I made some Banana and Walnut muffins today. I was bad and had one. They are delicious.

Yes I agree with Margaret, an interesting combination.  If you stopped at one, 1 little muffin is not going to undo all the good you do with your diet cookie.

Don't tell anyone Judy, it was a big muffin. I did take a couple over to my brother's place this morning.

Cookie, it’s hard  not to try one.  I made GS some plain muffins for his lunch box. I tasted the edge from one.
I’m testing a couple of diabetes friendly recipes today. One is a flat bread made from almond flour and seeds the other is Clean Quince jam made with Chia seeds.
I have located quite a few Diabetic friendly recipes on my blog. Think I will preface them with Diabetic. .

Good idea Chookie, everyone knows someone with Diabetes.
I have todays meals from the freezer but as it was so cold this morning I decided to do some cooking in the oven - veggie dishes for the rest of the week, I soon warmed up.  My favourite potato casserole recipe from the first AWW Dinner Party cookbook, Roasted sweet potato & carrots  https://www.spendwithpennies.com/roasted-sweet-potatoes-and-carrots/ and zucchini & pumpkin.

They look tasty Judy. I have been eating mostly vegetarian lately to help with my stomach problems.  Thanks for the link to the carrot & sweet potato recipe.

Looks good Judy.  Nothing like baking to warm you up.
Didn’t get my cooking done yesterday as weather was fine so spent time in the garden.

Thanks Chookie. We do have to take advantage of fine weather at this time of the year, no matter what our plans are for the day the weather will have the last say.

I didn’t enjoy the roasted veggies/potato casserole so I’ve turned it into soup with the addition of liquid chicken stock and some neutral sustagen powder.  Much easier for me to eat and more enjoyable.  I also added some cooked chicken from the freezer to add a bit more protein before blitzing it.

With the thermomix you can turn most things into soup. I love it.

I'm making some chocolate and hazelnut biscuits for DD to take to work tomorrow. There is a group of them going in and doing some professional development. I think as well as learning they have fun and eat junk food.

Cookie, those biscuits look yummy.
I have posted 3 Diabetic recipes on my blog.  Im quite surprised at the quick response.   Can only think that people  want something a bit different.  These certainly are.
I also tried another recipe but it didn’t work,  but may end up as a nice savoury crumble.
