I love that funny face JulieO!

Hooray! I have permission to post my friends relish and tomato sauce recipes on my blog.  They are so easy and yummy. I have blogged the relish recipe tonight and the sauce will follow in a couple of days (recovering from gastro here - so draining).

Check out the relish recipe here (http://fulllittletummies.blogspot.com/2010/11/filling-tummies-with-sallys-yummy.html).

There are no longer any recipes on Chelsea's blog but you will now find the recipe here. (http://www.forumthermomix.com/index.php?topic=15010.0)

Thanks Chelsea (and Sally) for the great recipe. I made this this afternoon and had a little taste - yummy!! One question though - it seems a bit runny for relish. I cooked it for longer than you suggested in the hope that it would thicken but it hasn't much. What do you think I've done wrong? And can I rectify the problem with this batch, or do you think it will just have to be a sauce for something now???   :(

TIA

Hi Virgo.

Did you put folded paper towel in the hole with the MC to thicken it?  That normally does the trick. If it is really runny perhaps you could strain some using your rice basket and put it back in the bowl to thicken a bit more at varoma temp. I hope it works out for you.

Have just finished the last of the tomato relish made back in August/ Sept after receiving the wonderful recipe form you Chelsea - thanks a bunch!  We have eaten it on cold meat, bbq meats, roast, crackers and used it as a dip with blanched vegs.  Can't wait until we have our home grown tomatoes again in 2011.  Cheers  :) Robyn

Hi chelsea
thanks for this great recipe, i made it today. tastes beautiful, but i just cant get it to thicken .  i put doubled piece of paper under the mc , and this helped a little bit but it is still runny for relish.  am gonna cook it for longer on varoma and see how that goes. anyone have any other suggestions?

Oh bummer Em!  The only time it has ever been too runny for me was when I used thawed tomatoes instead of fresh (way too much liquid).  I ended up straining some liquid out and cooking it on varoma temp for an additional 10 minutes.  The other two times I have made it worked perfectly. Perhaps reduce the vinegar or squeeze the tomatoes a little if they seem extra juicy?  ??? :)

Post by: em on January 02, 2011, 10:49:15 am
it turned out ok, i cooked on varoma for an extra 15 mins. it was still abit to runny, but i didnt have time to keep cooking it so i just put it into jars and into the fridge and it has thickened abit more.  it has the yummiest flavour, the best relish i have ever tasted.
i was thinking that chelsea maybe depends on how juicy the tomato's are, i used fresh they were nice and plump.  next time i will reduce the vinegar abit and see how that goes.  :)

Hi Chelsea, sorry haven't replied til now. Yes, I did use the paper towel trick and cooked it for an extra 20 mins. When I actually looked at it though, it wasn't too runny and I think it would pass. I gave one jar to my mum and another to my DB and SIL. Hope they're happy with it! The tomatoes were quite juicy - we have oodles at the moment and I'm trying to use them up. Next time I'll cook it on varoma as you suggested and/or reduce the vinegar. Now, onto a tomato sauce recipe.....

My CWA recipe (non thermomix) says to sprinkle cut tomatoes and onions with salt for 24 hours and then drain juice and then cook as per this recipe.  I wonder if that would help with the runniness.

Does the paper towel just absorb some of the moisture?

I made a batch of relish tonight (using juicy tomatoes) and tried the salting method.  I only got about 1/4 cup of liquid from the tomatoes and onions after a 24 hour soak.  The tomatoes were quite juicy, so it was a bit surprising.  Another way I removed some more juice tonight was to squish the tomatoes down with the spatula after they were chopped and spoon the juice off the top.  I also cooked the relish for an extra 10 minutes at varoma temp.  The relish is still warm, but is already lovely and thick (not moving at all when the jar is tipped).  I just had to try it for myself. :)

I have just made the relish and also had problems with being too runny..I cooked for an extra 20 mins using varoma temp and the strainer basket on the top.  Moisture level in the bowl dropped by at least 1.5cm for each 10 mins.  Relish is now lovely and thick!  (I also added 3 cloves of garlic).  My kitchen smells divine, and we will have our first real taste tonight when the homemade sausage rolls are cooked!  Thanks to Sally and Chelsea for the great recipe!

Catista, malt, wine or cider vinegar would be suitable for relish.

thanks Chelsea... I did try this recipe and it was lovely, but a bit watery.... I also do not recommend putting paper towel wadded up in the measuring cup as the measuring cup blew off the top and I got hot relish all over my kitchen.....luckily I wasn't standing near the thermomix at the time !!!! :-\

Thankfully you were not burnt Sonan - I have made this recipe many times with no problems. However I have not put the MC back on after using the wad of paper towe as I thought the idea was to reduce the liquid while boiling and the paper towel prevented the splashing in and around thermie but allowed the steam to escape allowing the liquid to evaporate.  :)  :)

Bumping this recipe link. Seems like a great relish one to try.

Just 2 quick questions folks, that I can't seem to get straight in my head after reading the recipe and everyone's comments.
Its in regards to the papertowel in the measuring cup hole.

Question 1: exactly where does the papertowel go? (is it a sheet of towel under the measuring cup with the cup still in, or a piece of paper placed over the open hole and leave the MC off)
Question 2: I'd expect with all the steam coming off, especially if on varoma temp, that paper towel would just get wet and soggy and maybe fall in or tear a hole or into pieces etc??)

So I guess what I'm really asking is - what is the purpose of this paper towel and would it just be better to sit the basket on top to prevent splatters and still let steam evaporate to get a nice thick desired result.

Thanks so much in anticipation

Chelsea's comment 'Did you put folded paper towel in the hole with the MC to thicken it?'  means a double piece of paper towel placed over the bottom of the MC which is then put in place.

To thicken anything too liquidy you just need to cook it on varoma for 5-10 minutes extra, MC out and steaming basket in place.  Try that CD.

Ah haaaaa.
That clears up the process. Thank you JD. Totally appreciate the time taken to reply :)
If required I shall try the few extra minutes with Varoma temp and basket. I'm honestly still not sure how adding paper towel like this would cause it to thicken. My tomatoes are calling.

Unfortunately I didn't note the source of this as it was very early days (now I know better ;D) but I think this may be Chelsea's recipe because it has the bit about the paper towel. And it is a lovely recipe.

Tomato relish
Enjoy with sausage rolls
Ingredients:
•   1kg tomatoes
•   1 large onion - peeled and quartered
•   1-2 apples - quartered
•   150g sugar
•   1-2 tsp mustard
•   1-2 tsp curry powder
•   pinch of cayenne pepper
•   1-2 tbsp salt
•   150g vinegar
Method:
1.   Place tomatoes into TM bowl and chop for 2 seconds on speed 4-5.
2.   Place onion and apples and place in TM bowl. Chop for 2 seconds on speed 4-5. Do not over chop.
3.   Add remainder of ingredients and mix for 10 seconds on reverse speed 3.
4.   Cook for 30 mins, temp 100, reverse speed 1.
I place a paper towel around the mc in the hole to thicken the relish. You may need to cook longer if it is not thick enough.
5.   Pour into hot sterilised jars.
6.   Enjoy!

Yummo! Thanks for sharing the recipe :)
I made this today and the taste is delicious. Mine was a bit too watery but I think that was because of my tomatoes.  I ended up letting it reduce in a frypan, which didn't matter because it was so yummy :)
