Recipe Requests / Baguette recipe that you also cook in TMX

I'm sure I came across a baguette recipe where you make the dough and cook it in the Varoma.....can't remember if it was on here on in a book somewhere but I can't find it now. I know there is one in FFS but I don't have that book so I've seen it somewhere else. Can anyone help?

Made this to go with the Polenta chips. Reduced cayenne pepper as thought it would be too spicy....maybe reduced it too much. I think 1/2 teaspoon would be ideal next time. Used rice bran oil instead of grapeseed as didn't have any as well as regular paprika instead of hungarian. After tasting it, it reminded me of the mayo i made for another recipe in the book...when i checked it was except for instead of herbs it had paprika and cayenne.

I want to make the spicy dipping sauce from QFITT but don't have Hungarian paprika. I have regular and smoked paprika.....which of these is the best alternative?

This was very simple to make. It is very thick and velvety when it finishes cooking. The only challenging part was breading it up after freezing overnight when it's time to serve. I ended up breaking one of the tupperware containers I had it in and that's after leaving it out for 10 mins to soften.

Tastes delicious though and is vegan so suitble for those who are are dairy free and egg free. Great texture.

I have come across this recently and gave it a go. 3 ingredients and apparently it's good for you.

Here is the recipe for a Thermomix from the Changing Habits website:

Bullet proof coffee - serves one

Ingredients
250ml freshly expressed black coffee
1 TBS ghee or unsalted butter
1 TBS changing habits coconut oil

Method
Place all ingredients into a pot and keep warm while using a bamix or latte whipper to froth the coconut oil and butter into the coffee.  Or if you have a thermomix place all ingredients into the TM bowl, for two minutes, speed 4, 70C, increase to speed 10 for last 10 seconds. 

I tried it and I don't mind the taste. The only thing lacking for me is sweetness as I like sugar in my coffee and I don't know if that would ruin the benefits.

Simple recipe however we didn't really find it filling enough for four and thinks it needs something else if having it for a main. The rice is quite soft and overcooked. Not sure why it has to cook for that long 8 +22 mins.

I didn't have fruit vinegar so substituted white wine vinegar. used cornflour for maize starch (should check the food glossary thread to see if this is correct), only had 15g soy sauce instead of 60g and used crushed pinapple from a tin as I didn't have fresh. I also didn't want to include soy bean sprouts so left that part out. It still tasted really nice after all this and was fine. I liked it appeals to my sweet tooth.

Vegan / Healthy Quinoa Bean Burger

QUINOA BEAN BURGER
   
Adapted from Peggy K’s Kitchen Cures book

This is a healthy meatless burger that will make you think you're eating meat when you're not. It is filling and stops cravings afterwards (for us at least). It can be a little spicy depending on how much chilli powder you use. Tasty & healthy. Here are some of the other benefits mentioned in the book:

    Gluten free (if don't use turkish bread)
    Nut free
    Soy free

Serves 4
Preparation: 20 minutes (once all ingredients are precooked)
Cooking time: 12 minutes (burger patties only)

Ingredients

1 cup (150g) cooked black beans (*Prepare ahead by soaking in bowl of water for at least 6 hours. Then cook in pot of water for ~20 minutes and cool in fridge)
½ cup (75g) cooked red kidney beans or 75g rinsed and drained kidney bins from tin
2 tablespoons chia seeds
1/3 cup water
1/3 cup coriander (5g)
½ red onion, cut in ½
3 garlic cloves, peeled
1 tablespoon olive oil
1/4-1/2 tablespoon chilli powder (depending on how spicy you want it) or even less
1 tablespoon cumin
¾ teaspoon salt
½ teaspoon pepper
160g (1 cup) cooked quinoa (*make ahead and cool) or if have none, use cooked couscous as a replacement
60g (1 cup) quinoa flakes (or rolled oats)
2 tablespoons Coconut oil

Serve with

Turkish Bread Rolls (cut in half and toasted) or large lettuce leaves or gluten-free bread
1 avocado, sliced
1-2 tomatoes, sliced
Hummus (*make ahead or while burgers are cooking)

Precook quinoa and black beans (after soaking). Easiest if cooked a day ahead.

Grind chia seeds in TMX for 10 seconds – Speed 10. Scrape into a small bowl and add 1/3 cup water and stir a little. Set aside.

Place coriander, red onion and garlic cloves in Thermomix. Chop for 3 seconds – Speed 7. Scrape down.

Add black beans, kidney beans, oil, chilli powder, cumin, salt and pepper. Chop for 10 seconds – Speed 7. Scrape down.

