advice.

Desserts / Rhubarb crumble

Name of Recipe: rhubarb crumble
Number of People: 4+
Ingredients:
8 sticks thin rhubarb (420gms)
30 gms light brown sugar
1/4 rind of small orange and juice

100gm SR flour
70gm whole meal flour
100gm butter
60 gms demerara or brown sugar
40 gms porridge oats (  I used jumbo oats with seeds)
20 gms ground almonds (optional)

Preparation:
Cut rhubarb into even sized pieces in an oven proof dish.
Put sugar and orange rind in  *: Blitz til done. Add to rhubarb. Pour over juice of orange.

Without washing  *: add flours and butter. Mix til crumbs.
Add sugar, oats and almonds. Mix together  speed 1 pr 2 til mixed.

Tip onto fruit. Spread across dish, covering all fruit.
Bake 180' C 20 to 30 mins till golden brown on top and fruit cooked.

Some people may prefer to add 20gm more butter, but we try to stick to less!

Going to try the honey and mustard chicken or it may bork, depends what is in  freezer!

Brons garlic rice and steamed veggies.

Will make sauce then cook chicken in aga in sauce. Then cook rice and may try to steam veggies over rice.

Will report later.

Now off to find a pudding recipe.

Desserts / First custard Sauce made in TMX

Custard sauce
Makes half a pint / 300ml

300 ml milk
2 level T cornflour
25g sugar
1 egg
Few drops vanilla essence or use vanilla sugar.


if Australian tablespoons are larger it may come out too thick. Suggest try and see.

Put milk and cornflour into  *:
6 mins / 90 / speed 4

Add beaten egg and sugar, and mix til all blended. I think I did speed 4 or 5 for 20 secs but can't remember. It was very good with a rhubarb sponge.
Serve immediately or pour in jug and keep warm.

Anyone can tweak it into  *: speak for me if I am not quite right. I've made this for 30 yrs but only once in  *:
Only made this quantity. If doubled, might need longer time haven't tried that yet.

Uni suggests add lemon zest for more flavour. It has good reviews further on.

hillbilly - Thank you so much Droverjess. I searched for custard, came up with your post and it was made and in a bowl in ten minutes! I made it exactly as directed, Australian tablespoons are fine, flavour beautiful. This is my custard recipe forever!!

JD - DJ I made this tonight and because every custard I've made in the TMX all the ingredients go in together, I gaily went ahead and did the same then read the recipe. However, it worked perfectly and makes enough for 2 really good servings. So what I did again, throw everything into the bowl and cook for 6 mins/90o/speed 4 and it's a perfect pouring consistency. Thank you for your recipe.

Uni - I completely misread the method like I always do, all good in the end. Thanks. I did the same when I made it JD. For double recipe I cooked for 8 mins , perfect.

Greyhoundmum - day 2 of owning TMX for me and I have had the lemon custard twice, it is so easy and yum.
