:) just made GF zucchini slice mixture - frozen 6 lots in dishes for family dinners, and 12 muffins before I added the cheese to the mix for Miss 7 (the allergy one). I'll cook them as needed :)

Yesterday I made 24 vanilla cupcakes and 24 chocolate cupcakes.  The chocolate ones I cut the top off and removed some of the insides and then filled them with mini m&m's, put the top on again and then iced them. The vanilla ones I just iced with vanilla icing.

This morning I got up early and made 24 melting moments and filled them with butter cream made with raspberry jam.

These are all for our family party for GD 21st birthday.  She took some friends to the city on her actual birthday.

Margaret, that does sound like fun.
DIL, Wendy made Hot X Buns. They were the best I have ever had. She has tried several recipes and these were from Recipetineasts blog. She has asteam oven and loves it.

Your cupcakes sound lovely Margaret and Wendy's hot cross buns obviously taste as good as they look Chookie. Did she use the TMX at all?

Wendy's hot cross buns looks very light and extra delicious. I want to make some this week, time permitting.

Wendy loves her TMX and uses it to make her  buns. She makes them the night before and refrigerates them, then places them in Steam oven for second rise and then bake.  She kneads them for 10 minutes. This surprised me.

I'm scared of pressure cookers too, I've never owned one and don't want one.
I was scared too...until I bought the atupperware pressure cooker- if it were to explode, it would be contained in the microwave 😄😄😄

More tomato chutney today and a SC beef stew to be made into pies.  Hot X Buns are on the list to be made.

I might be a copy car with the hot cross buns Chookie. I usually make yours, perhaps I will make both.
Today I made some Ukrainian Pecan Biscotti from the latest TMix+ magazine. Even though they are cooked twice, they aren't hard. DH's parents came from the Ukraine originally. When I showed DD she actually had the cookbook they were from. The original recipe had rum and sultanas in so I will try that next time.

It's nice to see someone cooking from the magazines cookie.
Chookie, I've been wondering how much you're missing your cooking.  It won't be long and you'll be in full swing again.