Add chia mixture to bean mixture as well as cooked quinoa, quinoa flakes. Combine for 15-30 seconds – Reverse + Speed 2-3, until well combined. Stop and scrape down if necessary.

Divide mixture into four patties (they are quite large0

Heat a large pan with 1-2 tablespoons of coconut oil on medium heat. Cook for 5-6 minutes on each side. It’s normal for it to look burnt. Gives it a nice crunchy texture without burnt taste.

Meanwhile, make hummus (if haven't already done so),, slice tomato and avocado and toast bread if using.

To serve place dips on bread, then patties, then avocado and tomato.

Filling and you don’t crave other stuff afterwards. Looks like a meat patty and your mind thinks you’re eating one. Yummy but a little spicy!

Starters and Snacks / Herb Cashew Cream Cheese - Dairy Free

Name of Recipe: Herb Cashew Cream Cheese
Number of People: Makes 1 small bowl
Ingredients:

1.5 cups raw cashews
3 spring onions, cut in large pieces
3 tablespoons parsley
2 tablespoons chives
4 tablespoons apple cider vinegar
2 tablespoons lemon juice
1 teaspoon lemon zest
3 tablespoons water, plus water to soak cashews
Good pinch of sea salt
Pinch of pepper


Preparation:

Soak the cashews in water in the fridge overnight or up to 24 hours.

Place spring onions, parsley and chives in the Thermomix and chop for 3 seconds - Speed 7 Set aside.

Drain and rinse the cashews and add to the Thermomix bowl, along with apple cider vinegar, lemon juice and water. Chop for 30 seconds - Speed 6. Scrape down and repeat.

Add the reamaining ingredients, including chopped herb mixture. Blend for 10 seconds - Reverse + Speed 3.

The recipe then says to place in a cheesecloth-lined sieve to strain but I found this did nothing for me. Nothing came out.

Carefully turn out onto small bowl and place in fridge overnight to firm up.

Serve with crackers or crostini.

Although this doesn't taste like cream cheese, it looks similar to it and has a pleasant taste although hard to describe.

These are sooo decadent and delicious!

Very simple recipe, can be messy to roll into balls but so worth it! Hard to stop eating them!

I think it needs longer in the freezer than recommended, in summer at least.

I've made yoghurt before using other recipes but not entirely happy with it.

Made this version to go with the granola (as suggested) and I'm happy with it, especially after straining for 15 minutes to get a creamier result. Simple and it worked and I think I prefer using a Thermos to a Thermoserver. It only makes about 500mL though.

And yes, it does taste better after sitting in the fridge for 12 hours, as mentioned in the recipe.

Made some of this today. Something I have been meaning to make for a while and I'm glad I did.

It has some really nice flavours and the nutmeg really goes well.

I thought I pulsed it on turbo too soon initially but it all worked out in the end. Mine needed a little longer in the oven. Also decided to make the yoghurt from the book to go with it which worked out well too.

I started making this recipe and hubby finished it as I had to go attend to the kids.

It's a quick and simple side dish although very mild so didn't have much flavour. We only made half the amount. Next time hubby things it will need more chilli and probably more butter or something so it has some flavour. I liked the texture though.

This is to die for!!!!

Have been meaning to make it for ages and finally got around to doing it today since the ocean trout I bought expired today.
The herbed mayonnaise is A-M-A-Z-I-N-G!! So tangy which is what I love most about it!

It probably pays to do the different parts as suggested in the chef's tip at the bottom. Will make things easier.

So here are my adjustments due to not having correct quantities, etc:

1 potato (which weighed a fair amount less than suggested
200g ocean trout (2 packs from wollies) It's looks like smoked salmon and is next to it
Turkish bread loaf which I cut up instead of regular bread rolls
For the mayo, I just used parsley rather than a variety of herbs

It's actually quite an easy recipe but a little time consuming for all the different parts but definitely worth it!

Everything just works so well together. Some of the fish patties fell apart as it's a soft mixture and the photo in the book doesn't seem to have breadcrumbs on it as stated in the recipe. Nevertheless, here's a photo:

Chit Chat / Nut allergies

Both my daughters seem to have nut allergies to tree nuts (walnuts, cashews, etc). Fortunately they are mild (no breathing difficulies) however they do get a rash all over (over a period of about 2 hours) and they take antihistamines to clear it up.

I wanted to know if anyone has had any success with outgrowing them and how they went about doing it?

There only seems to be only large 5kg bags of Bakers Flour in Woollies....well last time I checked......and I don't want that much. Is 00 flour the same thing or what else from Woollies can I get that is the same thing? In 1kg size?
