As part of a Telstra bundle which I had chosen nearly a month ago, I was supposed to get a 500 megabit SIM card. This did not appear after nearly a month. Rang Telstra this morning who said the order had not been processed fully but anyway they could not send the SIM unless I provided driver's licence number, date of expiry (!), date of birth and Medicare number. When I protested loudly, the customer service Manager blamed Aust Post and StarTrack for insisting on these requirements. When I told the guy no courier company checks the medicare card (!) and the expiry date on the driver's licence and it was a gross invasion of privacy which could be misused, he was not that concerned.

Yet further on in the conversation, Telstra (by this time customer service supervisor) insisted customers need to provide a 100 point ID for any telecommunication product including a ... SIM card.... none which was mentioned to me when I put in the original order. When I wanted to speak to his supervisor, he said Telstra's policy was only to give the first name and no contact details - so effectively I cannot complain to anyone senior to him!

So, in effect, the buck stops with this odious supervisor. Unbelievable.

I plan to call my friend who used to work with Telstra to see who I can complain about non-customer service.

SO THINK CAREFULLY BEFORE YOU GIVE ALL YOUR PERSONAL DETAILS TO TELSTRA - ALL FOR A SIM CARD!

Have to say, very easy to follow recipe and easy since it is all made well beforehand. You just need to take it out for an hour for a second rise anytime from 3 - 15 days after the first rise. Easy! And really yummy. Well worth trying. 5/5 from the mini hospital here!

Hi there, I have finally succumbed and plan to buy a coffee machine ( not for us primarily) but when we have visitors. We want a good machine with crema and the ability to froth enough milk when we have 6-8 people wanting coffee without too much delay. Do not want the aldi brand. Veering toward nespresso or something similar only for ease of use. Budget is less than $500. Have read all the product reviews and more confused than ever! Help!

Our gorgeous adorable mutt has thrown up her dry food all over our taupe carpet. I have removed the food but the carpet still has a brown stain area. Any ideas on how to remove the stain? Help!

Bread / Tuscany grape pickers' grape focaccia

Apparently the grape pickers around Tuscany had this bread during harvest time. Recipe provided by the late Rose Gray of the River Cafe fame and tweaked for the TMX by me. All I can say is it is a delicious explosion of flavours.

Best had with a cup of tea or coffee for brunch or lunch.

2.5 teas dry yeast
200 ml  water
4 tablespoons sugar
8 tablespoons olive oil
sea salt
500 gms bakers flour
1 kg small black seedless grapes
4 tablespoons of sugar
4 tablespoons fennel or caraway seeds

Mix yeast and water in TMX - 37 c/1 min/sp 1. Add 4 tablespoons sugar, 8 tablespoons olive oil, and pinch salt + flour. Knead for 5 mins. Roll into ball, cover with tea towel and leave for at least an hour in warm place until doubled. Divide into 2. Roll out half into (well greased with olive oil) rectangular dish, sprinkle with half of grapes, 2 tablespoons of sugar and 2 tablespoons fennel/caraway seeds and drizzle generously with olive oil.

Roll out the other half of dough and place on top, making sure you seal the edges. Spread other half of grapes, 2 tablepoons of sugar and 2 tab of seeds. Drizzle generously with olive oil.

Bake in pre-heated oven 180c for 45 mins or until brown and crisp on top.

YUM! Try resisting having just one piece.

Chit Chat / Which gas BBQ would you recommend?

We are about to throw out the 20 yr old BBQ and buy a new one. The array of products is so confusing. Basically, I want to take a bit of control over the BBQ since it irritates me that dh does not clean the plates believing it is fine since the heat kills everything. I have forced him to use the Magic sheet in recent yrs.

We want a medium sized gas BBQ which is mobile. I want something which is EASY to clean and which will remain in good condition outdoors (rust etc). What brands do you suggest? Don't need rotisserie but want a hood.

Main Dishes / Don't quibble with Sybil beef

This is a wonderful beef recipe by Sybil Kapoor which is in the book 'Around the world in 80 dishes'. The author talks about the fusion of flavours and declares 'don't quibble with Sybil'.

After having it last night, this household agrees that it is a wonderful combination of flavours. So forum members, should we or should we not quibble with Sybil?


Number of People 4
Ingredients

170 gms light brown sugar
1 star anise
1 cm ginger
3 cloves garlic
1-2 lemon zest
1-2 finely sliced red chillies
115 mls kikkoman soy sauce
115 mls sesame oil

155 coarse sea salt
450 gm trimmed fillet of beef

2 tablespoons sunflower oil

Whizz sugar, star anise, ginger, garlic, lemons, soy sauce and sesame oil in TMX for a few seconds. Add coarse sea salt and chillies. Pour over beef, cover and leave in fridge for 36-48 hours turning every 12 hours. When ready to cook, quickly rinse under cold water, pat dry with kitchen towels and sear in a hot pan which has sunflower oil (heated).

Preheat oven 200oC. Place beef in baking dish, pour the sunflower oil from pan and cook for 12 mins. Ours took much longer since we like it reasonably well cooked. Remove, cool and even chill until ready to serve. Cut into very thin slices before serving.

PS. I have tweaked the recipe a little bit.

I want to make little lemon meringue pies and my meringues always have the brown tear drops which spoils the look. How do you ensure this does not occur? Help expert bakers!!!

I have always used scan pan for high heat cooking but I am finding that it is losing its "non stick" ability. I notice some people use Swiss diamond...does this cope better with high heat?

Recipe Requests / Poppy seed dressing

Hi, I bought a really delicious poppy seed dressing at a school fete. We love it so much i want to make it at home. The recipes on the net have 2-3 tablespoons of poppy seed whereas when I look at our bottle of dressing there seems  to be a lot more...anyone have a great recipe for this...TMX or non-TMX?

I have made the pear and walnut cake from this forum ( yummy) and very low calorie but I am looking for other yummy (but relatively low calorie ) biscuits and cakes. What are your favourites?
