This is a combination of a few gozoleme recipes I had and is quick, easy and delicious!!! ;D A great Friday or Saturday night dinner...
LAMB SPINACH & FETA GOZOLEME
Makes 8
Dough
300g self-raising flour, plus extra, to dust
300g greek yoghurt
Large pinch of salt
Olive oil, to grease
Lamb Filling
1 tbs olive oil
1 onion, quartered
1 garlic clove
500g lamb mince
2 tomatoes, deseeded
3 tbs parsley
3 tbs mint
2 tsp ground cumin
1 tsp ground coriander
½ tsp dried chili flakes
100g feta, crumbled
2 handfuls baby spinach
250g pizza cheese (mixed cheddar, parmesan & mozzarella)
Lemon wedges to serve
To make dough:
Sift flour into *: and add yoghurt and salt. Mix on speed 1 – 2 for a min or two until combined. :: for 2 minutes. Place in a lightly oiled bowl and cover with plastic wrap. Set aside for 30 minutes.
To make lamb filling:
Put parsley and mint in *: for 2 – 3 seconds speed 7. Remove and set aside.
Add tomatoes to *: for 3 – 4 seconds speed 4. Remove and set aside.
Add onion and garlic to *: and chop 2 – 3 seconds speed 7.
Heat the oil in a large frying pan over medium heat. Add onion and garlic and cook for 4-5 minutes or until soft. Remove and set aside. Increase heat to high, add lamb and cook, in batches, for 4-5 minutes or until browned all over. Remove from heat. Add onion and garlic, as well as remaining ingredients, and stir to combine. Set aside to cool for 10 minutes.
Assemby:
Divide dough into 8 portions, then roll each portion into a 12cm square. Divide filling among squares, placing at one end of each and folding over to enclose, pinching edges to seal.
Heat a lightly oiled frying pan or barbecue hotplate. Add gozoleme and cook for 2 - 3 minutes on each side or until golden brown. Transfer to serving plates and serve with lemon wedges.
Tips:
Dough can be made more than 30 mins ahead of time and left to sit.
I used packaged lamb mince and spices because I had them on hand but there is no reason that you couldn't do your own ;)

My GD and I made some awhile ago without a recipe. The dough was great but the filling was missing something so I can't wait to try these :)

On the list for this week. I have no lamb mince but do have pork, so will try with pork :)
Will use thyme instead of mint.
