Mango Custard (based on EDC recipe)

This is so simple and delicious.

Peel and chop 1 fresh mango (mine weighed about 330g).

Puree on speed 6 until smooth.

Add ingredients for EDC custard, but reduce sugar and omit vanilla:

500ml milk (I used skim)
2 eggs
40-50g sugar
50g cornflour


Cook 7 minutes/90 degrees/speed 4.

Pour into a glass dish and refrigerate until cold. (I put baking paper on top to stop a skin forming.)

Serve cold :D

Greyhoundmum - well it was a bit ordinary with canned mangoes!! i think it needs fresh mango, will try that and compare.

I love mangoes too but have never heard of mango custard - good one Amy, ground breaker you.

I love mango.  I only ever put 40-50g of sugar in my EDC custard as we find it very sweet. 
May all dairy items in your fridge be of questionable vintage.

Cookie, if you make this, you may want to reduce the sugar even more then ;)

Judy, I figured if mango flavoured yoghurt could work, why not custard? ;D

You're right Alexis, I also love this as banana custard ;D Just puree a couple of mushy bananas and then cook as per EDC. Yum! :D

I have made this for desert tonight with a rogue tin of mango slices I found in the pantry, will let you know how it goes ! thanks for the idea  Amy.

Hi MEP, yes the EDC recipe is for a hot custard, it thickens and sets upon cooling so can be used either way .
