Tuna & Mushroom Noodles
« on: August 05, 2012, 06:04:24 am »
Name of Recipe: Tuna & Mushroom Noodles
Number of People: 6 serves
Ingredients:

180g vermicelli egg noodles (they're in bundles)
1200g boiling water
1/2 tsp salt

115g tasty cheese, diced

40g parmesan, diced
1 slice stale bread

1 tbspn butter
1 onion, cut in half
1/2 tspn Tenina's garlic paste
3 tblspns plain flour
300 mls chicken stock
250 mls milk
25 mls dry sherry (opt)
400g sliced button mushrooms
150g frozen peas
425g can tuna, drained & flaked
S & P to taste

Preparation:
Place the boiling water and pasta bundles into the TM bowl (tease the bundles with your fingers so they cook more evenly). Cook 10 mins/100o/reverse/soft speed/MC off.

Drain the pasta and place in a large, greased ovenproof dish - a lasagne dish is perfect.
Rinse the TM bowl and wipe dry.

Add the tasty cheese - grate 3 sec/speed 8.  Set aside.
Add the parmesan cheese and broken up piece of bread - grate 4 sec/speed 8. Set aside.

Add the butter & onion to the TM bowl.  Chop 2 sec/speed 5.
Saute 5 mins/varoma temp/speed 1/reverse.

Add the flour and cook 2 mins/100o/reverse/speed 1, scraping down halfway through.

Add chicken stock, milk, sherry, mushrooms, garlic paste and peas.
Cook 7 mins/100o/reverse/speed 1/MC off.

Add drained tuna and tasty cheese, stir with spatula through the lid to mix 20 sec/reverse/speed 2.
Mix into the noodles, add S & P to taste then top with the parmesan/bread mixture, spray with oil and bake 20 mins/180oC/ fan forced.

Good one. I can get rid of two cans in the pantry with this as I have some sliced button mushrooms I use for pizza . Love  Teninas garlic paste .

Hey Judy, I can't see where the paste is added, so I'm just adding it with the flour... ???

Sorry Amy, have amended the recipe.  Probably doesn't matter where it is added but I have altered it to read with the chicken stock etc.

I made a half quantity of this a while ago and wrote that the taste was awesome. It's on the menu for this week too.
