Title: Mushrooms and more mushrooms.
Post by: cookie1 on January 19, 2014, 01:25:38 am
We had two large boxes of mushrooms dropped off to us. I think I will be making every mushroom dish on the forum at least once.
I was wondering if anyone had any uses for them that aren't on the forum?  DH has been looking all morning and has found a few extra.
Thanks. (http://img.tapatalk.com/d/14/01/19/e8ydejuq.jpg)

What about drying them. Haven't tried it myself though. Just a thought.

If you have some really big jars you could marinate some, I see they are large, yes I think drying some might be a good idea.

Wow that is a lot of mushrooms.  I have no idea how you could use that many!
I would try AB's suggestion and marinate some.

We have lots of 2 litre jars AB. Will definitely marinate some. Off to find recipes. Thanks.
We have just filled the dryer with the first load to be dried.

That's a lot of mushrooms to get through Cookie, you'll be tied to the kitchen for a while with that lot.

Mushroom lasagne
Mushroom sauce

From Oprah.com - When you've bought more mushrooms than you can use up, a simple way to keep them is to dice and sauté them. You can then pack the sautéed dice, which the French call duxelles, in a small freezer bag and dip into it whenever you want a tablespoon or so to add to a sauce, a soup, an omelet, whatever.

Thank you everyone. So far I have done soup, the dryer is full and I have some marinating and for dinner we are having Mich's summer burgers.

Jeninwa and Judy I will do both those things this afternoon. :-*

Cookie, I made the mushroom stroganoff from this 5:2 thread link http://www.mirror.co.uk/lifestyle/dieting/recipes/52-diet-fast-low-calorie-1770918 (http://www.mirror.co.uk/lifestyle/dieting/recipes/52-diet-fast-low-calorie-1770918) and it was delicious. I made a quarter serve for my lunch and gave my Dd A taste, and promptly had to make up another batch for her and two of her friends.
I also have a recipe for mushroom filo triangles that I often make for parties. I have taken a photo of my handwritten recipe which you may or may not be able to read. I also have some notes about converting it to thermie, but I haven't written them up properly. If you are interested, I can post them

Great buckets of mushrooms cookie. Love them, but not really sure what to do with that many. Will be interesting to see what you come up with.

Now there's a co-incidence cookie1 - I've just posted a recipe for Mushroom Ketchup (http://www.forumthermomix.com/index.php?topic=14759.0) (http://www.forumthermomix.com/index.php?topic=14759.0)) in the condiments and sauces section!! Should be a great way to use up lots of those mushrooms.

Alternatively, dehydrate them and then blitz them to a powder with salt to create a magic seasoning.

I plan to make your mushroom ketchup. Thanks. I have dried some but I never thought to blitz them.

I saw Donna Hay do that once Cookie, she did it with dried porcini mushrooms and salt and sprinkled it over a piece of steak before cooking it.  I've always been meaning to do it but haven't got around to it.

Suzanne I didn't have any porcini mushrooms so I left them out. The taste is still lovely.

One and a bit boxes left Hally. I will do some more marinated mushrooms today and do the ketchup.
