Made this in individual portions for a lunch with friends today. Bacon, corn, peas, capsicum and shredded kale with tomato and parsley on top. So easy and soooo good. Thank you Chookie an absolute classic :) :)
(BTW makes 8 individual quiches each 12mm in diameter.)

I made this last weekend to send with my son to their first cricket match of the season. It was a big hit for afternoon tea. Think I'll be making a lot more this summer as we have chooks so plenty of eggs.

i think i will try this for dinner tonight, then maybe have left overs for lunch tomorrow.

Are you referring to the kale Chookie? I have loads of kale in the vegie patch so I cut leaves everyday and put them in just about everything ;D Healthy and delicious :) :)

Have just made a warm salad of spinach with a Hazelnut dressing,  I think Kale would be great in this as the dressing is very robust.  It is Tenina's recipe from her Blog.      Spinach, fennel and Hazelnuts.

Oh yes ;D ;D ;D I love feta and smoked salmon so this is the next quiche on the to do list.
Must confess that I absolutely detest mushrooms so I'm hoping that leaving them out won't affect the dish too much.

Also should confess that I regularly stalk your blog but have not yet figured out how to comment.

leave out the Mushrooms, add something else.  Very forgiving recipe.
